25.01.2022 Lunch today!! Chicken, Bacon and Avocado Salad Mixed lettuce leaves... Avocado Tomato Carrot Bolied eggs Bacon Chicken Whole egg mayo Put all of these ingredients together on your plate along with anything else you may like to add. Full of amazing vitamins, nutrients and protein.



24.01.2022 Breaky!!! Egg omelette with mushies, onion, capsicum shallots and garlic all rolled up with avo and tomato on the side!! So quick and easy and oh so good!!!

22.01.2022 Strawberry Jelly Slice!! I have been playing around with how to make a healthier jelly slice for the past couple of days and came up with this. I think you could use most fruits instead of strawberries so use what you like. Ingredients:... Base- 3/4 cup oats 1/3 cup shredded coconut 3/4 cup raw almonds or cashews 1/4 cup coconut oil, melted 2 tbls 100% maple syrup Method- Put all ingredients into a blender and pulse until you have a nice base consistency. Press firmly into your slice dish that is lined with baking paper. Put in the fridge to set. Middle layer- 1 270 pack of coconut cream 1/2 a lemon, juiced 1 tbls 100% maple syrup 2 tsp gelatine Method- Gently heat up the coconut cream in a saucepan. Add the lemon juice and maple. Once warm, sprinkle in the gelatine, stir rapidly and then turn off the heat. Once the gelatine has dissolved, pour into a bowl and place in the fridge until it cools but not set. Pour over the base and place back in the fridge to set. Top: Ingredients- 250g strawberries, chopped 500ml water 2 tbls 100% maple syrup 2 tsp gelatine Method- Place the strawberries, water and maple ina saucepan and simmer for at least 10mins while occasionally stiring. Add the gelatine while stirring and turn the heat off. Once gelatine has dissolved, remove from heat. You can put this in the fridge for 15 mins and then pour over the middle layer. Place in the fridge for a couple of hours until all layers are set. Slice up and enjoy.

15.01.2022 Energy bites!! I tweaked this recipe to get extra calories in for training and the big event. Ingredients- ... 2 cups oats 3 mashed bananas 3 tblsp 100% maple syrup 1/4 cup of cacao powder 2 tblsp cruchy peanut butter 3 tblsp coconut oil Method- Preheat oven to 180'c. Line a tray with baking paper. Mix all ingredients well and roll into tiny balls. Place on the baking paper and cook for about 10-15 mins. Allow to cool and then put a few balls into zip lock bags to take with you when you need them. Makes about 40 small bites.

12.01.2022 Homemade Strawberry Jelly- especially for spring! Ingredients 250g strawberries, washed and chopped... 500mls water 1 tblsp 100% maple syrup 1.5 tsps gelatine powder Method Put strawberries, water and maple in a saucepan. Bring to the boil and then turn down to a light simmer for 10 mins. Turn the heat off. Sprinkle the gelatine in while stirring. Allow to sit for 5 mins and then pour into your jelly moulds. Place in fridge and allow to set over night!! Remove from mould and serve with more berries or coconut yoghurt. Yum!!



12.01.2022 Finding it slightly hilarious the stuff I am taking on my trail run today. Sunscreen and big drink bottles with extra water and electrolytes will stay in the car but the rest is coming. Lol. Can't wait until my hydration vest arrives!!

11.01.2022 Today's lunch!!! Spicy Chicken Salad! Ingredients... Mixed lettuce leaves Zucchini noodles Chopped capsicum Chopped tomatoes Chopped cucumber Chopped avocado Chopped parsley Chicken breast Mexican salsa Salt and pepper Cayenne* optional Chilli powder* optional *Dressing Lemon juice Salt and pepper Olive oil Dash of honey *Mix all ingredients and leave to sit* Method Fry up your chicken breast until cooked through. Add some salsa. You wont want it too wet so just add a bit at a time. Turn frypan off. You could add some chilli or cayenne now if you like a bit of spice. Make up your salad and top with your mexican chicken. Drizzle your dressing over the top and enjoy!! So many amazing nutrients in this dish!!

10.01.2022 Last long trail training run yesterday before the big event! 10 sleeps!!! I had really fresh legs before so it felt so good!! We walked most of those inclines and made up time on the way down!!

05.01.2022 Here's a quick and easy spring sorbet!! Creamy Mango, Banana, Lemon and Passionfruit Sorbet!! Ingerdients- (serves 2)... 1 cup frozen mango chunks 1 frozen banana 1/4 cup coconut cream Squeeze of lemon juice 1 passionfruit Method- Place all ingredients (except the passionfruit) into your blender or ninja and blend until smooth and creamy. You may have to take the lid off and give it a stir before blending again. Once blended, place into 2 serving bowls and put the passionfruit over each sorbet. Yummo!!

05.01.2022 I'm an ultra marathoner!! Still have major runner's high this morning!!! Finished the 50km Freedom Trail Run yesterday!! What an epic adventure! If you are thinking about giving something like this a go whether short or long trails, just do it!! Best feeling in the world running with nature (except the snakes)

04.01.2022 Simple nutritious breaky!! 5 mins and you are eating!! Chopped broccoli and tomato with a couple of awesome eggs. Add a peppermint tea or warm lemon water and you have a winning combo!! Have a fantastic day!!

03.01.2022 Ok so heading into the unknown has it's advantages and disadvantages!!! Lol. It took me 1hr and 29 mins to do 12.5kms on the trail at Ewen Maddock Dam. Somehow I chose the hilliest way to go!! Great training for the ultra but absolutely smashed me!!

01.01.2022 Finisher!!!! Woo hoo!!! Loved every minute of the run today! Fantastic atmosphere, support from my awesome family and friends, got to run 10km of it with my hubby and last km with my bestie!! 4:37!! Winning!!!
