24.01.2022 #lockdown Day 5. Thanks be we have had beautiful weather here in #auckland so its easy to enjoy walks before it gets rainy and cool. My sourdough starter is looking great but a couple of days away. I made a really simple bread which turned out awesome. I always think of my grandmother when I use this bread board- it was her mothers, so my great granny. 24.01.2022 #lockdown Day 22. All is going well and there is hope we may drop back to level 3, which will be great to get the economy moving again. Never thought I would say it but I hope we stay in lockdown until we have zero cases. Anyhoo... today I made these seed crackers. Super simple and healthy as we have eaten waaay too much over this time. So basically this is a bunch of seeds and water spread out then baked! Oh I did make a mushroom risotto as well but the photo looked terrible! Hope you are all doing well as we head into the weekend #stayhome #staysafe and above all else #bekind to each other and to yourself.

20.01.2022 #lockdown Day 19 . Well we are almost out of fresh fruit and veg and thankfully have found a local supplier who delivers! I vowed to buy local and fresh from small businesses so am excited to get my first delivery from Farmer Joe tomorrow today I made a south western style chilli with @traderjoes soy chorizo, some kick ass smoked chipotle chilles, corn, black beans and red pepper. Fingers crossed we only have 9 more days of alert level 4. Then what?.. how does getting back... to normal look to you? For me personally my life has been turned upside down career wise, but thats ok.. Im getting used to the idea of being grounded now. I look forward to finally being able to see friends and family. 20.01.2022 #lockdown Day 11. I have all day to do this- my photos should be better than this! Anyways I was in a hurry to eat this! Been gardening all day making the most of the beautiful weather. So tonight is easy burgers and Kumera chips. The burgers are from @altmeatco and were yum. Even fell asleep in the sun this avo! I saw fan tails in the trees today, I was away from Nz for a number of years and really missed the song of the birds, amplified by no cars in the road. 19.01.2022 #Lockdown is over, well for the most part, and slowly we are coming out of our homes... I went to the mall yesterday and hated being close to people, so that will take a bit of getting used to again, until we have no virus I guess. And so my diary comes to an end. Todays bake was a full rye artisan style sourdough, very high hydration loaf so more difficult to make. So Im happy that Ive learnt a new skill, which has been a lesson in patience. Ive doubled my typing speed and am nearly half way through my running challenge. Now to feel comfortable in work clothes again! #love and #peace

19.01.2022 Day 2 of extended #lockdown who am I kidding... we still have another three weeks ahead of us, but by now I Hope most have eased in and surrendered to it...I spent the ENTIRE day yesterday devoted to my #sourdough literally watching the process like a new mother.. and ended up finally baking at 6.30 pm last night. I still dont have it sorted. I initially discarded this as learning a new skill how hard can this be... right? Well I was wrong, at the end of this when I have finally cracked it I will be proud of the month I took to learn this! Bit tonight I made whole roast cauliflower- a spiced turmeric , coconut yogurt sauce, easy and delicious. Whats been your new skill you have acquired? 18.01.2022 #lockdown day...can’t remember . Today I had a craving for pineapple curry. My son Guy and I learnt how to make this at @lazatcooking in Malaysia. It is called Kari Nenas. A simple but delicious blend of a few spices, and coconut cream with tamarind being the ingredient that really turns this into something special. Peel and cut into slices a large pineapple... then Make a paste of: 1 red onion... 1 fresh red chillie 1 tsp turmeric 2 tsp ground coriander Into a large pan put 4 Tsp oil, heat up and add paste, stirring till it separates. Then add: 1 can of coconut cream 2 star anise 1 Tsp tamarind paste Add the sliced pineapple and simmer for about 30 mins in medium heat, sauce will thicken up. At end of cooking add 1 Tsp brown sugar and 1 tsp salt. I served it with brown rice and roti... just so juicy and delicious. So news today is that we are moving to a slightly lower alert level, I am hoping to be able to see my family but as some of them are slightly vulnerable this may not be the case just yet. at least our economy may start to splutter back into some life. 15.01.2022 #lockdown Day 15. Missed a couple of days , not that I didnt eat of course, more like I forgot. Days dont seem to have names anymore... I have been wanting to make Dal for a while so today was the day. I simply love Dal Tadka which is made with yellow split peas/ lentils. Had to sub a few things as I didnt have quite the correct ingredients but it turned out lovely! I used this recipe as a base. https://www.vegrecipesofindia.com/restaurant-style-dal-ta/ what I found int...eresting is that the usual order is to sweat/ fry onions and spices at the beginning, but this calls for it to all be added then cooked and then right at the end some tempered spices added . There is such a layer of flavours in Indian cooking, I just love it. I didnt make the paranthas that went with it but will tackle those another day. Cant get flour so my sourdough mother is on hold. Busy looking at how to make Irish porridge bread or other things with oat flour which I have, well not flour but I have oats and a thermomix so that works. What are you cooking today. We are all