22.01.2022 Late summertime always brings the best tomatoes. The plants have spent most of the season soaking up the sunshine and the fruits of their labour are usually bountiful, full of sweetness and perfectly ripe for eating. This Tomato & Caramelised Onion Galette is a great way to use up a heap of tomatoes from the garden, or one of the great buys you can get at the local markets at this time of year. It's great to take to picnics too, just keep the mozzarella on chilled until you're ready to serve. 16.01.2022 CHRISTMAS RECIPE! Prosciutto Wrapped Turkey with Cranberry & Pork Sausage Stuffing. This recipe can also be adapted to use a butterflied turkey breast too. The stuffing is everything SERVES 6-8 PREP 20 MIN... COOK 60 MIN 300g Italian pork sausages, casings removed 2 slices day-old sourdough, crusts removed & torn into small pieces 1 sprig fresh rosemary, leaves stripped & chopped, plus extra to serve 1 lemon, zested cup (40g) dried cranberries cup (40g) pistachios 14 thin slices of prosciutto 2kg skin-on boneless turkey thigh/breast cup cranberry sauce 2 tbs olive oil sea salt & black pepper roast potatoes, to serve Preheat oven to 200C Fan Place sausage meat, sourdough pieces, rosemary, lemon zest, cranberries and pistachios in a bowl and mix well to combine. Arrange the prosciutto slices, onto a large piece of baking paper, slightly overlapping, in 2 rows of 7 so you have a large rectangle of prosciutto. Place the 2 thigh fillets side by side over the prosciutto, cut-side-up. Season the meat with salt and pepper. Spread the cranberry sauce evenly over the turkey. Form a large sausage shape with the stuffing and place horizontally in the centre of the turkey thighs. Use the baking paper to help roll up the turkey around the stuffing. Tie with kitchen twine at 4cm intervals to secure together. Carefully place the roll, seam-side down in a large oven tray and rub with olive oil. Transfer to oven and roast for 1 hour, or until cooked through and the prosciutto is crisp. A digital thermometer should read 75C when cooked. Transfer turkey to a plate and cover loosely with foil to rest for 10 minutes before slicing. Serve with roast potatoes. . #christmasrecipes #turkeyrecipe #stuffingrecipe #christmaslunch #christmasdinner #turkey #recipes #foodstylistmelbourne #recipedeveloper #foodphotography #foodloveau

01.01.2022 NEW RECIPE: Pizza Fritta with Ricotta, Charred Broccolini & Chilli I love this recipe sooo much! It has so many of my favourite things and is packed full of flavour and texture. If you’ve never cooked your broccolini this way, it’s (hopefully) going to really impress you, and you will look at this deliciously versatile veg in a whole new way. The creamy ricotta base is the perfect bed to layer up all your toppings so feel free to use up whatever veg you have in the fridge, ...leftover roasted sweet potatoes are great on these too! I hope you guys love this recipe as much as I do. Recipe is on the website, link in my bio. Happy Monday, my friends.
