Ces contrôles s'effectuent tout au long de la maturation des raisins. Pendant cette période, nous faisons un tour régulier dans toutes nos parcelles afin de pratiquer des contrôles, évaluer la qualité de la vendange et l'état sanitaire général. Les premiers contrôles maturité s'effectuent à l'aide d'un refractomètre (comme sur la photo) . Cet appareil permet d'estimer le degré d'alcool potentiel en écrasant à l'intérieur le jus de baies prélevées dans les parcelles. Pour plus de précision, nous effectuons également des prélèvements de grappes entières dans les parcelles que nous pressons ensuite à la main. Le jus obtenu nous permet de pratiquer des analyses en laboratoire afin de déterminer plus précisément la concentration en sucres, l'acidité totale, le PH. Enfin, pour s'assurer du niveau de maturité du raisin, il est indispensable de pratiquer la dégustation de baies en prenant soin de bien décomposer chaque élément : pulpe, peau, pépin.
