14.01.2022 It is a day to celebrate the Master of the barbecue! In other words, it's Fathers Day! Surprise Dad with this easy addition to whatever he fancies to cook on the barbecue... ... Recipe below; Prepare the vegetables for the skewers. Best vegetables to use for a barbecue: Corn, zucchini, red onions, Flavorite capsicums and Flavorite tomatoes (large truss tomatoes or @cherrybursttomatoes). We have used two zucchinis, two capsicums, one red onion, two corns and one punnet of @cherrybursttomatoes. This will make 6 skewers. Prepare the Garlic Herb Sauce- in a medium bowl whisk together the olive oil, minced garlic, parsley, coriander, rosemary, salt, and pepper. Set aside. Skewer the vegetables by alternating between red onion, zucchini, and the different coloured capsicum and tomatoes. Brush skewers with a light layer of olive oil. Preheat grill to medium-high heat. Once the grill is hot, add skewers and grill for approximately 5-8 minutes per side, or until vegetables are just softening and browning around the edges. 12.01.2022 As our mums have filled our hearts with love, lets spoil them this Sunday with some flavoursome homemade goodness. Check out this quick and easy breakfast in bed recipe for Bruschetta with Ricotta, olives and tomatoes. Ingredients 2 punnets of @cherrybursttomatoes tomatoes or 3 @australiantrusstomatoes sliced 3 oz. black olives, pitted... - 1/3 cup capers 3-4 cloves garlic, peeled 4-6 sprigs thyme 1/3 cup olive oil 1 tbsp brown sugar Freshly ground pepper Sea salt 200gm ricotta 1 lemon 4 large slices of artisan bread bunch basil How to make it 1. Preheat oven to 200F. Half any larger cherry tomatoes or slice large truss tomatoes and add to a bowl. 2. Drain olives and capers in a sieve then add to the bowl. Crush garlic using the flat of a knife. Add to the bowl along with sprigs of thyme, 2 tbsp olive oil, and brown sugar. Thoroughly mix and season generously with salt and pepper. 3. Pour contents of bowl onto a baking sheet or an ovenproof dish and roast for around 20 minutes. 4. In the meantime, zest the lemon. Add zest and the juice of half a lemon into a bowl with the ricotta. Season to taste with salt and pepper. Place the slices of bread alongside on another on a baking sheet and drizzle with remaining 3 tbsp. olive oil. Roast in the middle of the oven for 6-8 minutes or until golden brown. 5. Wash the basil, shake it dry, and remove leaves from stems. Divide ricotta evenly among the bread slices. 01.01.2022 This quick and scrumptious, prawn linguine with delicious @cherrybursttomatoes is the perfect mouth-watering dish to get your weekend started. - Cook the linguine according to packet instructions. - Heat the olive oil in a large pan and add the garlic, shallots and fresh chilly.