hopeful here in NZ that we have flattened the curve . Two more weeks to go. my lovely Neighbour gave me a heap of seeds last night so will be planting those tomorrow, I have spent much longer preparing the patch this season, ie I actually dug it over... Im a newbie to this... geez , sometimes feels like we have stepped back in time, back to a simpler way of life. 14.01.2022 #lockdown Day 2. So Ive been prepping for the coming days/weeks... (lets not add the next word in this series here) yesterday I started making a sourdough starter for bread which takes five days, Im taking series pictures so will update that later. I also made some sauerkraut... lets hope that is more successful than last time and also started some coconut yogurt. So what does that have to do with this picture? Well most of us are used to our daily #coffee and sadly I d...ont have a fancy machine at home so I looked up how to make this!!! Its called #dalgonacoffee or #beatencoffee and it is ridiculously simple to make. 2T instant coffee ( I used @mocconacoffee ) 2T sugar and 2T boiling water wished together... thats it!!! It made a lot , I used about 1 large tablespoon of this whipped delight over warmed almond milk and there you have it! Super easy and cheap! Of course I want to give my money to our cafes when we all get back up and running but in the meantime its all about staying safe and being kind. 14.01.2022 #lockdown Day 6. This seems a pretty uneventful picture I know but Im excited... I started the sauerkraut a few days ago and tested it only to reel back from how salty I had made it, so with a few adjustments and adding of more cabbage I hope I have it right this time. I implore you to check the doyens of this art @culturedfoodlife and read their recipes. I only wish I had followed theirs first time round, but pretty sure the advice I found will get me through this. The jar ...in the middle is coconut yogurt. This is ridiculously easy to make... 1 can coconut cream and two probiotic capsules. Make sure you if you want this to be diary and cruelty free buy vegan ones and also the ones that dont have prebitocs with them. So I tried a few different brands of coconut cream, the ones that have a thickener such as tapioca or guar gum seem to work the quickest. Open up the capsules and mix in gently with a wooden NOT steel spoon, cover with a cloth, I just used kitchen towel and put in a warm place , anywhere between 24-48 hours... check on it and voila you will have nice thick creamy yogurt. Keeps in fridge for a while. I should say a week but I accidentally left a jar for over two weeks and still tasted fine! I love this stuff, use it with breakfast or on curries , so versatile. Tomorrow is sourdough bread day, and I will be using Donnas recipe for that one. #staysafe everyone and #bekind . Lets all do our part and #stayhome . #peace and #love See more

13.01.2022 #lockdown day 17. This has to end soon... I literally just ate pavlova for lunch- seriously! This pav is a little different from the norm , its made with #aquafaba or the juice from a tin of chickpeas... yes really this is not wizardry but science. Google it.. I then topped with with whipped coconut cream and frozen berries as we have run out of pav topping fruit and I really dont want to go to the market until this is over. I went for a long walk in the beach today but may... need to go back or at least not eat until tomorrow now thank goodness Its not just me in the bubble or this would not be ending well at all! Guy is a PT so is on my case which balances this out. We sadly had our nations second death today and numbers of new infections went up, so the relief we collectively felt yesterday feels somewhat dissipated today... we all go through so many emotions over this situation...Whats happened in your #bubble today? 10.01.2022 #anzacday2020 #lockdown day doesnt matter anymore...I think I may be on my way to finally getting this #sourdough thing right. Finally a recipe that seems to work and doesnt call for making two loaves at a time. Thank you @thebrightsidegirl for your amazing overnight sourdough recipe found at @culturedfoodlife . Before trying this my last attempt literally had me spend all day watching, kneading, proving. This one is simpler and is best result so far. I will try and get to make some more interesting and complex ones but for now this is a #win to finally get a result Im happy with. And just think, baking bread like this was the norm over 100 years ago when our sons, fathers , brothers, lovers were at war. #lestweforget

09.01.2022 #lockdown Day 8 today is Indian night. I want to say feast but there is only two of us in the #bubble so waste is not an option. Tonight may I present to you ... Palak Tofu, Daal Makhani and the other stuff.. rice , papas . So who doesnt love Palak Paneer- so easy to switch it for Tofu and the Daal... yeah ok I didnt have the black lentils so I swapped them out and used coconut yogurt instead of cream. Eating #dairyfree has been a question some friends have asked over the ...last week.. its easy, just be creative, and if not ask.. pm me or call me. If I can help, awesome. 08.01.2022 #lockdown day whatever... lost count. This is my third attempt at sourdough , and may I tell you I will never complain at spending $7 or more on bread again. Has anyone actually tried to do this? Im not so sure its really that scientific, but rather a feeling... like when Im cooking a sauce and I can taste it needs something or feel how it is coming together, so it is when you have your hands on the dough. This is something new to me... my chef training was reasonably basi...c with regard to baking, but enough to know how to work with ingredients. Sourdough is an entire new game... has anyone tried this? I mean from scratch.. not a packet? Remarkable... I am looking forward to the next batch now, although flour is limited. 