21.01.2022 Last nights quick and easy dinner- herbed chicken, grilled haloumi, veggies served with some whole grain bread. . This herbed chicken is super quick, easy and delicious and makes a great midweek meal- just slice some chicken breast and mix with some olive oil, mixed herbs and powdered vegetable stock, then fry or bbq until cooked through. It’s a big hit with my family #dinner #quickmeal #summereating

19.01.2022 My kids are loving their homemade burgers tonight! . Poor old burgers often get a bad rap as an ‘unhealthy’ food but if you make your own (particularly the patties) they can actually be quite a healthy choice . I generally use a lean mince, add some grated veggies into the patties, use a healthy fat (like olive oil) when cooking the patties and encourage the kids to choose a wide variety of salad/veggies when assembling. And of course whole grain buns would be preferable ...to white but that’s still a work in progress for a couple of my kids . 19.01.2022 It’s HOT!! These little fruit ice blocks I made for my kids are a great idea in this weather - I just blended together some orange and pineapple and froze in iceblock moulds. So simple to make you could get the kids to do it . As well as being really yummy and refreshing, blending rather than juicing retains the fibre which gives them a big tick for health . 10.01.2022 On the weekend my girls and I planted some seeds for our summer veggie patch. I’ve never been much of a gardener but I’m convinced this is the year my veggie patch will be a success #mustremembertowater . Getting the kids involved in gardening has been shown to increase their consumption of vegetables (see link below) as it not only increases their exposure but also their willingness to try, which I’m sure most parents will agree is one of the biggest barriers to eating the...ir veggies. . Together we planted tomatoes, oregano, basil, beetroot, zucchini and eggplant and are now just waiting for the seedlings to sprout before they make their way to the veggie patch.
