20.01.2022 After 13 years working in media and marketing in the north of Queensland, former Chronicle journalist Georgina Claxton yearned for her home town of Maryborough.... She was homesick for the grand sense of community amid the beautiful heritage buildings. Three-and-a-half years ago she came home, set up the Fresh café in Station Square and has never been happier. She works seven days a week, revels in living in a renovated Queenslander and says she’s living the dream. She and her son Jay start work at 6am seven days a week, bake all the food in the shop (except the gluten-free lines) and soak up the compliments from a steady clientele. She says 70% of her regular customers are older folk: We really look after them. They have become like extended family. Customer service, home recipes that I made when I was a kid, good coffee and competitive prices are part of the popular Fresh mix. Sausage rolls and pies are serious favourites. I love Maryborough, she beams. I have fantastic staff so I finish early and sometimes just stroll around and enjoy the town. People should take more time to soak up the atmosphere and buildings. I took the dogs to Queen’s Park the other day and thought ‘How good is this?’ We have everything here. If you can’t get it in Maryborough you can in Hervey Bay and it stays in the regional economy. If not, Sunshine Coast and Brisbane are easy to reach. Maryborough shouldn’t under-estimate the opportunity to court Hervey Bay customers: I have one Hervey Bay customer who comes up fairly regularly and buys everything in the bain marie. I now get him to call before he comes so I can bake extra. After a disastrous opening day, Georgina was optimistic. I opened my PR business in Cairns at the same time as (the) September 11 (terror attack) and not long after Ansett collapsed. Both events really rocked Cairns but I stayed with it and the business became successful. My first day with Fresh was the day of that huge storm in the morning. I was on acreage then and my house flooded but I still came in and of course we had no customers. I thought ‘I’ve had the worst possible start again. This business should be right too. And it was.
