22.01.2022 Theres nothing more disappointing than a piece of carrot cake with an inappropriate frosting-to-cake ratio. You know what we mean? You need the tangy, creaminess of some good cream cheese frosting to counterbalance the richness and sweetness of the cake. In our opinion, its definitely possible to have too little frosting on carrot cake, but almost impossible to have too much.... Luckily, this example from Ootong & Lincoln got it just right! Were also fans of sultanas in the mix, so they scored some extra marks there as well. All said and done, the perfect accompaniment to a mid-morning caffeine hit.

Theres something comforting about starting the week knowing that you have a whole load of delicious, nutritious food in the fridge waiting for you. Thats why I often like to whip up a large meal on a Sunday afternoon, and this veggie lasagna ticks all the boxes of being easy, cheap and very tasty.... Its also very freezer friendly, so it looks like Casa Del Food Loose is set for work lunches/easy dinners for a while now! #winning #ifyoudontlikelasagnatheressomethingwrongwithyou
22.01.2022 We're having a cookie bake off competition at work today, so I whipped up a batch of my go-to @donna.hay easy chocolate chip cookies. The trick is to cook them on the day that you want to eat them, and to bake them so that the edges are crispy and chewy while the middle is still soft. A good cookie as much about texture as it is about flavour... Speaking of flavour, I prefer a dark chocolate chip for some extra richness and a touch of bitterness to balance out all the sugar. Fingers crossed my simple-but-delicious effort takes home the win!

21.01.2022 Fancy meals and living the high life when you're travelling is great, but sometimes the best experiences involve spontaneity and life's simple pleasures. When we were in Granada, Spain a couple of years ago, we walked up the hill through the Albaicín (the historic Arab quarter) to watch the sun set over the Alhambra. We'd spotted a position with a great view while exploring the area the day before and resolved to check it out.... Before setting off we grabbed a couple of small bottles of cava, a baguette and some goat's cheese for a makeshift picnic. Everything about it was great, from the fascinating buildings, architecture and laneways on the way up to the stunning scenery and our simple-but-delicious picnic spread enjoyed while sat on a stone ledge. If you ever head to Spain, we thoroughly recommend checking out Granada. It has a fantastic blend of history, atmosphere, great food and fantastic tapas bars.
21.01.2022 A couple of weeks ago we hit up @madalenas.bar for our first post-covid meal out with friends. After so long at home it definitely felt a little strange to be dining and drink at a restaurant again, but it was fantastic to spend some time sharing good food and good drinks with great people. As is always the case with Madelana's, everything was totally on point and delicious.... Fingers crossed that things continue to go well, that we're all able to enjoy going out again and that our poor hospitality scene is able to recover quickly! @ Madalenas bar
20.01.2022 More cooking adventures from the social distant chef: veggie cottage pie. This fab @jamieoliver recipe is a great comfort food dish perfect for the cooler weather. It's big on flavour and rustic charm while also being pretty healthy and super nutritious. Root veggies and lentils are used instead of meat in the filling, and who doesn't love a big layer of mashed potatoes?... I tweaked the recipe by subbing in parsnips and white sweet potato for celeriac, adding some seeded mustard to the mash and topping it all with a some grated romano before popping it in the oven. If you're trying to convince people that you don't need meat to make a meal hearty and delicious, this is the dish for you!

19.01.2022 It might not be the sexiest-looking meal around, but a big bowl of homemade minestrone doused in grated parmesan and chilli flakes is oh so good for the soul. Bonus points if you have some home baked sourdough toast on hand for dippin' purposes.
19.01.2022 What do you do when your mum calls in desperation and needs you to go to @therejectshop to buy a huge-ass box of @biozetattack laundry powder that's on special? (If she had to choose between her preferred laundry powder brand and her children, I'm not sure who'd come out on top...). Well, you make the most of the situation and stop into @dolce__and__salato for a coffee and a snack.... While the coffee was pretty average, the delicious sfogliatelle totally made the trip worthwhile. If you've never had one before, the shell-shaped Italian sweet treat has lots of layers of crispy pastry wrapped around a vanilla custard filling. The perfect morning or afternoon tea bite! Also, mum now has enough of her precious Biozet to last until the end of time, so everyone's a winner...

