24.01.2022 Sometimes the best made plans are changed at the last minute due to the weather, as yesterdays wedding proved. Hamish & Ash were at Friday Creek Retreat where the sky turned black and heavy rain and then some hail ( for good measure) briefly held up the ceremony. The bride and groom carried on with good humour throughout - a little bad weather did nothing to spoil the day! The menu included pre dinner canapes of our home made brioche beef bun, prawns & Italian pork sausage & roasted capsicum. Followed by gourmet Bbq buffet mains & sides featuring Roasted lamb ribs with salsa verde, porchetta & fish with butter, sage & tomato salsa. With The Romance Crew at Friday Creek Retreat.
22.01.2022 Wedding number 2 on Friday was at beautiful Eagles Rest - Valla - another beautiful afternoon with post ceremony canapes and drinks in the garden followed by banquet shared mains of Slow cooked lamb and Bbq d fish & sides. Congratulations Bec and Jarod!

21.01.2022 Yesterday saw the Fiasco Team travel to the wedding of Hannah and Adam at beautiful Friday Creek Retreat. Outdoor catering is always a challenge with limited facilities but Vito Di Grusa - thanks again for a great job! A wedding cheese cake with a difference was skillfully put together by Rosie and served out to guests post dinner with dessert canapes of Cannoli, fruit tarts & flourless chocolate cake. Thanks also to the rest of our team - Lauren, Zac, Alessio, Billie and Alison - as usual you always get the job done no matter where!

Shona and Nick chose a selection of canapes and substantial plates for their reception - finishing up the evening with Espresso Martinis & Cosmopolitan cocktails plus a mini cheese burger late night snack. 19.01.2022 Rainy day wedding at Villa Vivante on Saturday for Sean & Olivia. No matter for the guests as plenty of Aperol flowing and canapes of oysters, grilled prawns & pork belly bun as pre dinner fillers. Shared banquet mains were followed by a dessert table featuring wedding cake and our sweet canapes of Cannoli, Profiteroles and Milk chocolate Budino! Delicious! With Olive Tree Arts
19.01.2022 Yesterday we set up at Boambee for the wedding feast for Paige and Prashan. The rain fortunately held off until the guests arrived at the reception area, where they were greeted with Grilled prawns, Arancini & Cheese burger. Banquet share platters of Bistecca Fiorentina, and Slow cooked lamb shoulder were served sides of broccoli with chilli & garlic, creamy potato mash & Fennel & celery salad. Dessert canapes followed with Caramel pannacotta & Profiteroles. Thanks - as always to our hard working ( & adaptable) Fiasco team.
19.01.2022 Emily & Jyes wedding reception on Saturday had us travelling to beautiful Bellingen Riverside Cottages - pre dinner canapes included Arancini, Spicy Italian meatballs & grilled prawns followed by a Gourmet Bbq buffet of Porchetta, Lamb shoulder & Bbqd fresh local fish with butter, caper, sage & cherry tomato salsa. With One Day Weddings.
18.01.2022 Fiasco Catering love working at Glennifer Hall and Blair & Harriet had magnificent weather to celebrate their marriage last Sunday! Pre dinner canapes & drinks under the trees followed by shared banquet mains platters and sides in the hall were enjoyed by family & friends.
17.01.2022 The Fiasco team were at the wedding of Renee & Daniel yesterday- at beautiful Eagles Rest - The bride did an excellent job of making everything look amazing! A selection of canapes followed the ceremony followed by substantial plates of Ravioli filled with lemon & ricotta in a creamy saffron sauce - Slow cooked lamb with creamy potato mash & autumn veggies - Swordfish with artichoke, pea puree & finger lime dressing. Good time had by all - fabulous friends & family - including the Fiasco team!
