08.01.2022 Pancakes are always a good idea These easy to make American style pancakes are paired with whole wheat instead of white flour to give you that extra dose of daily fibre. We can’t think of a better way to start the weekend! You will need: 1 cup whole wheat flour... 2 tbsp coconut sugar pinch of salt 1 tsp baking powder cup milk (regular or plant-based) 1 egg 1 tsp vanilla extract (a few drops of oil to grease the skillet) Toppings handful of blueberries (or different fruit of choice) tablespoon of maple syrup How to make: 1. In a large mixing bowl, combine all the dry ingredients (flour, baking powder, sugar, salt). 2. In a smaller bowl whisk together milk, egg and vanilla extract. 3. Pour the milk and egg mixture into the bowl with dry ingredients. Whisk only until combined (do not overmix). 4. Heat the skillet over medium/high heat and grease it with oil. Pour approximately 2 tbsp of batter per pancake and fry until some bubbles on the surface appear (1 to 2 minutes). Flip the pancakes and fry for next 30 seconds up to 1 minute or until golden brown. 5. Serve immediately topped with blueberries and (optionally) a tablespoon of maple syrup. 05.01.2022 Sunday is meal plan and prep day for us! We had to share this fresh, light, nutritious and tasty recipe. Garlic and lemon shrimp noodles This is a very quick and easy go-to meal, especially on the days that you don’t have a lot of time to prepare. You will need: 1 medium\small zucchini 1 tsp olive oil... 80g raw shrimp, peeled 1 garlic clove, minced 1/2 of a lamon, juice and zest 1 tbsp fresh parsley, chopped 1/4 of an avocado, sliced 1 tbsp of fresh parsley, chopped sea salt and black pepper to taste Method: 1. Make zucchini noodles by spiralizing raw zucchini 2. Heat olive oil in the skillet. Add shrimp and cook for about 2 minutes on each side. 3. Add minced garlic, lemon juice, lemon zest and salt, cook for 2 more minutes. 4. Add zucchini noodles and parsley and stir well. Let cook for about 30 seconds, don't overcook the zoodles. 5. It's ready! Transfer to a bowl, add freshly cracked black pepper to taste and, if desired, serve with more chopped parsley and freshly squeezed lemon juice. Don’t forget to SAVE this recipe and return to it later!
