09.01.2022 Thank you for this one Sangria Spanish Tapas Bar we may have increased the seafood component a little... Recie compliments of Sangria. Seafood Paella (Chicken and Chorizo and Vegetarian variations included) Serves 3-4 Cooking time approx. 20-25 minutes... Ingredients Splash of extra virgin olive oil 500g assortment of seafood mussels, fish, calamari, prawns, scallops our friends at Feed of Fish are the experts locally 500ml chicken stock 220g medium grain rice (Bomba or Calasparra rice if you can source it!) 50g fresh or frozen peas 1 lemon, cut into wedges, to serve Parsley to garnish For the sofrito 2 large ripe tomatoes, chopped 6 piquillo peppers (substitute with fire roasted peppers - 180g) 6 garlic cloves, peeled, chopped small brown onion, chopped 25ml extra virgin olive oil 1 pinch saffron threads we use Squirrel Gully Saffron the flavour and colour is amazing 1 tbsp smoked paprika Place all the sofrito ingredients in a food processor and process until chunky. If you don't have a food processor, roughly chop the tomatoes and peppers and finely chop the garlic and onion then combine with other sofrito ingredients in a mixing bowl. Place a 30-centimetre-wide frying pan or paella pan over a high heat. Add the seafood with a splash of extra virgin olive oil and cook for one minute. Add the sofrito and cook for a further three minutes. Add chicken stock and bring to the boil. Stir in rice and bring to a simmer on medium to low heat for 15 minutes until stock has absorbed. Do not stir or your paella will be more like risotto! Add peas on top and cook for a further two minutes to achieve "soccarrada" (crust on the bottom of the pan). Season to taste with salt and garnish with parsley. Squeeze with lemon juice to serve Variations panfry 200g chicken and 100g chorizo for 3-4 minutes before adding approx. 250 g mixed seafood for one minute the addition of chorizo is quite controversial and not considered authentic but that is a whole other story! Meats on Mitchell make our chorizo in house and it is full of smoky delicious flavour! For a vegetarian paella (vegan too) panfry your favourite veg for 1 minute before adding the sofrito, we like artichokes, broad beans and olives and exchange the chicken stock for vegetable stock.
