18.01.2022 Lanny I have lost my recipe. this is Dean's recipe and it is very good as you can do different fillings. He has a lot of good recipes. I am keeping well but have retired now. Really enjoy watching all the young ones coming up. Keep up the trying new things everybody. 18.01.2022 KOKODA FOR KATE This is a refreshing dish that is served all over in Fiji. 800 g snapper skin off Walu is excellent NZ Hoki from Aldi is what I use here 3/4 cup lemon juice or to cover mount of chopped fish Bush Lemons are the best 1/2 cup coconut cream thick or enough to make a nice dressing, it will thicken in the chilled fish... 1/2 cup red onion finely chopped 2 green chillies finely chopped or to taste 4 spring onions finely chopped Method Cut the fish into small chunks and mix through the lemon juice. Not too big chunks or the lemon wont ‘cook’ through Leave to marinate for approximately 6-8 hours or overnight. I stir through ONCE only....half way Before serving strainn off old lemon juice... well I do Combine remaining ingredients. Salt & Pepper and maybe a fresh squeeze of lemon Some people like to put tomato, capsicum, dhania. Not me. Cakes for Christmas. A lot depends on your interests.Snall individual purinis Like making Soap, candles the diy for these can be found on line. Maybe you could embroider pillowslips or make childrens clothes, Cushions, towels Strike vegetable cuttings in milk... cartons Pot plant Baiganii herbs for Townspeople who have no yard Mainly try to think of things to eat and what we all need for daily living. Any Fiji Potters out there? I love these as dinner plates There are many ideas. Message me if you need info on ideas and I will try my best. good to keep the old ladie's brain working! 01.01.2022 Tropical Christmas Cake Bula All! another request for my Tropical Fiji style fruitcake for Christmas.So here you have my mother’s Tropical Fruit Cake.I think I posted it early last year sometime, so this is a refresher! If you don’t like Ginger hmmmmnot really for you then. or maybe you could just leave it out. Anyway we are very big on Ginger in my family & loved this. It is a nice easy recipe too. Ingredients I cup Fiji (Raw) Sugar... I small can Crushed Pineapple 125g finely chopped preserved ginger if you don’t like ginger, leave it out 375g mixed dried fruit 1 teasp Baking Soda 2 teasps mixed spice 125g Butter 1 cup Plain Flour cup desiccated Coconut 1 cup SR Flour 2 eggs. Whisk up with cup lolo (Coconut cream) Method On your oven to 180 and prepare your baking tin Into a small put the sugar, pineapple, Ginger, mixed fruit, Soda, Spice and Butter. Bring to the boil and simmer gently for about 3 minutes. Take off the stove and cool completely In a big bowl sift together the flours, add the cooled fruit mixture and lastly the whisked Eggs& lolo mix Combine but don’t over mix. Spoon into your baking tin and bake for about an hour . test with your sasa Also Steams well. Cool approx. 15 mins in tin then to wire rack. Decorate as you choose Lolomas to you all. 01.01.2022 Bula Vinaka and a very Happy New Year to you all So sorry you haven.t heard from me for a while I have had to spend some time in hospital.. all better now. I Received a beautiful fruit basket in which there were some passionfruit The mangos were like soccer balls. All the patients in my ward thoroughly enjoyed them Anyway I decided to make one of my favourites I think I posted this a few years ago but it has had a lot of requests. I cant remember who gave me this recipe,( th...ank you my dears it is very nice I know you will love it. EASY PASSIONFRUIT AND SOUR CREAM CAKE 100g butter, softened 1 cup raw sugar 1Tbsp vanilla extract 2 eggs 200g light sour cream 170g can of passion fruit (or a few fresh passion fruit) 2 cups of self raising flour OR (use 2 cups plain flour with 1Tbsp bicarb) Instructions Place raw sugar and Butter in bowl and process till light and creamy scraping down the sides of the bowl occasionally Add Vanilla then eggs on at a time, beating well between each egg Scrape down sides of bowl Add in sour cream, passion fruit and mix for 10 seconds at medium speed Add in flour and combine. Scrape down sides well **Tip into buttered and floured cake tin (at least 20cm) and bake in preheated 180C/ 350F oven for about 40 minutes. Leave in tin a couple of minutes then tip onto cooling rack. If you want to ice it then wait till is cake is completely cooled. I used a butter Icing made with Icing sugar a tablespoon butter and some passion fruit pulp Have a wonderful weekend
