You'll be greeted with Prosecco and a tour of our Pasture Raised Chickens, we we'll talk to you about our regenerative farming practices before you collect the eggs we'll be using to hand craft traditional style Pasta. We'll then tractor you away to our outdoor kitchen where together we combine Eggs and Flour and hand craft Pasta with views looking towards the Tweed Caldera. Depending on the experience you choose we will end the class with a local platter, Prosecco or local hand crafted beer and watch the sun set over Mt Nullum or while you relax and enjoy the views we'll use the spoils of your class to prepare lunch or dinner. We'll then take a ride on our WVF 'hay wagon' to the top of the farm to take in scenic views of the Tweed Valley and commence our pasta making class. Together we will work through techniques for both Semolina and Egg based Pasta, how to form Cavatelli, long pasta such as Spaghetti and Tagliatelle, Lasagna Sheets and then we will go on to make Ravioli and Agnolotti del Plin. 13.01.2022 ..... Meet Sophie, shes just made the journey from @lafincabooyong to our farm. Whilst she looks all fluffy and cuddly (which she is), shes joing us for a more important role.... Sophie is a Maremma or livestock guardian dog. From tonight her very first night on the farm, she will be bonded to one of our flocks of girls. Her job will be to protect them from foxes, wild dogs and eagles. With a little help, her natural instincts will kick in and shell be an effective member of our farm in no time.

08.01.2022 As rare as hens teeth.... Who said chickens dont have teeth? If you look closely this newly hatched Arucana has what they call an "egg tooth" right on the tip of its beak. Its used to break out of the egg and will fall of in a day or so. This little blue egg layer and her sisters will join our egg flock.

06.01.2022 Todays mission is creating a central lane way through the middle of the farm (or at least part of it). The lane way will be backbone of our rotational grazing system, where each paddock coming off the lane will be grazed intensively for a short period buy the cows. They are then moved on to the next paddock whilst the chooks move in behind them to work their magic.... The aim is to add carbon to the soil, increase microbial and faunal activity and ecology in soil, regenerating the soil and increasing its productivity naturally. #regenerativeagriculture #natureatwork #pastureraisedeggs

The WWF estimates that 11% of global greenhouse gas emissions come from FOOD WASTE! Packaging food is and always will be an evolving challenge we take seriously. There is a fine balance between providing food that lasts and taxing our planet with waste. We research every aspect of the packaging we use. We evaluate the whole life cycle from the production of the raw materials to its end of life. More often than not the results are surprising. We have a responsibility to minimise not only our environmental footprint but also each person that enjoys our products and the packaging it is presented in. 03.01.2022 ...... So yesterday was spent doing a deep clean and sterilisation on one of our Caravans in preparation for a flock of new . This van we call The Colonel after guess who... The girls that called Colonel home have been relocated into another van, and will remain on the farm for some time yet.... Today in the cool of the morning, another 500 girls were unloaded in their new home and taken to pasture for the first time. It's always an exciting time. Now for the countless hours of chicken school. Teaching the ladies where to perch each night and in a few weeks time where to lay. The vast majority of our eggs are sold within 30 minutes drive from our farm and consumed the same week. Lots more low food miles, ethically raised, highly nutritious pasture raised eggs coming soon.
