25.01.2022 Just finished a very interesting short course with the University of Leeds, "Causes of human disease: Nutrition and environment", where they talked about the 5 cornerstones of nutrition. These cornerstones are fundamental aspects in regards to nutrition and health, and relativity easy to apply.
23.01.2022 Holiday season = Silly season- This time of the year there is an abundant of food, sweets and drinks. We quite often eat, and drink much more than we would throughout the year. So, here are some little advices to take onboard: IF you are concerned about your weight, eat smaller portions and plate on smaller plates DO like the Japanese, eat only till you are 80 percent full EAT like people around the Mediterranean, plenty of fresh fruit, vegetables and treats in smaller ...amounts and not every day INCREASE your exercise, now you got the time.Try to aim for at least 30 minutes of moderate activity per day RELAX- If your cortisol levels are up because your body has been on fight and flight mode for a long time, it can become resistant to insulin. High cortisol levels mean that you may get an increase in appetite and cravings for fat and sugary foods DON’T punish yourself because you have enjoyed too many chocolates and wine, after all its holiday time! 22.01.2022 Cooking classes with children in ~Nambucca Valley OOSH and vacation care~. We have just finished five sessions in a cooking class program. The main aim was to teach basic cooking skills and healthy eating. We chopped, measured, stirred and cooked while we talked about how each food would affect our bodies. Now the kids have a great little recipe collection to take home and try out. Thanks for having me!

21.01.2022 Today I was invited to be with the kids at Lifetime Connect's and OOSH Nambucca Valley vacation care. We had so much fun, preparing healthy snacks and we did a quiz that team Cucumbers won . On the menu we had spiced roasted chickpeas, nori chips with garlic AND a banana and cinnamon smoothie. Some children were a bit skeptical about the food, BUT everyone tried it and many went for seconds and thirds! 18.01.2022 Always had a love for chocolate coated marzipan. Today I enjoy the natural sweetness of dates with a small handful of almonds and a little piece of chocolate (70% or over). This little treat is packed with nutrients, such as potassium, magnesium, antioxidants, vitamins (E, B6, riboflavin) and dietary fibre to name a few. The treat is low GI and may help in blood sugar control, lowering blood pressure and increase HDL (good cholesterol) etc. If you don't like marzipan, just blend everything together and make bliss balls
