22.01.2022 Introducing you to our hardworking colleagues. Years ago I bought 2 tablespoons of these mystical crystals, and it was love at first taste. Back then I never im...agined where we would be today with 100's of kilos of these microscopic buddies multiplied from that first batch! These little beings of antiquated lineage have the ability to transform the ordinary into something much more: a sparkling probiotic elixir. In Tasmania, at trawtha makuminya (big river country in Tasmania’s central plateau) we are still talking about one of the oldest fermented drinks in the world - wayalinah, the fermented sap of Eucalyptus gunnii.... @uniofadelaide have been studying the microflora in its sap and have found unique species of yeast. These ferment a drink that tastes like nothing else in the world, yet still has a distinct ‘cider-like’ quality. This taste is why European settlers named these trees Cider Gums. Sixty-five percent of the character of whisky comes from the time it spends in the barrel, so where it sits is quite important, and the quality of the barrel, says Bill Lark. But it also seems that here in Tasmania we have a greater diurnal temperature range and seasonal variation, and what that means is the whisky is moving in and out of the charcoal layer of the barrel more frequently; that helps ...in the cleaning of the whisky, making it richer and smoother. So this combination of the barley and the climate produces a distinct flavour, a Tasmanian whisky flavour, sort of like the terroir that you would talk about with wine. Now, a new study from the University of Sydney has also shown that they could be economically viable commercial crops. Each week delves into a different theme, and this week it's FRUIT! Rich in natural sugars, fruit provides the ultimate food for microorganisms and bacteria that transform it into new flavours and fun. The Apple Isle that is our island state famously ferments apples into award winning, incredible ciders. Tipples like Surges Bay Orchard organic SBO ciders, Plenty Cider contemporary Derwent Valley drops or Lost Pippin traditional varieties (you can find them through the Drive-Thru!). Our cold climate fermented grape juice is word famous, and our resident vignerons and winemakers Bream Creek Wines and Quiet Mutiny are helping to proudly fly the flag in Bacchus's honour.