17.01.2022 More cooking adventures from the socially distant chef: jumping on the homemade sourdough band wagon. That's right folks, I've officially joined the ranks of amateur bakers with too much time on their hands and have started making my own sourdough. After scoring some sourdough starter off a friend - which I have now named Clint Yeastwood - I had a crack at making some bread.... I used a 75/25 ratio of plain and rye flour for this one. It's a somewhat fiddly and very lengthy process (about 10 hours from start to finish), but hey, that's what social distancing is for, right? Given that it was my first attempt, I'm pretty happy with how it turned out: a nice crust, an open crumb (without big holes) and a good flavour that wasn't too sour. I enjoyed my first taste with some good butter, scrambled eggs and some @mariesharps hot sauce. Delish! Stay tuned for more sourdough shenanigans!

16.01.2022 More cooking adventures from the socially distant chef: beef, broccoli and black bean noodle stir fry. Quick, simple and satisfying, this @donna.hay recipe is a real winner for an easy meal that packs a lot of flavour. Beef wise I went for sliced rump steak as it has a great mix of flavour and texture when cooked quickly.... The black beans also add a great salty kick to the dish. I added in some thick bamboo kneaded egg noodles from @dbigmama - which are my favourite and hands down some of the best noodles I've ever had.

15.01.2022 More cooking adventures from the socially distant chef: bad-ass breakfast burritos. To celebrate it being Tuesday, I made some epic south-of-the-border treats to kick-start our day. Besides, time has no meaning in these corona days, so who says you have to wait for the weekend to have a decadent breakfast? "What's in them?", I hear you cry. Well, I'm glad you asked.... Inside a wholegrain flour tortilla (because it's important to be healthy), I stuffed: Mexican-style tomato & chilli rice, grilled streaky bacon, avocado, scrambled eggs, potato gems, grated cheddar and Cholula Hot Sauce. The extra potato gems on the side were the ones that wouldn't fit inside. Wrap it all up in some foil and consume in bed (with a side serving of zero fucks given). What's your favourite decadent breakfast dish?

14.01.2022 We headed to @propeller_northfreo for brunch on Sunday to celebrate a family birthday. It’s been a while since I was there (it’s been one of our faves for a while now), and I’m happy to report that they’ve lost none of their touch during this whole coronageddon debacle. Their middle-eastern influenced menu was on point - we shared the tomato flatbread with a side of black pudding and the mushrooms & halloumi on charred sourdough with a side of bacon - and the coffee was smoot...h and full-bodied. The birthday boy (aka Dad) and I also indulged in a little pre-midday drinking in the form of a dangerously delicious Bloody Mary each. Fab work, Propeller, you were every bit as amazing as I was hoping you’d be! @ Propeller

13.01.2022 A real brunch with real coffee from real cups and real food from real chefs eaten while sitting on real chairs and being served by really lovely people at Duck Duck Bruce. On the weekend my fabulous wife took me out for a mystery brunch date. I was more than happy to learn that we were booked in for bunch at Duck Duck Bruce, as they do some of the best breakfast food in all of Freo (if not the whole city).... We shared the Tower of Power (a fried chicken breaky burger) and the Were Going To Need A Bigger Boat (essentially a full English fry up). Both were delightful, as was being able to enjoy a nice meal in a cafe once again.
11.01.2022 There was a family birthday celebration today, so the Food Loose husband & wife cooking team sprang into action to whip up some tasty treats for lunch. I knocked up an olive, rosemary & sundried tomato focaccia (using an Adam Liaw recipe for the dough) to accompany the antipasti platter. My amazing wife did a Jamie Oliver Comfort Food Hummingbird Cake (which we had for dessert with with a cuppa).... Great day & a great lunch with great people. Happy birthday @linda_fari !
11.01.2022 Sometimes you just get lucky when youre travelling. Wed seen Bistro Paul Bert on a travel food show, so when we arrived in Paris we headed there for dinner on our first night in town. Specialising in the kind of gut-busting traditional French fare that youd expect of a bustling Paris bistro, their signature dish is Steak Frites - slabs of perfectly-cooked cow alongside, you guessed it, Pommes Frites (a.k.a French fried potatoes) and some kind of deliciously rich sauce (gen...erally hollandaise or bearnaise). Initially intending to get the fillet, we quickly changed plans when we spied a giant Côte de Boeuf for two on the menu. It was everything wed hoped for in a French steak experience and more. The beef was tender and loaded with great, beefy flavour (a benefit of getting a rib cut instead of a fillet), the frites were crunchy and delightful, and the creamy, decadent bearnaise sauce tied everything together perfectly. We also had some red wine and surprise complimentary saucisson to start and a cognac & cannelle to finish. Bliss! As it happens, France was playing Croatia in the semi-final of the world cup while we were eating dinner. La Cave Paul Bert (the restaurants wine bar sister venue) a couple of doors down were playing it on TV, and there was a crowd of French football fans spilling out on the street and watching the match. France won, and Paris does not fuck about when it comes to celebrating a major football victory. The walk/metro ride home was rowdy and raucous, and there were cars driving around and beeping their horns constantly until the wee hours of the morning. I had a French friend in town the day they won the final, and apparently the celebrations for that involved setting cars on fire, getting tear-gassed and being chased by the riot police, so I think we were quite happy with just the semi-final experience. An amazing meal, a memorable night and just a great experience.

