20.01.2022 TIRAMISÙ The classic coffee-flavoured Italian dessert. Ingredients 300gr savoiardi biscuits... 3 eggs , yolks and whites separated 100gr sugar 500gr mascarpone 300gr coffee, hot and strong! 2 tbsp Marsala or other liquor of choice (optional) Dark Cocoa powder, for dusting Instructions 1. Beat yolks and sugar in a bowl until it changes from yellow to pale yellow. 2. Add mascarpone and beat until just combined and smooth. 3. In a new clean bowl add egg whites and beat until it's stiff (should be all white foam) 4. Add it to the cream mixture. Gently fold through until just combined. 5. Mix coffee and liquor together. Quickly dip biscuits in and line the bottom of a 8/20cm square baking dish. 6. Spread over half the cream, fist with cocoa powder, then top with another layer of coffee dipped biscuits. 7. Spread with remaining cream and dust with cocoa powder. 8. Ingredients 175 grams broken social tea biscuits ... 150 grams soft butter 120 grams sugar 200 grams good quality melted dark chocolate 2 eggs Instructions 1. In a medium bowl, beat until creamy butter, add sugar and combine. 2. Add eggs, beat together, then add melted chocolate and combine. 3. Fold in broken biscuits. 4. On a large piece of baking paper place mixture and roll into a log shape, wrap with paper and refrigerate overnight. 5. Slice and serve. Enjoy!

06.01.2022 GNOCCHI DI PATATE A traditional type of Italian pasta dish since Roman times. Ingredients 1Kg potatoes... 300 grams flour 00 1 medium egg teaspoon salt Instructions 1. In a large pot boil the potatoes until tender, remove from the pot and let cool enough to handle, then remove the skin and pass through a Potato Ricer. 2. On a flat surface mix together the flour and salt make a well in the middle and add the potatoes and egg, mix together with your fingers to form a soft dough, it should not stick to your fingers. 3. On a lightly floured surface, cut small amounts of dough to form ropes and cut into 3/4 inch (2 cm) pieces, then slide each piece on a fork and squeeze a little (but not too hard). 4. Sprinkle with a little bit of flour and toss, so they dont stick together. 5. Let the gnocchi rest for 20 minutes before cooking. 6. In a large pot of salted boiling water cook the gnocchi, gnocchi are ready when they float to the top. 7. Drain and toss with desired sauce.
