25.01.2022 Australian Food News today reported how eating broccoli and Brussels sprouts can assist in preventing cardio vascular disease. They also described these veggies as some of our 'least favourite' which I thought was terrible because they are my MOST favourite and in fact had some streamed broccoli and cashew cream for breakfast this morning. 24.01.2022 Kitchen Classroom 2.0... This week there were quite a few repeat recipes with some the old favorites (nothing wrong with that peeps!) with hummus, peanut butter, pumpkin seed butter, cacao balls, chocolate fudge, muesli slice and pão de queijo (no time for a photo!) whipped up. Lesson: Walnut Crumble I’m not going to tell you this is a vegan parmesan because that makes it sound like a poor cousin when this is a stand-alone scream from the roof tops taste sensation. ... Simply blend in a food processor, 1 cup of walnuts, 1 tablespoon nutritional yeast and a pinch of salt. Optional amp ups include fresh parsley - which we did today - a great big handful of fresh parsley (stems and all) because my wonderful mother-in-law gave me some of her homegrown herb. You can add some chili flakes but we didn't today as Harve was in charge! More often than not, I make double the quantity and store in fridge or freezer for later. This is excellent to sub in where parmesan cheese may be used, for example on pasta, on rice, stirred into omelettes, sprinkled on baked potato, eaten straight out of jar!

16.01.2022 Kitchen Classroom 2.0. Today's experiment was to make Peanut Butter - and I have to say it was a hit. Handwriting and label design needs a little work! Place peanuts (approx 4 cups/400 grams) on a large baking tray and roast on 180 degrees for 10 minutes. Allow to cool. ... Transfer cooled roasted nuts into a blender (I don't have a thermo or anything fancy) and process for about 5 minutes or until mixture reaches consistency you like. You will need to scrape down the sides a couple of times with a spatula. We added a couple of tablespoons of water to thin it out. You can a bit of mild flavoured oil if you like. Stir in chia seeds if you like for some extra plant based omega-3s and crunch. Or you can stir in some cacao nibs for something cheeky. Store in cupboard. Perfect on toast, to make satay sauce or to fill a pitted date. This is a really thick paste so you only need a little for a powerful flavour punch. NOTES: you can use any nuts you like, and you don't need to roast them but I did it so Harve practiced manoeuvring a hot tray out of oven and onto bench without burning himself. Don't say you haven't been warned!

09.01.2022 Kitchen Classroom 2.0 Harve and I got busy with pickling, fermenting and creating some other gut-loving dishes. It was fun slicing and dicing and each of these will be ready at different times. We took advantage of an abundance of home grown broccoli and cauliflower from my mother-in-law for the giardineira.... The labne was a school project from Harvey's wonderful PE teacher. This will be a gift for a friend. The Napa Cabbage Kimchi smells amazing, while the Carrot Kraut and pickled radish looks fabulous and we can't wait to sample these. #kitchenclassroom #kimchi #sauerkraut #fermented #pickled #labne #labnah

07.01.2022 Garlic garlic garlic. After 7 months of growing we harvested 5000 bulbs of garlic... our first step in becoming garlic farmers. Did you know Australia imports approx 85 % of the garlic we buy and the majority of that garlic is grown in places where bacteria and e-Coli is high, farming practices are not the same standard as here and as a result are fumigated with a highly toxic methyl -bromide to kill diseases, colour it white, increase storage time and stop it from sprouting...... leaving next to no nutritional value and a dose of goodness-knows-what. So fabulous to speak to @deedeedunleavy today on @3aw693 about the importance of eating not just garlic but Aussie garlic. 01.01.2022 Kitchen Classroom 2.0 Lesson: Stewed Apple An simple dish which can be turned into a serious competition to see who can create the longest apple peel! (Tip: choose a thin bladed peeler and work slowly.)... Stewed apples are a delicious dessert or afternoon tea; can be topped on porridge; used to create bircher muesli (stirring through oats, nuts & seeds and popped in fridge overnight); or create a layer in parfait. Ten green apples, peeled, cored and chopped into 8th's, 1 cup of water (to just cover the base of a heavy-based saucepan) a sprinkling of allspice, cloves, cinnamon or nutmeg... simmer for 10 minutes (or more for a softer texture.)