If youve been on our Hidden Chinatown tour you will know how important a great Hainanese sauce is- and this one is exceptional with meat, eggs- well anything really. It never lasts long in our house. You may just need some in your life too....
09.01.2022 A bit hit of comforting carbohydrates, fat and salt. A whack of MSG-fuelled umami with a dash of spice. A delicious meal whipped up in seconds - whats not to love about instant noodles? My favourite noodles are Nongshim Worldwide (from Korea) - specifically their Shin Ramyun and Chapagetti varieties. I tend to pimp them up by adding some frozen peas and some Lao Gan Ma (for the Chapagetti only - the Shin Ramyun are insanely spicy on their own), poaching an egg or two in the... soup and topping it with some fried shallots and garlic. Definitely not the healthiest meal, but when it comes to maximum satisfaction with minimal expense or effort, theyre pretty damn hard to beat! Do you have a favourite brand of instant noodles?

Wholesome, deeply satisfying, cheap, easy and nutritious - Japan's signature savoury pancake ticks all of the boxes for a great weeknight meal. "Okonomi" translates as "anything you like", so it's also a great meal for using up any spare veg or other ingredients you have lying around in the fridge.... We used cabbage, radish, silken tofu, mushrooms and onion this time. The trick is to use a mandolin to cut the hard veggies (like the cabbage, radish and onion) so that they cook through properly and create a nice soft texture. Dousing it in soy sauce, sriracha and Kewpie mayo is also a must as it adds a great finishing touch.

08.01.2022 More cooking adventures from the socially distant chef: deluxe fried rice and cheats frozen dumpling potstickers. Ive not had a wok in my kitchen for some time now, and seeing as that Im such a huge fan of Asian cuisines, this was a glaring oversight that was long overdue to be rectified. So I did a bit of online research about how to properly season a wok and then popped out to my local Asian grocery store to lay down a whole $17.99 for the newest addition to my cooking a...rsenal. The trick is to get a carbon steel wok and then season it by heating it up until its super hot and then rubbing it down with a fine layer of oil to form a protective coating that is non-stick and stops it from rusting (I used the Youtube video from Serious Eats as a guide). Dont go out and spend loads on a fancy, non-stick wok! Buy a cheapie, season it and look after it properly and youll have a trusted cooking implement that will last you for years. I christened mine by making some deluxe fried rice featuring bacon, veggies, an Asian-style omelette and some soy sauce, Maggie seasoning and lao gan ma (along with a little sprinkling of MSG for good measure). I also fried the rice in a mixture of garlic oil and bacon fat for added decadence. We rounded out the meal with some easy potstickers made with some frozen pork dumplings. Trust me, this wont be the last time youll see my new wok in action!
08.01.2022 Don't you just love discovering a new food that quickly becomes one of your favourites? This is a photo of the first ever Japanese cheese tart I ever had (from @uncletetsuaustralia in Sydney). We were in town on our honeymoon and wandering around downtown when we walked past a little store with loads of gorgeous-looking custard tarts in the window.... Being in the mood for a snack, we popped in and grabbed a couple. Cheese tarts sounded like an odd pastry, but what the hell, why not give em a go?! My mind was blown when I took my first bite. The pastry was flaky & crumbly and the creamy, cheesy, slightly tangy filling was still warm from the oven and oozed out. Needless to say I've been hooked ever since. While Uncle Tetsu might not have any branches in WA, @hokkaidowa in Vic Park does some really good ones. Whenever we go out for dinner there, a stop off for cheese tarts on the way home is an absolute must! Pro tip: buy two. One for when you get home with a cuppa, and one for morning tea the next day.

