17.01.2022 Our Raspberry Ripple ale is tasting great. We classify this as a white stout, using coffee to give a suggestion of roastiness, but also with hints of raspberry. The mouthfeel is increased with the use of lactose, a sugar that is not able to be fermented by Brewers yeast. It’s not a sweet beer, and it’s not savoury either, but it’s a great drop for any occasion. Buy online or drop into Flat Rock to pick some up! 16.01.2022 Our current release of Saison is tasting as it was designed.....refreshing and flavoursome. Flat Rocks version is brewed with five cereal varieties including triticale. Having heard of it, and seen it grow in the paddocks of the Riverina, this was our first time brewing with triticale, a wheat (triticum) / rye (secale) hybrid, and we are very happy with the result. This brew is fragrant with a spicy, peppery flavour driven by the yeast. From its historic humble origins in sou...thern Belgium, this style of ale was a source of sustenance for the workers during harvest, and in our opinion, very fitting for the Australian climate. And to really get authentic, look out for our barrel aged version to be released soon. Resting on oak for three months, it brings another level to the flavour profile and authenticity of our version of this farmhouse ale style. See more

15.01.2022 A dark ale may be the choice for a chilly day like today and we have a couple of options for you!! Our Chocolate Porter has been cask conditioned and is served on hand pump. It’s smooth, with a hint of sweetness from lactose added in the boil. This was brewed with Solomon Island cacao husk tea supplied by South Pacific Cacao and Chocolate Artisan adding chocolate flavours that compliment the malts. Thanks to Jessica Pedemont for providing us with the husks - and for all your premium quality cacao and chocolate requirements, have a look at their Facebook page. If you would like something with a bit more bite, our Black IPA has all the roastiness from the dark malts, but has the hop kick of an IPA, from the generous addition of Simcoe hops. Both these beers are getting great feedback, so come and try them before they go!

14.01.2022 Our first roast of the year! Lamb roast with all the trimmings. So good with a pint of our cask English bitter, or light brown ale. In fact, any of our current tap beers will be a great accompaniment! This Sunday from 12 noon. Best to book!

13.01.2022 Brew day today, using Maris Otter as our base malt for our next batch of English Bitter. Introduced in 1965, this English variety of barley is a cross of the spring malting barley Proctor and winter barley, Pioneer. Maris Otter has a reputation of producing high quality ales and is a bit of a favourite at Flat Rock. A little known fact is that every grain of Maris Otter used for brewing can be traced back to the six acre Maris Otter Mother Field, or its sister plot both found in north Norfolk. Top quality seeds are selected to be grown here to yield more seed for further planting and ensure quality where ever it’s grown, continuing its journey to the maltster and eventually finding its way into your glass - even here in Naremburn!
