03.01.2022 So I think I have perfected my yoghurt coconut pannacotta recipe. 1.5 cups coconut milk 1.5 cups yoghurt or cream or coconut milk... 3.5 teaspoons gelatine 1 - 2 tablespoons of sweetener of choice (honey, maple syrup, sugar) vanilla Just put milk in bowl or saucepan and warm slightly. Sprinkle gelatine on top and leave for a few minutes. Whisk gelatine in until dissolved and add sugar if not using sweetened yoghurt. Warm mixture until sugar is dissolved but do not boil. Remove from heat and allow to cool slightly. Whisk in yoghurt and vanilla, along with any other flavour you might like to add. Pour into oiled moulds. It fills 10 small muffin holes or you can use glasses or make one large one. This sets perfectly to put on a plate, but if you like it softer maybe use a little less gelatine. Amy xx
