19.01.2022 I'd like to share a great Spring/Summer recipe that I came across recently and absolutely love! It's a Vietnamese Style Grilled Stuffed Fish which has so many beautiful Asian flavours and is so quick and easy. You will need: Fish of choice (firm) eg Baby Snapper cleaned etc Marinade/Stuffing (use as much or as little of each ingredient as suits): At least 2 stalks of Lemongrass Diced (white part only) Chilli Diced... Garlic Diced Spring Onions sliced Soy Sauce Ginger Diced Salt the fish and put a couple of shallow cuts in the meatiest parts of the fish for even cooking. Stuff the fish with the marinade/stuffing and wrap up the fish with the leftover lemongrass stalks (the green part - if you don't have long stalks then omit this part) Grill for 10mins each side with some olive oil. This recipe can also easily be adapted to fillets of fish (with the 'stuffing' laid over the top after marinating the fillets and then grilling.
