21.01.2022 Pea and halloumi fritters 250g of frozen peas 125ml milk ( I used a splash of almond milk and water) 2 eggs... 250g halloumi 100g plain flour 30g corn flour 1/2 tsp of baking powder 1 tbsp of chopped mint plus extra to serve Olive oil to cook 1. Cook peas. You can boil in salty water for round 2 minutes or I microwaved for about 3mins. Split the peas and blend leave the other half in pea form. 2. Whisk the blended peas, eggs, both flours, baking powder in a bowl. Then combine the remaining peas, salt and pepper mint and halloumi. 3. Heat olive oil in a frying pan over a medium heat. Add a tablespoon of mixture per fritter to the pan and cook until golden brown each side. Serving suggestion - serve with truss tomatoes, mint and lemon wedges I like spices so will add some chill Enjoy girls

05.01.2022 Sweet cherry pies (Your local mime chef) 800g bags of frozen cherries... 1/2 cup of white sugar 1 dessert spoon of corn flour 4 sheets of frozen puff pastry 1 egg to glaze 1. Preheat oven to 200 degrees and take puff pastry out to defrost. 2. Place cherries in saucepan on a high heat and bring to the boil. Simmer of 20 mins on a low heat. While cherries are simmering lightly grease baking tray and combine sugar and corn flour in a bowl. 3. Cut puff pastry sheets into quarters and place onto baking tray. Take cherries off the heat and stir in sugar and corn flour and return to the heat and simmer for 2 minutes to thicken. 4. Beat egg in a bowl. Section out cherries into puff pastry and fold over edges. Glaze each pastry and place in the oven for 15 to 20 mins or until golden brown. Serve with ice cream or cream

05.01.2022 Check out Tracey’s super quick and healthy lunch. This took 5 mins to make and consists of rice, whole heap of chopped kale, cabbage and carrots. Then added whatever she could find in the fridge....capsicum, avocado and cherry tomatoes. Topped off with some roast chicken and coconut siracha ....because who doesn’t love a bit of spice

02.01.2022 Chocolate Brownies Small handful of white chocolate chopped 2 small dark chocolate bars chopped 3 eggs ... 1 cup sugar 3/4 cup plain flour 1/4 cup cocoa powder 1/2 cup of olive oil or vegetable oil 1 tbsp of water 1 tsp vanilla extract Pinch of salt 1. Pre heat oven to 160 degrees fan and line a baking tray with baking paper 2. Place all ingredients into a food mixer and mix. Pour mixture into baking tray and bake for 25 - 30 minutes. Remove from baking tray in baking paper. Once completely cool cut into piece and serve. Yummy
