Here what you need: red onion, sliced... 1 tbsp. apple cider vinegar 1 celery stick bunch parsley, chopped 1 can (14 oz./400g) butter beans, drained 1 can (3.8 oz./110g) tuna in olive oil HERE WHAT YOU NEED TO DO: Peel and finely slice the red onion. Place in a large bowl and massage 1 tablespoon of vinegar into it. Season with salt and pepper. Finely slice the celery, chop the parsley, and put them into the bowl. Drain and rinse the beans. Divide between 2 plates. Drain and add the flaked tuna into the bowl. Add onion and gently toss the ingredients together. Cook an extra salmon fillet, let it cool and then break into large flakes for topping lunch salads during the week. Here what you need: 2 salmon fillets (4.5 oz./130g each)... 10.5 oz. (300g) green beans, trimmed 2 eggs 10 black olives 2 tbsp. Greek yogurt 1 tbsp. apple cider vinegar HERE WHAT YOU NEED TO DO: Place the salmon skin-side down in a colander over a pan of boiling salted water. Cover and steam for 10 minutes. Cook the trimmed beans in boiling water for 6 minutes. Then boil the eggs for 56 minutes. Blend the olives into a paste with a hand mixer and mix half of them with the Greek yogurt, 1 tablespoon of vinegar, and salt and pepper. Toss the cooked beans with the Greek yogurt dressing and divide between 2 plates. Peel and cut the eggs into quarters. Flake the salmon over the beans and arrange the eggs on top. Here what you need: For the salsa:... 1 medium cucumber, chopped 3 tomatoes, chopped red onion, finely chopped 2 tbsp. parsley, chopped 1 tbsp. olive oil 1 lemon, juice only Spices for chicken rub: 1 tsp. cinnamon 2 tsp. smoked paprika 1 tsp. fresh ginger 1 tsp. turmeric tsp. ground nutmeg 1 tsp. ground cumin 1 tbsp. olive oil For the tacos: 14 oz. (400g) chicken breast 8 small whole wheat tortillas handful parsley, chopped spicy sauce, optional HERE WHAT YOU NEED TO DO: To make salsa: In a bowl, mix all the ingredients for the salsa and season to taste with salt and pepper. Allow the mixture to rest in the fridge while you prepare the chicken. To make chicken tacos: Set the oven to 420F (215C). Combine all the spices for the chicken rub with 1 tablespoon of olive oil, and rub on the chicken breasts. Heat a non-stick frying pan on medium heat, and sear the chicken breasts for 3 minutes on each side. Then place the chicken on a baking tray, and bake it in the oven for 8-10 minutes or until cooked through. Heat up the tortillas in a hot oven or on a pan. Chop the cooked chicken, and assemble the tacos. Before serving, garnish the tacos with chopped parsley and hot sauce (if using). Made these? PLUS you can modify it based on your food preferences. The base recipe is vegan but you can add cheese for vegetarians, or even chicken or ground beef if you eat meat. Make up a few ahead of time for grab-and-go lunches just reheat them before its time to eat! Black Bean and Hummus Burrito Wraps (Makes 4 burrito wraps) 1 tbsp olive oil 1 large onion, chopped tsp each of cumin, garlic powder, and salt 2 large red bell peppers 8 oz. (225 g) sliced mushrooms 1 can of corn 8 oz (225 g) your favorite hummus 4 large wraps or tortillas 1 can black beans, rinsed and drained 4 handfuls washed fresh spinach Optional: Goat cheese, crumbled Optional: 8 oz (225 g) cooked shredded chicken breast or ground beef Optional: guacamole and/or salsa for garnish Preheat oven to 425F/220C. Place parchment paper on a baking sheet and set aside. Heat the oil over medium-high heat in a saucepan and saute the onion until it softens and becomes translucent. Stir in the seasonings and cook for 1-2 minutes before adding the bell pepper. Saute until it begins to soften, and then add the mushrooms and corn. Continue to cook until the mushrooms begin to soften. Meanwhile, the layout wraps and spread a layer of hummus over them. Add the sauted vegetables, black beans, and fresh spinach, along with any of the optional ingredients you want to use, and roll into a burrito. Place burritos on a baking sheet (seam side down), and bake for 8-10 minutes. Serve immediately topped with guacamole and salsa. Store leftovers in the fridge, covered, and reheat before serving. 08.01.2022 Its a good morning with my 5-ingredient blueberry breakfast bars! What you need: 2 cups (300g) blueberries... cup (60ml) maple syrup 1 tbsp. arrowroot powder 3 cups (250g) rolled oats 1 ripe banana, mashed 3 tbsp. water HERE WHAT YOU NEED TO DO: Preheat the oven to 350F (175C). Line a baking pan with parchment paper. In a bowl, smash the blueberries using a fork. Combine with the maple syrup and arrowroot powder. Set aside. Add half the oats to a food processor or blender to create oat flour. Transfer to a mixing bowl and combine with the remaining rolled oats, banana, and water. Firmly press of the oats mixture into a thin, even layer in the baking pan. Spread the blueberry mixture on top and then crumble the remaining oat mixture over the blueberries. Many of you still dont know what your metabolism actually IS! Its