14.01.2022 This is our bacon broth, chicken tortellini and sherry. It was created by Sam for our first ever menu and is a collaboration between the ingredients, the season, the region and our place in it. The bowl is hand crafted by our neighbours @jamfactoryau The tortellini is in honour of Sharon’s dad Rocco who always wanted to see pasta on a Fino menu, and is made using @fourleafmilling flour and local chickens. The umami rich broth is enriched with Linke’s bacon bones and Barossa... heritage. Of course it is finished and paired with @seppeltsfield sherry. In tribute and celebration it has made a return for winter to warm the body and the soul. It’s cold out there. See more
