05.01.2022 I made the yummiest Roast Pumpkin soup last night. Was so super easy. Roast Pumpkin soup.... 1 whole pumpkin peeled and chopped into large chunks 2TBS ROASTED GARLIC SMASH olive oil 2 onions chopped 2 potatoes peeled and chopped 2TBS THYME FOR GARLIC spice 1 tsp FIELD MUSHROOM salt 4-6 cups vegetable stock optional sour cream to serve 1. Preheat oven 200c 2. Place pumpkin on a baking tray and drizzle 1tbs oil and toss to coat (I used a tad more than suggested). Bake for 40mins - set aside to cool 3. Heat remaining oil in a large saucepan 3. add onion, potato and TFG spice. Cook, stiring often till vegies are soft and golden. 4. add 4 cups stock and pumpkin to the saucepan. Reduce heat and simmer 15-20mins. 5. Use stick blender to process until smooth. 6. Add SM salt and blend a further 30 seconds. 7. Divide among bowls and optional adding of sour cream. I enjoyed mine with a slice of pumpkin sourdough.. PS - I forgot to take a pic so this one is a random one off goggle.
