15.01.2022 This has to be the easiest meatloaf I have ever made and it is totally delicious. Ingredients: -Half a kilo of beef mince -One onion... -One clove of garlic -Half a cup of bread crumbs -Half a cup of Parmesan cheese -One egg -A handful of chopped parsley -salt and pepper -chilli flakes -two tablespoons of tomato sauce -Worcestershire sauce, English mustered, Bbq sauce -20 thin slices of pancetta ( 10 for the bottom and 10 on top ) -One stick of rosemary. Method: Slice one onion finely and fry them in olive oil along with grated garlic. In a large bowl mix the cooked onion with the rest of the ingredients that I mentioned above except for the pancetta and the rosemary. Line the meatloaf container with the ten slices of pancetta, pour the meat mixture in and put the rest of the pancetta on the top. Mix a few spoons of Bbq sauce and tomato sauce together with a drizzle of olive oil and pour over the meatloaf along with the rosemary leaves. Cover with foil and put the oven at 180 degrees for 30 minutes, take the foil out and cook for further 30min. Let it rest briefly, turn it out of the dish and serve with salad or vegetables.

06.01.2022 The easiest chicken curry in a hurry One kilo of chicken drumsticks with or without skin and cut the end bit off or leave it as it is , One whole lemon grass , Three potatoes cut in small cubes.... One onion chopped finely. Spices: One teaspoon of each Garamassala powder, cumin powder, turmeric powder,curry powder,Szechuan pepper, Tamarind paste One can of coconut cream and one and half cups of water. Two tablespoons of coriander leaves and roots . One vegetable cube, Salt . Method: Mix all the spices really well with the chicken and pan fry with the chopped onion in a small amount of olive oil until is golden brown. Add the potatoes and the lemon grass and followed by coriander leaves, tamarind paste ,water and pinch of salt. Cook slowly for 50 minutes and let it rest for 5 minutes. Serve with jasmine rice
