24.01.2022 When you have water features and creeks where a garden is meant to be and water views where cows normally graze happily, I think it's ok to give the egg laying ladies a warm breakfast. So I mixed some oats from @honesttogoodnessau , with pepitas, sunflower seeds, milk, boiling water and cinnamon... As you can see the green chicken coop was getting well and truly flooded. We are getting about 10 a day at the moment, and what a beautiful rainbow of eggs it is! So grateful for chooks and our fireplace today! One day I'll get a @nectre_fireplaces with an oven inbuilt and won't feel guilty about firing up the electric oven, on a day where no solar power would be generated. Stay dry, warm and safe everyone!

22.01.2022 Today's bake - post 2/3 Well... There's been times where the dough transferred into my Dutch oven more easily than today. The dough looked quite nice and bubbly and active, so after preheating the oven to 240C I transferred each loaf to the Dutch oven. The round, unseeded loaf (top picture) got quite stuck and I decided not to score it. The one with hemp seeds (bottom picture) was also a little stuck, and quite flat in the baking dish. Let's see how they turn out... Might b...e eating flat bread today Next time, a bit more flour in banneton and on the dough itself would be helpful. But you see, it's ok to get things wrong and keep going anyway. 21.01.2022 Another Premium Starter Kit packed and on its way A lot of thought goes into packaging each one of these. I wear gloves, mask and apron when packaging flour, salt and the starter. The 250ml starter itself looks quite ridiculous in the 1 litre jar, but this way it has plenty of room to grow or bubble on its journey and it's less likely to create a mess. And I'm doing my best not to use plastic in my packaging or products, so wood shaving, glass containers, washable cloths... and paper bags and wrap is what you'll find in a @finding.myheimat parcel. The session is scheduled to go for an hour and you have the opportunity to ask any questions that may have come up during your baking sessions at home. 14.01.2022 Sunday bread roll experiments my Heimat's Simply Sourdough is simple and possible to fit around a full life and even leaves your kitchen in a usable state. And yet Simply Sourdough is incredibly versatile, allowing you to make anything from raisin toast, to walnut and fig loaves and even crunchy Sunday morning bread rolls. I can now share the method for making these rolls - and it's only a couple of tweaks to the normal Simply Sourdough. If you haven't yet enrolled for Sim...ply Sourdough, make sure you are ready to do so next Saturday, when the birthday special will be available for the first 19 students who sign up! To enroll head to https://www.myheimat.com.au/courses/simply-sourdough/ Follow the Simply Sourdough recipe until after the first proofing and place your dough onto the floured benchtop as per usual. I used 100% Demeter Mills Organic Unbleached Bakers Flour, sourced through @honesttogoodnessau. You can use spelt, rye or any combination of other flours you like, and of course add nuts and seeds and adjust the water as necessary. Divide the dough into 8 equal portions and fold them each in the same way as you would normally fold the bread dough prior to the second proofing. Then sit them on a kitchen towel, either score the top or place them with the folded side up and preheat the oven to ~240C. When preheated place the rolls in a circle into the Dutch oven, bake at this temperature for about 15 minutes and remove the lid from the dish. Reduce the temperature to ~200C and bake for a further 20-30 minutes. When the rolls are nice and golden, and sound hollow when knocked on at the bottom, they are ready. 11.01.2022 A slow Saturday morning here starts with pancakes made with the discarded sourdough starter. The rest of the sourdough has been fed and is digesting on the bench, and I'll prep the dough for this weekend's bread soon. My favourite pancake recipe is as follows: Mix 400g of your choice of flour(s), with 5 good sized eggs, a good amount of sourdough starter that you'd otherwise discard, a pinch of salt and enough milk and water (normally around 800ml) to make a runny pancake bat...ter. For flour I use 100g of rolled oats, milled to a fine flour in the thermomix and 300g wholemeal flour. The milk and water ratio depends a bit on how much milk I have in the fridge or how rich I'd like the pancakes to be. If you have it, a dash of sparkling water is really helpful to make the batter nice and bubbly. And I also add Isagenix whey powder for the extra protein on some days. Once mixed with a whisk into a fairly smooth, and runny batter, let the mix stand for 10 minutes. Melt a tablespoon of butter in a large pan, wait until it's nice and hot, but not smoking and then add a generous ladle of batter. Once bubbles appear and the top side is nearly 'dry', flip it to bake the other side. You should not need any more butter later on, if the pan is at the right temperature. We sometimes make apple or blueberry pancakes out of these, add cinnamon or even bacon from Poachers Pantry or cheese from The Pines Kiama. They then disappear quite quickly with organic maple syrup and yoghurt from the Pines. But they keep you cool for quite a while due to the oats, wholemeal flour and the eggs! See more
