25.01.2022 DAIRY KEFIR SCOBY ========= A Symbiotic Community of Bacteria and Yeasts fashioned by the forces of nature, she cannot be man made. Also referred to as a mother, hence ‘she’. When cared for regularly, Kefir grains will produce the most delightful lightly sour, effervescent, probiotic milk.... The possibilities drink lightly effervescent cultured milk, make yoghurt, strain this yoghurt and use the whey, culture cream for creme fraiche, make cultured butter with that cream and get buttermilk as a byproduct to bake with, and then, if you’d like, you could foster specific cultures within kefir, to make cheese. Ask someone caring for a few grains, anyone growing them will be delighted to share. If you are looking to buy, I sell these and a range of other SCOBY,each comes with a postcard of instructions. 22.01.2022 Yesterday’s IKU favourites class left me with some high quality leftovers, a bonus of being, overly ambitious or some may say generous. I’m thinking @olssonssalt Eyre peninsula flake salt is going to complement the sour in this long slow ferment of @wholegrain_milling organic stoneground flours. It will also balance out the generous slathering of ghee the tin got too. 18.01.2022 These hot little chilies have spent the last few months on the shelf under honey. The moisture in them is enough to cause fermentation the result gives you Chilli honey and honey chilies and I packed them under the honey with mandarin skin so that’s in there too. I’m going to a picnic with a Chilli lover, there will be duck, so I’m making a Kim chi mayo with lime and one of these. I’m thinking that should be good. We’ll see. 11.01.2022 Remember when ? I just found this whilst deciding what dishes to teach on Sunday. This is circa 1987 I think, looking into the garden at the only Iku there was back then. Haydon is seen here preparing the bento boxes for lunch sales. I’ve always loved this shot and the freedom to do it represents. 07.01.2022 Wild kefir contains so much goodness and a bounty of useful beasties. Here you see a useful and familiar mold associated with soft cheeses, geotrichum candidum at work. It is busy protecting the kefir culture after my neglect, the jar has been lingering longer, due to my current workload. It happens and good to know it’s not unrecoverable when it looks like this. Indeed kefir can be used as the culture in several cheeses and also for yoghurt.