tempting to think of your metabolism as a thing kind of like your bodys speedometer that controls the rate your body burns energy. But your metabolism actually is a complex PROCESS where your body turns the food you eat into energy. And since you have dozens of trillions of cells, you can just imagine how complicated this whole process is! There is a long list of things that can affect your metabolism, including many things you cant control like your age, genetics, and whether you are male or female, and more. There are a LOT of things you CAN do to rev up (or slow down) your metabolism, based on your lifestyle choices. And you guessed it, SLEEP falls into that category! Here are some things you can do during the day to set yourself up for a good night of sleep! Get some sunshine in the morning to reinforce your natural circadian rhythm. Also, sneak in some exercise during the day! Among many other things, this can help with your bodys stress hormones AND make you more physically tired so your body wants to sleep at night! If naps get in the way of your sleep routine, try to avoid them, especially late in the day. A short cat nap after lunch is fine if youre lucky enough to be able to take one! Some people find that having coffee or other caffeinated beverages after 2 p.m. can impact their sleep. 03.01.2022 Do you know about the truth about stress and your weight? Stress is a natural part of life, and it hits all of us eventually. It can be a job with constant deadline pressures relationship or financial issues and it can even come in the form of good stress, like a new baby in the house! The most important thing you can do is to BE AWARE of and listen to your body.... Be mindful of how you are feeling and what you are eating. This lets you stay in (or regain) control. If you find yourself stressed or tense, take note! Take regular anti-stress breaks. Sometimes you have to be sneaky. I know of several people who make solo grocery trips and stand in the longest checkout line to extend their alone time. Also, experiment with meditation or breathing exercises a couple of times a day. Make time for exercise. This can help with stress management and boost your metabolism in the process. A brisk walk counts! Honor your needs. Just because someone in your life has an urgent need doesnt mean your own needs are less important. Make time for YOU! And above all, dont stress about stress! 01.01.2022 Are you ready for a HUGE dose of inspiration? I have an incredible story that will help get you fired up to dominate your day! Have you heard of Wilma Rudolph In 1960, she became the first American woman to win three gold medals in track and field at a single Olympics.... Thats impressive enough on its own but Wilmas story is far more than that. She started out her life with pretty much all the odds stacked against her, culturally, financially, and physically. Wilma was the 20th of 22 kids (!!!) in an African-American family growing up in the segregated South of the 1950s. When she was very young, she developed scarlet fever, double pneumonia, and, at the age of 5, polio. That left her disabled and unable to use her left leg. She was forced to wear a brace until she was 12, and doctors told her she would never walk again. But my mother told me I would, she later said. I believed my mother. With lots of physical therapy (including family members who massaged her leg and helped keep her active) and an incredible work ethic she eventually overcame her disability. When she reached high school, she joined the basketball team. Thats where she was spotted by a Tennessee State University track coach, who was impressed by her speed and began training her. By the time she was 16 years old, she qualified for the 1956 U.S. Olympic track and field team, where she earned her first medal: a bronze medal in the 400-meter relay. The triumph cant be had without the struggle. Wilma Rudolph But Wilma wasnt done. Even though she became pregnant as a senior in high school, she continued both her training and education, majoring in education in college. At the 1960 Olympics in Rome, she went on to break several records and earn 3 gold medals! In fact, she became known as the fastest woman in the world and skyrocketed to international fame thanks to her achievements. When she returned home to Tennessee after her wins, she refused to attend her homecoming celebration unless it was integrated and an estimated 1,100 attended a banquet in her honor, while thousands more lined up to watch her welcome home parade. A year later, she retired from competition, and went on to coach, teach, and run community centers to help disadvantaged youth. Winning is great, sure, but if you are really going to do something in life, the secret is learning how to lose. Nobody goes undefeated all the time. If you can pick up after a crushing defeat, and go on to win again, you are going to be a champion someday. Wilma Rudolph Talk about perseverance! So many takeaways from that story.