10.01.2022 Everyone knows sourdough is messy and complicated... or is it?! I have baked hundreds of loaves of sourdough in the past 5 years and yes, my sourdough journey did start off with a very messy bench, hands, clothes and I would have never been able to answer a phone call right in the middle of baking! But Simply Sourdough is different and not just a nicely alliterated name - baking sourdough really can be simple and CLEAN! Yes, imagine that?! The messiest part of Simply Sourd...ough is the second fold, before putting the loaf to proof for the second time in the bread tin or banneton. The picture is taken right after that step - which takes no more than 10 minutes by the way, even for 2 loaves. To clean I get my handy hand cloth out, wet it, clean my hands and scrub the benchtop. These cloths can just go into the washing machine when dirty. Thank you to my generous Mum for making these. Those of you who purchased a Premium Starter Kit have one too and I hope you are putting it to good use! Well, and that's really it - bench, sink and hands are clean. It doesn't take more than 2 minutes to clean up and you can go right back to running after the kids, making dinner or taking that phone call... so much easier than kneading a dough for half an hour to develop the gluten. 09.01.2022 Nearly midnight and I've just finished sewing a new batch of wash cloths. These will go into 3 Premium Starter Kit tomorrow morning. That means there is now only one left to buy! My mum had been knitting wash cloths for me when she visited in February, which honestly feels like a lifetime ago. And while she continued making them in Germany, sending them here was impossible due to covid restrictions. So I'm sewing instead, on my pre 1989 Pfaff machine, made in West Germany .... My wash cloths aren't perfect, but they are beautiful in their own right and certainly made with love. I've used terry towel on one side and @jocelynproustdesigns fabric with beautiful flowering gums on the other. I had forgotten how much I love sewing as a mindfulness activity. It got me through my final year of High School and settled my nerves just before my first baby was due. Today felt like a long and flat sort of a day, a late night sewing project, while listening to music, with the bright moon outside and the house fast asleep, seems to have brought me back to my centre. Maybe covid does have good sides, if I allow myself to see them and take a breath, or 10. 06.01.2022 Today's Bake - post 3/3 This is how the bread turned out... Fresh from the oven, the oval loaf with hemp seeds was darker and quite crusty, but a bit flat. The round loaf went back in for 5 minutes, because it was a lot lighter and not yet crunchy. That is often the case when baking in my lodge cast iron Dutch oven in comparison to the @bialettiofficial pot. The oval seeded loaf is at the bottom and the round plain one at the top. Both had the same flour ratio of 80:20 orga...nic white spelt and wholewheat. You can see the crumb is more open on the plain loaf, but both look and smell good enough to eat . I did fold the plain loaf a few more times than the oval one, which obviously made a difference. So not a failure afterall, but a couple of lessons. Use more flour in the bannetons with these sticky loaves and take your time when folding prior to the second proofing. Now to the best part... Eating! Oh and giving away, because bread really is best eaten fresh, and we don't go through 2 loaves quickly enough. Chris' Review Living in an area with some fantastic bread readily available, I had always thought that the time and effort involved to bake bread at home wasn’t worth the result...s. But I have been amazed at how little hands on time it actually takes. The loaves we have baked at home taste and look great and stand up very well against our local bakery’s (of which there are some excellent ones). Thank you Lisi for filing our kitchen with the smell of fresh bread. The process was simple and the results are fantastic. 