25.01.2022 At the risk of dumbing it down too far, Diwali is the Indian Christmas- when the whole country shuts down for a week and has a giant party at the onset of winter . Diwali's this Sat.. so its woven its way through this week's menu. Some of it is hard to explain without it sounding really weird (like how does one explain shrikhand!?) and probably sounds alien... so you'll just have to trust us and try 'em all ;) . Highlights: The chai slice, the masala potato pie, a caramalise...d coconut puff, some boozy truffles, a mango-yoghurt danish. And the bakers special is a Curry leaf chutney sour. Curry leaves "gleaned" from the garden of @thepossibilityproject_au . And of course, the staples as always. Just remember that baguettes are Sat and Sun only. Scandi is Fri & Sat. We're open Wednesday to Sunday that week of Christmas. So yes, that means we're open 24th, 25th AND 26th. How do I place orders? Send us a direct message on FB or Instagram. Or email us [email protected] What can I preorder? Bread (you can order any quantity of the sours, scandi and baguettes). Mince pies Pastries: a minimum order of 6 pastries. It can be any mix of 6. But pl dont confuse the elves too much as the same people rolling and baking your pastries from midnight will also be packaging them in the early hours of the morning. How do I pay? On the day, when you come to collect. Cash/card/wash dishes. There'll be plenty. When do you open? Every day at 6:30am. Your order will be ready for collection by 7am Will the coffee machine be running? Hell yeah! Even the elves need coffee.

23.01.2022 .... rapadura palmiers. which we almost burnt as Brandy, a distractingly adorable wandered into the bakery at 2am, frightened by the thunderstorm is our guess. Happened JUST as we were traying up the Brandied-coffee slice!!! (Which Laura read as a sign for stealing him and living in a bread cave happily ever after). Brandy stuck around for the entire bake & eventually broke our at 7:30am when the friendly neighbouring vets picked him up . Don't quite know how we'll do the morning bakes without him now. 22.01.2022 Good day today. The starter's finally warmed to the weather and the bread was good! None of the ovens acted up. Gladys mixed happily without creaky noises. Had a 3am choc-hazelnut cookie for breakfast & some palmier offcuts. A second breakfast of the fruit sour. No one burnt anything (including themselves). Tomorrows sours are feeling PLUMP! We ate an excellent 3rd breakfast of mango birthday cake (made by Zara for V). And then shared a pina colada danish for mid morning snacks. . Pina colada danishes back again tomorrow. 7:30am. Flaky pastry with toasted coconut custard & spiced and boozed caramalised pineapple on top.
21.01.2022 Some exciting cookie action this week: Gingerbread 3.0. Fudgy, molassesy, spicy. Choc-chip n almond ..and palmiers make a comeback Fri-Sat . Bakers spesh is a Bacon, , cracked black pepper. To go with all your cheese boards. Sat only as always and CAN be preordered (as always).... . Apricot n almond galettes cos apricots are so juicy at the moment. Also, plotting an off-menu savoury galette: blue cheese, fig 'n onion. 20.01.2022 Ash & Flours. Will be the name of our first album. . Have a couple of stunning bunches of Australian native flowers at the shop today & tomorrow (sun). They're beyooootiful. Plus they last WAY longer than tulips roses lilies etc (eg: the one on our front counter has been there since pre-Covid. Oh awrite.. I exaggerate slightly but they look stunning for VERY long). Plus there's no mad amount of plastic or packaging involved. Just a freshly picked bunch of in-season flower. A tinned aou with chai-soaked figs, apricots, dates & raisins Baked lime tarts this week! With the most zesty, fragrant local limes (from Jenn's garden round the corner from the shop ). Fri onwards... Chocotorta (Fri onwards): for everyone who missed out last week. An intensely chocolately layer cake. Best with a hot The honey 'n sea salts using the newly acquired massive pot of fresh from @the.wastefree.chef A new danish to start the apple season. Tart green apples in a sweet caramalised pastry (Sat & Sun) The scone: an old favourite.. cumin, coriander, caramalised onion. The pie: n . It's intense. And yes, we've added some cos a lot of you have displayed displeasure at the pie NOT being spicy these last few weeks! Can't wait

