23.01.2022 After pastry, Aidan’s second love is fashion, hence the name ‘Chic de Partie’, to combine both his love of being a chef and always dressing fabulously. Chic de Partie was started in Aidan’s study-turned-kitchen as soon as it dawned on him that full time employment may not be an option for him in the near future. On a temporary sponsored visa, Aidan was barred from taking a job other than from his sponsor (which at the time was Dinner by Heston). But didn’t Heston’s close dow...n? Yep, welcome to Australian immigration. Ineligible for any government financial support, Aidan was at a dead-end and could only score another job if another restaurant was willing to transfer his visa sponsor. 15.01.2022 Aidan was a Senior Chef de Partie in some of the top Michelin starred restaurants of the world. Specialising in Pastry, Aidan graced the kitchens of Gidleigh Park, a two Michelin starred country restaurant in the charming UK town of Devon and of course the iconic Dinner by Heston both in London and Melbourne. We all know that Melbourne’s Dinner by Heston closed down shop in February 2020, just prior to the first Melbourne lockdown, leaving the team of talented chefs off to f...end for themselves in the wake of a global pandemic. With no pastry chef jobs in sight as Melbourne’s hospitality scene turned off its lights, Aidan reinvented himself from Chef de Partie to Chic de Partie. 10.01.2022 Cold drip coffee takes about 10 hours to make; essentially replacing heat with time to extract all that flavourful caffeine goodness from the beans. Anita usually leaves her cold drip brewing overnight and came up with the name ‘Dark City’ for her new hustle as it’s the coffee that’s made whilst the city is asleep. It didn’t take long for Anita’s home enterprise to become a coffee-making ‘foundry’ (foundries are what they call metal factories) as Anita and Gavin set out to ...construct their own commercial-grade cold drip brewing system that aims to maximise flavour extraction and efficiency. Since the launch, Anita and Gavin have expanded their product range to decaf cold drip, perfect for those who are caffeine sensitive, and Cascara Tea, a tea brew made from the dried husk of the coffee cherry, the fruit that coffee beans grow in. The cold drip coffee will keep for a few months unopened in the fridge and two weeks once opened. Next in the pipeline, Anita is looking for ways to reuse the leftover coffee beans from her cold drip brewing process. We can’t wait to see what she comes up with. 07.01.2022 Aidan was at his wit’s end, but luckily he lives in a building full of supportive humans. It only took one message in his building’s Whatsapp group to give Chic de Partie the kick it needed to launch. Orders started coming in, mainly for celebration cakes, but Aidan made everything from tarts to macarons and his best selling Portuguese tarts. One of Aidan’s saving grace was a lady in his building who is a personal assistant to a Melbourne millionaire. Said millionaire happen...ed to be in the market for a private chef and quickly became Aidan’s regular customer. It hasn’t been easy but I’m making it work, Aidan says. With Aidan’s hustle now gaining more traction by the day, Aidan is loving his new lifestyle as Chic de Partie perhaps much more than his Chef de Partie days.