06.01.2022 Sourdough breadrolls - my experiment from this morning They turned out well and may have been cut fresh from the oven, oh and eaten of course. Will have to do this more often and tweak a few things. Today's flour mix was 40:40:20 - organic wholewheat, premium white bakers and rye. For a German good bread is absolutely essential, but good crunchy breadrolls, even 'just' those with yeast, are the holy grail. Well, for this German anyway. I miss them and haven't (yet) been able ...to make them just right. But I'll get there, with a bit or maybe a lot of patience. And probably without the involvement of my little helpers Swipe to see today's loaf. It looked delicious, was crunchy and had the right colour. But then deflated a little and I probably should have baked it a little hotter or longer or who knows Never mind... I've learned a while ago to surrender to sourdough. 04.01.2022 3 Sourdough Sisters or is it Sourdough Yin and Yang? Just like the breadrolls yesterday, these three loaves are variations of the Simply Sourdough recipe and can be so easily made at home, once you have done the basic method a couple of times. To make the sultana and cinnamon loaf, I simply added a generous two handfuls of organic sultanas, 1/4 of a cup of Rapadura sugar, cinnamon and my own gingerbread spice mix to the dough, right before folding it for the second proofin...g. The basic dough was again made with 100% unbleached white bakers flour, sourced as per usual from @honesttogoodnessau along with all of the other ingredients. The loaf in the middle is the unchanged unbleached white loaf and the one on the right has 50% wholewheat rye and 50% unbleached white flour. You can just as easily replace any of the flours with spelt flour, white or wholemeal, and even get experimental with buckwheat for example, which I'm hoping to share soon. You could of course make the bread differently right from the start with the Simply Sourdough recipe. However, I am finding that it is easier to get a feel for a sourdough loaf first, and you will then learn how much water is necessary to make what type of crumb and develop a feel for it. This will make any of the experiments easier, when you are ready for them. Only 5 more sleeps before the big my Heimat Simply Sourdough special! Can I just say they are the BEST chocolate cookies I have ever eaten and I may have eaten a few in my life so far . They are just like a really good gooey chocolate brownie, in cookie form. The salt really is the icing on the cookie. Of course, when a recipe starts with melting choc...olate and butter, how could I go wrong?! In terms of ingredients, the eggs came from our chooks, who are happily laying, flour, dark chocolate chips, sugar and salt are all from @honesttogoodnessau, the butter is of course @5thduke from @pepesaya, and @vanillaandco beans in the homemade vanilla extract. 03.01.2022 Today's bake - post 1/3 Yesterday morning felt like the right time to mix the dough for a couple of loaves of sourdough to be baked today. I spent about 5 minutes preparing the dough. This dough is mainly organic white spelt flour, with a little bit of organic wholemeal flour. Given it's not really warm here at the moment, I left the dough to proof a fair bit longer than 10 hours - probably about 20 hours. This is just the first proofing, which it's not normally as temperam...ental. The dough was very bubbly this morning and while I love a loaf with an open crumb, which means nothing more than big bubbles, I still don't want it to collapse and produce a flat bread. So I've used a little more flour than usual to ensure it doesn't stick to the walls of the banneton. And I've also mixed Australian hemp seeds sourced through Honest to Goodness into half of the dough. This step is probably the messiest and most involved of the Simply Sourdough method and still only takes about 10 minutes for 2 loaves. Both loaves are now doing their second proofing. When it's warm this would be no longer than an hour, but I think today I can leave it for a little longer. Stay tuned for the scoring of these loaves and the baked end result. 01.01.2022 More on the my Heimat bread roll journey... On the weekend I tried making some fresh crusty white Sunday morning rolls. These are made with commercial yeast and not sourdough, as I wanted to try something new. They were fluffy inside and crunchy on the outside and all 8 disappeared in no time at all. The taste was a little yeasty and for me personally, white rolls are just not as special as darker multigrain ones. But one step at a time... It was another reminder to do thing...s more slowly than I might be used to, let the little helpers play with the flour along the way and enjoy the small wins when they come.
