09.01.2022 What to do with excess produce? Eat it! Here's an easy recipe for zucchini & potato pan frittata: 2 med potatoes (cut in rough cubes and par-boiled) 2 cups cubed zucchini 1-2 spring onions chopped 3-4 rashes of bacon diced... 2 tomatoes sliced 5 eggs (lightly beaten with some salt, chopped basil & a few lugs of cream/milk or olive oil) 1/2 Cheese grated (we're dairy free so skip the cheese) Heat some oil in a large frying pan (if it's oven proof you can brown the top under a grill) & fry potatoes lightly. Add zucchini & spring onions & bacon & fry until cooked. Add egg mixture & turn heat to low. Place tomato slices on top and sprinkle with cheese. Cover with a lid and cook until just set. Serve with salad and relish. Can be eaten hot or cold.

07.01.2022 What do you do with beetroots? Our favorite salad at the moment is some greens with grated beetroot, some freshly chopped dill or basil and a light dressing made of olive oil, vinegar and mustard. It's so simple, juicy and sweet!