07.01.2022 #lockdown Day 7 this is my all time favorite soup recipe although it looks more like a stew today. My friend @nicky_pullen_beachgal made it for us one day when we were mega producing smoothies for an event. It is healthy hearty and vegan. I am lucky enough to have a #thermomix so it is super easy one pot. Saut a onion and a couple of cloves of garlic till translucent, then add some diced pumpkin or sweet potato... about 2 cups, a cup of quinoa, about 4 cups of stock and a ta...blespoon of miso, oh and a big handful of shiitake mushrooms (dried) then cook it all up till its all soft and the pumpkin is kind of disintegrating so that thickens it also, then just before serving stir in some chopped kale. Goes down a treat in our house. The cool bowl its in is a Thermo bowl from thermomix so it stays hot for a few hours too . Checked on the sauerkraut today and its almost good to go. Fed the sourdough which Ill try and bake tomorrow. 07.01.2022 Wow this pic is raw!!! #lockdown Day 7.. this pic says it all!!! Resorting to #comfortfood be like #hellyeah . How are we all doing out there???? Incredible time to reflect, I fact its forced upon us... so tonight I made some wicked gravy with added caramalised onions, then I pan fried the BEST vegan sausages ever , thank you @traderjoes ... not sure when I will be able to get back there but , yeah they are the best of many , many I have tried!, so yeah I just boiled some... spuds, made the gravy and peas..I guess about 5 km walk should neutralize this? How is your #bubble doing? 05.01.2022 #lockdown Day 18. Today is Easter Sunday so it felt like a lazy cooked brunch was in order. I have been trying and trying to find the right balance of Flavours for tofu scramble and I finally found it!! Made up a mix of 1/2 Cup nutritional yeast, 4t Nasi Kemak ( black salt), 3 t onion powder, 1 t garlic powder and 1 t turmeric. Shake it all together and use about 2 Tablespoons per block of tofu. I made a very simple one today as in the past Ive added heaps of ingredients and... wanted to spit it out! I was really happy with the flavour of this attempt. So I would add caramelized onions , red pepper and flat leaf parsley to this. I made mushrooms with fresh thyme and vegan sausages and bacon-!yum. Glad I did a long walk beforehand. So you may be wondering about black salt.... well its actually pink but its a special one available easily from Indian groceries and has a sulphuric smell which adds the eggy flavour- amazing stuff! 04.01.2022 #lockdown Day 10. A friend posted today that she wasnt sure which meeting to go to first.. AA or weight watchers maybe weight watchers for me so todays meal consisted of a good helping of sauerkraut which is ready and just so yum. We ran out of corn chips so I made these ones with the hundreds of corn tortillas I have in the freezer. Realized they dont freeze well to use as intended tortilla but makes great chips! I ventured out to the market today and felt like crying seeing everyone in masks waiting to go into the market.our dystopian normal is a bit scary huh. Glad to see we are taking it seriously. 02.01.2022 #lockdown Day 4 in New Zealand. My choice to journal these 28 days through cooking has given me time to experiment, to tinker and get creative. So far I havent watched more than one episode on Netflix... Im sure that will change. Yoga everyday and a long walk listening to podcasts. For me its about surrender... dont fight this or it will be hard. Make the most of this time. My sourdough is on day four and looking hopeful, the sauerkraut was waaay to salty and thanks to @c...ulturedfoodlife and @thebrightsidegirl I have slowed down and read what I am supposed to do!! Lets look at those experiments in a few days. Lebanese food is one of my favorite cuisines and I strive to get it right. This hummus is nearly there, but not a patch on the creamy deliciousness I had in #lebanon . I used canned chickpeas and rebooked them with a bit of baking soda... makes it light and creamy. I still could have whipped it more though, but tasted amazing. The felafels didnt even get time to be photographed- all gone! I learnt how to make felafel from a lovely Lebanese lady- you dont cook the chickpeas... they are soaked for up to three days, changing the water each day, and then ground up- no cooking... the amount of failures I have had with these before now has had me resort to buying them. Not any more! So thank you Jacinda for making us #stayhome to #staysafe . 01.01.2022 #lockdown Day 16. Looks like we maybe turning a corner here in New Zealand, our infection rates are dropping and we are optimistic about actually eradicating this evil #covid19 . So until we beat it, we are in our bubbles. I had a great day today, planted my new garden with thanks to my neighbor for giving me seeds... managed to bake a slab of brownie and a pav... if they are still around tomorrow Ill take a pic. Wasnt supposed to be having carbs tonight but Puttanesca sau...ce is my all time favorite... I make it without the anchovies but the Flavours is epic. Made a large batch of passata so easy to make other dishes from this. I cant believe I have managed to resist watching netflix all day as Im a sucker for the protracted Mexican series! Atm Im hooked on Ozark. Its gotten colder over the last couple of days, nice chance to cuddle up and chill. HEY well done to all of you ... #stayhome and #staysafe .
