23.01.2022 Healthy Mini Chocolate Crackles 1/2 a cup of raw cocoa powder 1 1/2 cups of shredded coconut 3 cups of organic rice puffs (from the health food section in your local food store)... 1 cup of coconut sugar (from the health food store) 1 1/2 cups of coconut oil Approx 3 dozen mini patty pans Place all the dry ingredients in a mixing bowl and combine well. Melt coconut oil in the microwave for 1 minute or until completely melted. Add the melted coconut oil to the dry ingredients and mix well. Place a dessert spoon of mixture in each patty pan. Makes around 3 dozen providing you don’t eat any of the mixture along the way. (Coz it’s soooo good!) Place chocolate crackles on a tray in the fridge to set. Then store in airtight container in the fridge.

17.01.2022 Asian style wraps Sesame oil for frying. 500 grams of lean beef or turkey mince 1 large brown onion, chopped ... 1 dessert spoon of Mc Cormick Chinese 5 spice 2 tablespoons of oyster sauce 1 table spoon of soy sauce 1 clove of garlic, crushed. 2 cups of frozen peas, corn and carrots. 1 teaspoon of crushed ginger Whole grain wrap bread and/or large washed lettuce leaves. Brown mince in a deep frypan over medium to high heat, then add onion, garlic, ginger, chinese 5 spice and continue to fry for another 2 minutes or until mince is cooked through. Add peas, corn, carrots, soy sauce and oyster sauce. Continue to cook until vegetables are cooked through. Serve in wrap bread or lettuce leaves.

13.01.2022 Yummy processed sugar free and gluten free coconut cookies...#yummygoodness Ingredients 2 1/2 cups of desiccated coconut 1/2 a cup of gluten free self raising flour... 1/4 of a cup of brown rice malt syrup 1/4 of a cup of monk fruit sweetener (from coles) or your preferred alternative natural sweetener. 1/2 a cup of nuttelex 1/4 teaspoon of salt Method Preheat oven to 180 deg c Prepare a baking tray with baking paper Mix all dry ingredients together Add rice malt syrup and nuttelex and mix well with your hands until you everything is mixed in well. Pace a dessert spoon full of cookie dough in your hands and roll into balls and flatten into a cookie shape. place on the prepared baking tray and bake for 30 minutes or until lightly golden brown.

13.01.2022 Dark chocolate oat and cranberry slice. 200 grams of 70% or higher dark chocolate. 2 cups of rolled oats. 1 cup of shredded coconut.... 1/2 a cup of sunflower seeds. 1 cup of unsweetened cranberries. Melt chocolate in a microwave proof bowl in the microwave for 90 sec, alternatively you can place it in a glass bowl over a pot of boiled water and stir until just melted. Add all the dry ingredients and combine well. Place mixture onto a small tray lined with baking paper and press down firmly and evenly. Place in the fridge until set. Cut into snack size or bite size pieces and store in an airtight container in the fridge. Eat in moderation. Made for sharing

07.01.2022 Poached eggs with tomato, basil and red onion salad. 4-6 free range eggs 1 Punnet of cherry tomato’s, quartered. 1/2 a Spanish onion, finely chopped. ... 1/2 a cup of finely chopped basil. 3 tablespoons of olive oil. 1 avocado, peeled and roughly sliced Poach eggs in a large frypan on low heat. Mix the tomato, basil, red onion and olive oil in a bowl. Once eggs are cooked to your liking place on a serving plate and top with tomato, basil and red onion salad. Then place sliced avo on top. Serve immediately.

Chilli flakes to your tast 2 eggs Olive oil or coconut oil for frying Lightly fry kale, cherry tomatoes, Chinese five spice and chilli flakes until kale is tender. Then place it on a serving plate Fry or poach eggs to your liking and place on top of kale stir fry. Enjoy!

05.01.2022 Chocolate brownie pudding for 2 to 4 45 grams of almond flour. 20 grams of raw cocoa .... 2 dessert spoons of sweetener of your choice. 1 teaspoon of baking powder. 8 pecans. 2 tablespoons of melted coconut oil. 1 egg. 3 tablespoons of water. 1 teaspoon of vanilla extract. 1 ripe banana. Mix dry ingredients well. Place all the wet ingredients in a NutriBullet or similar and blitz. Combine wet and dry ingredients well. Place in 2 to 4 ramekins and bake in oven on 160 for 15 minutes depending on size of ramekin. If you're only making 2 then you will need to bake for longer. Serve with chilled coconut cream or coconut yoghurt... gorgeous food made with loveeee!
