If it depletes you then what is one thing you could shift, by either mindset or physical, that would make it more enjoyable? Remember that it doesn't have to be a major shift. In fact, the smaller the better, as we are more likely to stick with it if it's realistic. 20.01.2022 Tasty Tuesday - Chocolate Bubble Slice This slice is made weekly in our household - there's always a container full in the fridge This time I didn't have enough Rice Bubbles so used 40 grams of Cornflakes and then added a handful of pumpkin seeds. Kiddies and I decided it was even better than the original - thumbs up - 50 grams medjool dates seed removed - 130 grams coconut oil liquid... - 120 grams rice malt syrup or honey - 1/2 tsp vanilla extract - 40 grams desiccated coconut - 1 tbsp chia seeds - 15 grams cacao powder - 160 grams Rice Bubbles or similar line a slice tin with baking paper place the dates in Thermomix bowl and mix for 10 seconds, speed 5 scrape down the sides of the bowl and add coconut oil, rice malt syrup and vanilla. Cook for 6 minutes, 100 degrees, speed 2 add the chia seeds, cacao powder, coconut and rice bubbles and mix for 15 seconds, speed 4, reverse scrape down sides of bowl and mix for a further 5 seconds, speed 4, reverse to make sure rice bubbles are covered in melted mixture transfer mixture into tin and flatten the surface with a spoon. put in the fridge for 3 hours then cut into squares So simple, delicious & packed full of goodness

19.01.2022 MANAGING UNCERTAINTY IN THE AGRICULTURAL SECTOR If there's one thing farming & running a business has taught me it's that life is full of uncertainty! And that can be really stressful if you don't watch your mindset. Way back, Stephen Covey designed a framework reviewing your power and concerns. He defined 3 levels set within concentric circles - Circle of Control, Circle of Influence & Circle of Concern. If you are feeling stressed, try writing all of your worries on post-i...t notes and sticking them within the Circle of Concern. Then you decide whether the worry is something you can have influence over or whether you can in fact control it. Move the post-it note to the corresponding circle. If there are items sitting in the Circle of Concern, then this is a chance to acknowledge that you can't change them - eg the wool price or the weather! So give yourself permission to be aware they are a concern but you won't be able to change them by worrying. 19.01.2022 Stay patient and trust the journey How many times have we been told slow down and enjoy the ride all good things come to those who wait... have patience slow down I would say pretty much all of us at one time or another. It doesn’t matter whether you have fitness goals, health goals, emotional goals, friendship goals..... any goals, if we move to fast and try to get to the end point to quickly we can miss so much along the way. not only that, but if we rush we can become careless and mistakes and mishaps may happen. that being said, it’s not realistic to suggest that we have time to slow down for absolutely everything in our day-to-day life, so where do we draw the line? How do we learn to accept that to grow things take time? How do we learn to accept that if we don’t always get there the first time round it doesn’t mean we’ve failed, it just means we need more time? How do we effectively and realistically learn to have patience? 18.01.2022 { Tasty Tuesday - Oat & Raisin Biscuits } Giving this recipe a go for the first time These biccies are nut free so perfect for lunch boxes and you can freeze the dough in small balls for stress free baking another day This is a Thermie recipe but can be made in food processor. - 130g brown sugar - 130g butter, chilled and cubed... - 2 tbsp milk - 2 eggs - 150g wholemeal self-raising flour - 1/4 tsp ground cinnamon - 150g rolled oats - 80g raisins or sultanas or dried cranberries Preheat oven to 180 and line 2 baking trays Place the sugar into the mixing bowl and mill 10 sec/ speed 9 Add the butter and chop 5 sec/ speed 8. Insert the butterfly whisk and whip 1 min/ speed 4. Scrape the side of the bowl and whip a further 1 min/ speed4 until light and fluffy Add the milk and eggs and mix 15 sec/ speed 4, until well combined. Remove the butterfly whisk and scrape down bowl Add the flour and cinnamon and mix 10 sec/ speed 4 Add the oats and raisins and mix 10 sec/ reverse/ speed 4 until combined. If time permits you can place the dough into the fridge for an hour to make rolling easier Roll heaped tbsp of dough into balls and place on trays 5cm apart Bake for 15 minutes or until golden Thanks to "Something For Everyone" by Louise Fulton Keats for the recipe

