17.01.2022 Everything tastes a little better when it is prepared and plated with care We all know that most of us eat with our eyes first and this can be especially important to remember in preparing dishes such as carpaccio and tartare. Those dishes are typically associated with dining at an upmarket restaurant, but there is no reason they cannot be enjoyed from home. This is our Steak Tartare getting the final touches by Ethan for a photoshoot with @shirazcenter_ This dish is one of... our absolute favourites, always leaving us wanting one more bite. 15.01.2022 Last weekend we did something we should have done a long time ago - we purchased a spit roast To celebrate one of our best mates birthdays we returned to the area where we met and grew up just a few hours south of Sydney for a great weekend around food and fire. The whole weekend was dedicated to this beautiful beast you see pictured; ‘Belvedere.’... We took a morning road trip from our mates place up to the highlands to pick up this beauty that was respectfully raised at @redleaffarm. We met Sam and Katrina and were shown around their incredible farm. Cannot wait to go back and do it all again - next time picking up a delicious pig! Want to come? Belvedere was lovingly carried on our laps back down from the highlands from paddock to plate. We dressed Belvedere in quality Olive oil and plenty of Salt to unlock all of those farm fresh flavours! After 5 hours of anticipation together we feasted (for another 5 hours, and for the rest of this week too). Hands down one of our favourite ways to cook. Open coals, low and slow. 09.01.2022 Thank you Nicole for having us to celebrate your 50th birthday. It took a few days to prepare for this gig but the Porchetta was the best we’ve done yet. It was eaten with toasty twice cooked potatoes and our house slaw.