17.01.2022 The small and intimate wedding of Lydia and Dave was held late August at Sapphire Beach. The menu included a antipasto station for guests post ceremony followed by banquet shared entree and mains platters including Gnocchi, Calamari, pork belly and Bistecca Fiorentina, Slow cooked lamb shoulder and sides. With a menu featuring four pre dinner canapes followed by a full buffet table for the guests dinner feast no one left hungry. A dessert table followed with sweet treats from Sugarplum and delicious Sotto Zero Gelato. 13.01.2022 Our first wedding of 2018 at Orara Valley Estate on Saturday! Alysha & Nicolas selected a menu of pre dinner canapes including Grilled scallops on cauliflower pure, Lamb tartlet with fresh minted peas and Oysters with white balsamic vinegar & shallots. This was followed by banquet platters of Grilled quail, Swordfish with cherry tomato & caper salsa & Gnocchi with wild mixed mushrooms & black truffle. Dessert canapes of Cannoli, Lemon tarts & Pannacotta finished the meal off perfectly. Despite the frequent showers it was a great wedding!! Congrats to Alysha & Nicolas from the Fiasco Team!
13.01.2022 Fiasco Catering teams lunch time wedding yesterday for Melissa and Robert at Orara Valley Estate was a beautiful afternoon. They selected pre ceremony canapes of Meatballs with tomato salsa, Oysters & Crostini with salted cod. After the garden ceremony we provided Banquet entree and mains, featuring Squid stuffed with prawns, zucchini & capers and Bistecca Fiorentina & local swordfish with butter, cheery tomato & caper salsa. 08.01.2022 The wedding of Monica and James last Saturday at Glennifer Hall will always be remembered as the windy wedding - all was going well - canapes and cocktails in a perfect setting then a storm appeared out of nowhere - a burst of cyclonic wind - a small amount of heavy rain - calm replaced by chaos! Then just when we thought things couldnt get trickier... the power went off. How to feed 96 guests by candlelight? No problem... lucky our team is adaptable! 08.01.2022 Our last wedding for 2017 - and the final one for Vito - our catering number one man! The Fiasco team will miss him but wish him a great time with family & friends in Italy! 07.01.2022 Last weekend we were back at Villa Vivante - a grey & rainy day but no matter... pre dinner canapes followed by Banquet Mains platters of Porchetta, Spatchcock & Slow cooked lamb with sides of roasted chat potatoes & greens of snow peas, beans & broccoli. Beautiful stying as always from the One Day weddings team!
06.01.2022 Fiasco Catering also travelled to the wedding celebrations of Doug & Danielle at Korora. What a view of the beautiful Coffs Coast! Guests enjoyed cocktails - then oysters, and antipasto post ceremony and primi of grilled octopus and pesto gnocchi. Wedding banquet dinner was Spit roasted lamb and grilled trout fillets with sides. A dessert treat of lemon tarts & brownies with mascarpone followed then pizza and lamb sliders as late night snacks!
06.01.2022 A perfect hot and sunny autumn day for the wedding of Morgan & Grant at Orara Valley Estate yesterday. A bit of Scotland was there, with Bagpipes, kilts, sporran and many Scottish family & friends - not all together suited for the temperature of the day - but they all looked grand! A menu of canapes followed by a grazing table featuring Italian cured meats, cheeses, marinated octopus, Caprese salad, calamari, arancini, spinach tarts & beef tartare kept everyone fed while Rosie & Lauren served whiskey cocktails & plenty of water... 01.01.2022 Saturday wedding no. 2 was for Lucy & Matt at Sapphire Beach Mansion. Such a beautiful spot on the Coffs Coast. Family & friends, including a large Welsh contingent enjoyed the canape menu of Calamari with rosemary mayo, Arancini and Mini Cheese Burgers, followed by Banquet Entree Mains, featuring Saffron Ravioli, Pork Belly, Slow cooked lamb shoulder with sides including Asparagus and Creamy Potato mash. Sweet canapes of Lemon tarts, Cannoli and Profiteroles finished off the feast. A great night had by all!