17.01.2022 Exercising isn't always easy & our mind can be a tricky character sometimes - it loves to convince us to do the opposite of what we want & need to do So how do we know when it's an excuse not to exercise & we need to ignore it OR when it's a legitimate reason & we need to be smart and listen in. Often it isn't black & white and you need to make a judgement call, but remember that your mind is not always on your side. Do the test of reasonableness - what what you say to a mate in the same situation?? Chances are you should be pulling on your socks and tying up those laces

12.01.2022 I’m not going to lie to you - if you exercise sometimes it’s gonna hurt the next day But why though I hear you ask Because muscle soreness is actually your muscles thanking you for working out and means they are getting rebuilt stronger than before Pain is different though. That means that something isn’t quite right and it’s totally ok to stop and figure out what that it. ... Is your technique spot on? Have you given yourself enough time to recover between training? Have you actually injured yourself? There is no point being in denial about these things. Pain is your body telling you something isn’t right and you need to STOP Don’t think you are being tough or have to man up to push through the pain - this could lead to potentially causing long-term, irreversible damage to the most reliable, consentient home you will ever have - your body

08.01.2022 Be Mindful In any industry, you’ll face challenges. Around the farm on a given day I might deal with a gate that won’t latch properly, a stubborn ewe and a fuel truck that’s running way behind schedule (and stopping me from picking the kids up from the bus on time) It’s incredibly easy to get frustrated and let a few challenges turn your day into a bad one ... I aim to be mindful about my thinking and notice the stories I’m telling myself. And reframe them when they aren’t helpful That gate? It gave me the chance to get out the Ute for a few minutes and stretch my legs (and enjoy the winter sunshine). That pesky sheep? She’s going to make someone some bloody delicious chops soon (and help our bank balance). And the fuel truck, I’m grateful they fitted us in on a super busy schedule and that our kids are pretty resourceful and will enjoy an extra ten minutes scouring the road verge looking for treasures.

What an emotional, fast paced, happy, sad, overwhelming, exciting time the past few weeks have been Mount Romance Farm is now our new place to call home and for us, as a family and business, the move was well needed and definitely the right thing to do Yes, it’s scary to start again in some ways, yes we have left some absolutely stella friends and family behind, but those people will always be there for us, and we are so humbled by their support and encou...ragement And so now, a new chapter begins for Team O’Neill. One that will not only grow our love of farming, and improve our own health and well-being but also see FLF take on some pretty exciting business ventures - one of them being health and fitness retreats this has been in the making for a long time, and we’re so excited to put our plans into action from February next year Retreats for ..... businesses men only (a demographic very close to my heart) women only families we want to focus on improving the mental, physical and emotional health and well-being of everyone that takes part This is such an exciting time, and a venture that is so important to me spread the word and please get in contact for more information

It can be your kids, friends, neighbour..... whoever. 06.01.2022 A very sweaty, late night workout for me! So sweaty that I had 2 little pools by the end of it Working out in the evening isn’t ideal but sometimes you have to ask yourself if that is a REASON or an EXCUSE not to exercise The day ran away with me today so I couldn’t train any other time. I wasn’t super tired from my day, I needed the time to unwind but didn’t want to sit in front of the tv, but I’ll be honest I was split 50/50 about whether I wanted to workout... for an hour. If I was totally drained from my day, if the thought of getting on my bike filled me with dread then would it have been worth it? Probably not. But I chose to go with the 50% that wanted to exercise and I’m glad I did! But remember, it’s not always going to be that way..... be kind to yourself, listen to yourself and know when you have a valid reason to do nothing See more