18.01.2022 Sunday midday ritual, (a reward for giving the coolroom & ovens a real good scrub) is to indulge in Lyn-grub. They also often end up being early stages of pie-plotting. So this week.. inspired by one of her shtaff meals is a Falafel pie. Lyn-shtyle. Which means, don't expect deep-fried falafels in a pie... cos that would be boring. But it'll be more like biting into a falafel-filled Pita. . So this weeks Really Falafelly PIE: Chickpeas (mushy but not baby food) A smooth mu...lch of toasty lemony tahini Parsely & coriander (stems n all) Pickled chillies, pickled . 17.01.2022 Sticky caramalised coconut. Caramalised with jaggery (deep dark palm sugar) which is a gazillion times nicer than any form of sugar. Its coconutty, molassesy, sticky. Also, cardamom and cinnamon, flaky salt some raisins & a lot of toasty almonds. For a Diwali special this week Been getting HEAPS* of questions on what Diwali specials we're doin. The gist: Something mangoey ... something cardamomy, another thing curry leafy , a pretty special pie and something chai. Keep your peeled for the menu tomorrow. * 'HEAPS' as defined in the trump-onian dictionary i.e. at least 1 (which in this case is Anu's mum )

14.01.2022 Yep, that's coming Sunday! We know many of you have wanted to preorder for Fathers Day.. but truthfully, we're too small a team to manage pastry preorders. And trust me, you want us to stay small or we wouldn't be the same! What we CAN do though is open doors on Sunday a half hour sooner ie at an unearthly hour of 6am . We will definitely have sours, coffee, croissant, pain choc & cinny scrolls at 6am. So if you get in early, you can avoid the queue & get the first lot of... pastries fresh from the oven. Jaybees, caramels, Fathers day specials etc. will be out by 7am. Plotting THREE specials for Fathers Day: Croque Monsieur Jerusalem bagel : small Jerusalem bagel topped with smoky bechamel, ham, cheddar & tarragon Tiramisu danish . Normal ritual is to eat the FIRST pie of the week on Wed night to test if all ! But having been buried under 43 trillion blocks of cinny scrolls, we ended up tastin the LAST pie of the week instead. Rendering the tasting a bit pointless Well... we hope you liked 'em!

Chirstmas cake with your post dinner custard which is post dessert but pre-mince pie and post salmon but not post cheese platter and baguette..... NOW is probably the time to place the order. . Purrfect fer all yer summer picnics, barbecues . Best to preorder if you want 'em as we don't make them everyday. Great as burger buns or dinner rolls. Semi sourdough. .... Co-starring: caramels that went the wrong shade of caramel ie, burnt. Side kick: a loaf of bread from Sunday that got stuck to the back of the oven. All chopped, squelched into a egg-milk-spice mix (the only non-trashy bit). Left to soak & then baked with a layer of brown sugar & glorious but slightly-past-their-prime

08.01.2022 A slightly delirious bunch of bakers this post-Christmas Saturday & Sunday. These espresso glazed croissants were a result of the delirium and some messing about. . As we hurtle into the last week of the year, there'll be a few more mess-about bits on the menu cos we'll be tinkering with existing recipes. But rest assured- the sours and cinny scrolls stay the same! 08.01.2022 Back to bonding over some pie action this week ie, our favourite part of the week as we get treated to some RIVETING Lyn-stories as we make & fill pies for 4 hours. . Roasted potatoes tossed in romesco sauce. That's romesco. NOT romanesco (which is the funky half-, half-cauliflower winter veg which is YUM but probably not-so-yum as a SAUCE). . For the uninitiated, ROMESCO is a sauce of roasted (capsicum + garlic + almonds), sherry vinegar and a bit of bread to thicken it. 06.01.2022 Open our usual hours this week and that includes on New Year's eve & New Year's day. After Sunday, 3rd Jan, we'll be off for 2 weeks of reflection & hibernation (primarily the latter). There will be some big bread bakes all 4 days this week so make sure to fill your fridge, freezer and face. Preordering bread might be a fabulous idea to make sure you don't miss out. . This week's menu is a reflection of our staples & also what you've asked for in Monday's wildly exciting poll.... The highlights: Zara's chocolate filled choux bun topped with hazelnuts (Thurs only) Bakers spesh: the choc-cherry sour (the fruit sour was completely outvoted.. sorry!) Vanilla-brandy slice A Delhi Potato Pasty (peas, pities, coriander, mint and a heap of spices in a wholemeal puff) The JBs: the regulars with the addition of a Persian filling. But I HAVE thought about that chai-creme pat (aka chai-pat) very often these last 48 hours. . Chai custard made of the gloriously spiced @pranachai. 2nd extract. 1st extract is what Maddi brews for you when you ask for a chai.

Broad "schedule" for stuff on the counter tomorrow, ie Sat*** : Miso sours out by 6:30. Plenty! ... scrolls out at 7am. There's 128 of them. And no, there's no "rationing" involved which is to say, if you'd like all 128, you can have 'em! Along with a FREE hug from Laura, the master of socially distanced hugs. There MAY be some chai slices at some point. More likely later in the day than earlier. Cinnamon scrolls: through the day with possible 30min gaps in between bakes.
