25.01.2022 With painting and renovating my kitchen and now waiting for my new stove/oven. Food choices have not been great for a few weeks. My body has now rebelled big time. Inflammation, brain fog and aches and pains in my joints. Now holidays are over, back to making good lunches for the kids to take to school and then get lazy / loose MOJO and so often don't make the best choice for lunch for hubby and I. That's it. Had enough.... Kids have chicken, cheese and mayo wrapped in lettuce. They had a boiled egg and a few other bits. So made a budda bowl for hubby, home school child and me. Grated cheese, shreaded lettuce, sliced egg, capsicum, cucumber, grated carrot and shredded chicken mixed with mayo and chives. 23.01.2022 Love this. Is progress slower than you would like? I am not sure who originally made this, but if it was you, let me know! Most of us have experience with starv...ation diets, so it is easy to expect instant and dramatic results when we go keto. But going keto is different. On low-fat, calorie controlled diets, we eat less than we need, so a lot of the time, not always, weight will fall off. If we got stranded on a desert island, weight would fall off there too. But that doesn't mean it is good for us. And of course, our bodies go into starvation stress; the thyroid and metabolism have to slow down as a protection mechanism. But it also means, when we stop starving ourselves, the weight tends to come back plus interest. Guess what state most women, in particular, are in when they start keto?! So it can take a while to heal this state of starvation stress. What is the best way to heal it? EAT! But if we are in a state of starvation stress when we start, it is likely that we won't get instantaneous results. And, we could even gain. But that doesn't mean it isn't working. To move forward, we must heal the body, and the only way to do that is feed it what it needs. I watch so many women quit early on in the game, saying, "It just doesn't work for everyone" or "It doesn't work for me". But sadly, in most cases, they simply didn't have the information and guidance they needed. When I first started keto, I also gained weight. Was I worried? Yes! Did I second guess? Yes! But I had done so much reading about it that I decided to stick with it. Imagine if I had quit in the early days? I would have missed out on almost 20 years of good health and NEVER worrying about my weight!! And I would still be stuck in a cycle of endless dieting!! 19.01.2022 Dinner doesn't have to be elaborate. Lazy dinner for me tonight. Hubby and the kids made chili today while I was at work (which I can't eat). ... So when I got home. Chicken thighs, Brussels sprouts, broccoli and capsicum, drizzled oil and a sprinkle of salt. Into the airfryer 25 min @ 180'. I love the veg being crunchy, you could put the chicken in and easily add veg in about 10min later for less cooked. Done and yum. Not pretty but yum.



19.01.2022 Which contains more fat? A boiled egg or a fried slice of bacon? The answer might surprise you.... Eggs were demonised in the 70s and 80s for having too much sa...turated fat and cholesterol. But after years of evidence showing that eggs were NOT dangerous, dietary guidelines had to be adjusted. Now, heart healthy guidelines say that eggs are very "nutritious" and "an essential part of any healthy eating plan" and that: "One egg has about 5 grams of fat but most of this is the good unsaturated fat that you need to be healthy. An egg contains only about 1.5 grams of saturated fat and no trans fat at all." The fat in a large egg has 1.6 g of saturated fat, 2 g of monounsaturated fat, 0.7 g of polyunsaturated fat and no trans fat. What about bacon? Well, that is an obvious no, no! Because the fats in bacon are outrageous. After all, one slice of bacon contains 1.1 g saturated fat, 1.5 g monounsaturated fat, 0.4 g polyunsaturated fat, and no trans fats. Oh, wait, what?! The fat in egg is 32% saturated, 40% monounsaturated, and 14% polyunsaturated. The fat in bacon is 32% saturated, 41% monounsaturated, and 11% polyunsaturated. It is pretty much exactly the same as the egg! In fact, once slice of fried bacon has less fat than a boiled egg! How could one be good and the other be bad? Or could it be that the saturated fat in either was never was an issue anyway? #bringbackthefat PS. Always look for quality free range eggs and bacon

16.01.2022 Late last year I read somehwere about twice cooked biscuits. Made them and yum, but lost the recipe. Well last night I made fathead dough for pizza bases and then mixed in some baking powder. https://www.dietdoctor.com/recipes/fat-head-pizza... So make the basic dough but add 1 tsp 2 servings. Roll into a basic log shape and cook on 180' for about 20 min. Let cool totally. Slice thin and put single layer on a baking tray and rebake 120' until crunchy. 30min or mire depending on slice thickness.

16.01.2022 We have no stove or oven for another week at home. So tonight's dinner was poached chicken lettuce wraps. INSTANT POT Add a whole chicken and just cover with water. Put on High Manual pressure for 2min.... Let it naturally depressure. By the time it's ready to open the chicken is cooked. Juicy and yum. I shredded by hand, served on lettuce leaves, with cheese, tomato and chilli and blue cheese sauce. Mmmmmmm

15.01.2022 My fav pizza. Cook the fathead 8 to 10 min, flip and cook another 5 to 100 min. So nice and brown both sides. Spread with cream cheese, to with smoked salmon and spring onion. I usually then add zucchini ribbons. Tonight the artichoke hearts (sliced) and baby spinach..

09.01.2022 Lower carb chowmin. My kids love this. Browned mince. Add 1 tb ish curry powder and tumeric... Salt, pepper. Add choped veg (not cabbage yet. This one inc carrot, leek, corn, beans peas, celeey, capsicum, mushrooms etc what ever veg is in the fridge.) About 300 - 400ml chicken broth. Give it a good stir. Then add shredded cabbage. Cook down until all soft. Stir in a blob of butter. They came back for 2nds and 3rds.

06.01.2022 Just as what we need to eat changes so does a baby's. A mother's body (for most babies, and for most mums. Like everything ine size does NOT fit all) does an awesome job supplying everything your baby needs and at the right time. The other one i remember from my expresaing days and honestly freaking out a little was the 'creaminess' changing as well. After some research found that milk produced on a hot day will look watered down where a cold day everning was thicker.

01.01.2022 WHAT ARE YOU UP TO THIS FINE SUNDAY? , Week 4 home schooling my youngest, honestly this week has been though, he has been well hard work. This morning while dad had the other two out we have been very productive and finished up what he was ment to do. Finishing with an enjoyable art project and now watching YouTube videos looking at how some people have 24+ hours of daylight or night due to the earth axis.

01.01.2022 Today is Launceston we woke to a pretty awesome site. For the first time in around 100 years snow! So today the kids had the day off and we had fun as a family, spoke (well snowball fights lol) to neighbours and played in the park with a whole bunch of loacl kids. Its been a hell of a year, ones of extremes.... Take time out to stop an enjoy. Take every chance you get to smile.