05.01.2022 { Tasty Tuesday - Sticky Chicken & Fried Rice Tray Bake } I made this the other night and it was enjoyed by the whole family which always makes you feel like a real winner winner chicken dinner. - 1 cup basmati rice uncooked - 1/2 cup salt-reduced liquid chicken stock... - 1 cup water - 2 tbsp tamari (gluten free soy) - 1 tsp sesame oil - 500 g chicken thigh fillets trimmed and chopped -2 tsp honey - 2 cloves garlic minced - 2 tsp fresh ginger minced - 2 spring onions sliced - 1 cup frozen peas defrosted - 2 free ranged eggs beaten Preheat oven to 200C Place rice in a deep baking dish with stock, water, half of the tamari and all of the sesame oil. Cover with foil and cook for 30 minutes Meanwhile marinate the chicken in honey, the remaining tamari, garlic and ginger After the rice has been for cooking for 30 minutes, remove from the oven and stir through the spring onions and peas. Make four holes in the rice and pour a little beaten egg into each hole. Place the chicken on top of the rice Return to the oven and cook for a further 20-25 minutes or until the chicken is cooked through. Toss the rice and chicken together to combine with the egg. 05.01.2022 Tasty Tuesday - Chicken Broth Is it just me or does everyone seem to be coughing & sniffing & sneezing... Time for some wholesome & hearty chicken broth Here's what I threw into the slow cooker - All the left over bits & pieces from a cooked chock ... - 1 large unpeeled onion cut into chunks - 4 unpeeled garlic gloves cut in half - 2 bay leaves - 1 tsp salt - few black peppercorns - 1 tbsp apple cider vinegar - 8 cups water Place all the ingredients into the slow cooker Cook on low for 9-12 hours Strain the broth into a large bowl with a fine strainer Throw way the leftovers in the strainer Use this broth in any of your fav soups

04.01.2022 Virtue Signalling In it’s truest definition it is about ‘the action or practice of publicly expressing opinions or sentiments intended to demonstrate one's good character or the moral correctness of one's position on a particular issue’ ... But if we look at VS in a broader aspect it can relate to any aspects of our life, not just about social and moral issues. The majority of us have good intentions when it comes to our health and well-being right? We SAY we deserve better, we SAY we will commit to giving ourselves more time out, we SAY exercise and movement and ‘healthy eating’ must be a priority. Aren’t these all virtue signals? Aren’t they all morally correct statements said with the truest of intentions? But what happens when we don’t follow through on our health and well-being virtue statements? Instead of giving ourselves a hard time about not seeing it through, would it not be more beneficial to think about WHY it didn’t happen? 02.01.2022 Tasty Tuesday - Chocolate Beetroot Cupcakes I've been wanting to whip these up for while now and they definitely didn't disappoint This is a Thermie recipe but can be easily adapted to other mixers - 200g fresh beetroot peeled & chopped into 3cm cubes - 2 tbsp milk... - 200g pure maple syrup - 120g olive oil - 2 eggs - 230g wholemeal self raising flour - 30g cocoa powder or raw cacao powder - 1/2 tsp baking powder CHOCOLATE CREAM CHEESE ICING - 60g butter, slightly softened and chopped - 130g cream cheese, chopped - 90g icing sugar - 40g cocoa powder - 1 tbsp milk Preheat oven to 170 degrees and line 12 hole muffin tin. Place beetroot into mixing bowl and grate 4 sec/ speed 6. Scrape down sides of bowl and repeat. Add the milk, maple syrup, oil & eggs and mix 10 seconds/ reverse/ speed 3. Add flour, cocoa & baking powder and mix 15 seconds/ reverse/ speed 3 or until combined. Divide mixture into muffin tin and bake for 20-25 minutes. Leave in the tin to cool for 5 minutes before transferring to wire rack. To make the icing insert the butterfly whisk into the mixing bowl. Add butter & cream cheese and mix 10 seconds/ reverse/ speed 4. Add the icing sugar & cocoa and mix 10 sec/ reverse/ speed 3. Add the milk and mix 10 seconds/ reverse/ speed 3. 01.01.2022 Tasty Tuesday - Honey Mustard Chicken A bowl of this deliciousness is like a big warm hug This is a Thermomix recipe but can easily be adapted to cooking on stove top. Something the whole family can enjoy - 1 onion, halved... - 30g olive oil - 1/2 tsp turmeric - 20g plain flour or flour of choice - 100g water - 1tbsp stock powder - 40g honey - 30g wholegrain mustard - 500g chicken thighs cubed - 150ml milk or cream of choice - 1 cup of cubed veggies of choice Place onion in Thermie and chop for 3 sec speed 7 Add oil and sauté for 2 min speed 1 at 100deg Add turmeric and flour and stir for 3 sec on speed 4 Add water and cook 1 min, 70 degrees on speed 1 Place chicken, stock, veggies, mustard and honey into bowl and cook for 5 min, 100deg, reverse and speed soft Add cream and cook for 20 min,100deg reverse and speed soft Serve with rice, pasta or quinoa or load your bowl with lots of spinach and spoon on top