04.01.2022 Had some friends over last night for burgers. We hit up Melville Heights Meat Supply for the first time and we're really impressed with their burger packs. The @ilgraninobakeryperth potato buns and hi-melt cheese we're as good as other times we've had them, but what really impressed us was the burger mince. It had a great "beefy" flavour and went down a treat when cooked medium/medium rare. We cooked them on the grill and got some nice smokiness as well.... At $22 for 6 burgers, it's also great value. We had a couple of patties left over, so we made some bacon & egg cheeseburgers for breakfast (which is what's pictured), which was just the ticket seeing as we were all a bit dusty...

03.01.2022 Remember the good old days when you could gather in crowded places and share food? Located next to the Lau Pa Sat hawkers centre in downtown Singapore, Boon Tat St - also known as Satay St - was one of the highlights of our last trip to what has to be one of the most exciting food destinations in the world. Once youve selected one of the seven satay stalls to dine from, you sit down on these huge outdoor trestle tables, order your satay and wait for the magic to happen. Ther...e are all sorts of satay on offer, but we went for mutton, chicken and prawn. The atmosphere is bustling and lively, satay smoke fills the air and theyll even bring jugs of ice-cold Tiger beer to the table for you! (Pro tip: your clothes will definitely end up smelling of smoke, so choose your outfit accordingly.) If youve never had real, charcoal-grilled satay before, then this will definitely blow you away. The charred, gnarley, smokey marinated meat on skewers contrasts beautifully with the sweet peanut dipping sauce.
03.01.2022 More cooking adventures from the socially distant chef: slow cooked pork, cider & apple pies with homemade rough puff pastry. Our weekly family com-pie-tition has been heating up in recent times, so last week I thought I'd try and take home a win with this cracker of a @donna.hay recipe. Pork neck is cooked down in a blend of cider and stock, and granny Smith apples are added just before baking. ... It was also my first attempt making puff pastry from scratch, and I was really happy with how it turned out! Nice and crunchy and flaky. I thought it was a total winner, but alas the public didn't feel the same and I came in third. Tune in later this week to vote in this week's com-pie-tition. I've got something delish planned...

This @jamieoliver 5 ingredient tray bake is a great, easy, chuck-it-all-together-and-bung-it-in-the-oven style recipe that's perfect for a weeknight meal. I slightly fancied it up by making some cous cous tabouleh and a mint yoghurt sauce, but you could easily serve it with rice and some natural yoghurt dolloped on top if you wanted to keep it simple.

Carbonara fits the bill perfectly! Rich, decadent, comforting and super easy to slap together.... Throw in a sneaky glass of Pinot Grigio and enjoy on the couch for the perfect Friday night dinner at home!
02.01.2022 Hit up Fenway Subiaco for lunch with the work crew today and am happy to report that they're back with a vengeance! I had the "Hit & Run" (buttermilk fried chicken, cheese, hit & run hot sauce & blue cheese slaw). Great take on a buffalo wing-style burger. Was a bit messy to eat (lots of blue cheese sauce and hot sauce all over the joint), but was super tasty, held together well and the chicken had lots of great crunch. The onion rings also deserve a special mention too - the... whole table was of the opinion that they were some of the best that we'd had in a long time. The batter was light, very crispy and not oily at all. Their beer range lacked some of the cool craft options that they usually stock, but that's to be expected what with all of the covid craziness. I'm sure they'll get some craftier brews on tap as soon as they can, and anyway, a pint of Feral Brewing Company Hop Hog is always a sold go-to burger accompaniment. Well played Fenway, it's good to have you back in the game!
