22.01.2022 RECIPE - Sweet potato & quinoa patties. These patties are super high in immune building nutrients for fighting off winter bugs. Protein & plant based carbs make them filling & great for anyone who may be wanting to lose weight. Perfect for creating a vegetarian burger, eating with a salad or just a simple snack on the run. ... INGREDIENTS (makes approx. 6, I ate one before I took the photo to taste them ) 1 cup cooked quinoa 2 small (or 1 large) sweet potato cooked and mashed 1 egg whisked 2 cloves garlic crushed small handful chopped coriander 1 tsp. grated fresh turmeric Himalayan salt & black pepper to season coconut oil for cooking Method combine all ingredients (except coconut oil) in a bowl, mixing until well combined heat oil in a fry pan over low/moderate heat shape mixture into patties and slowly cook through, flipping when the pattie is firm set aside to cool when the patty is cooked & golden brown on both sides NOTE- I find cooking these slowly over a low heat helps to keep the patties together. Also using a lid on the frying pan helps the patties to cook through again helping to keep them together.

Fad diets, magic pills and shakes, information constantly changing, low-fat vs high-fat, count calories, eat more, eat less, intermittent fasting, low carb, more protein......how confusing what works for one person may not work for another. I came across this article where I found myself agreeing with a lot of the statements such as the one about natural sugars - its still sugar refi...ned or not. Others statements I didnt agree with so much like the one about organics, I do think that organic food is a better option. Not saying I eat entirely organic but I do my best and buy spray free from my local farmers market. What do you think of some of these facts or factoids?

20.01.2022 Do you care if your banana is too bent, too straight, too long, too short, too fat or too thin? 40% of bananas grown in Australia are thrown away because they dont fit standards set by supermarkets! YES 40%....perfectly edible bananas that apparently arent aesthetically pleasing This is why I buy my bananas from local farmers at the markets because no one cares if the bananas are too bent or straight, skinny or fat, and trust me they taste so much better than the superm...arket ones! Support local farmers! Reduce wastage, dont stop at bananas.

17.01.2022 Well its been ages since I posted anything on here. I have become somewhat underwhelmed with Facebooks lack of engagement unless you choose to pay for advertising. Its disheartening having over 5500 people liking the page only to post something and receive 3 likes or people unlike the page & leave me thinking "why, what did I do wrong?" Marketing strategists say posting three times a day is the best way to engage your FB audience but I personally dont have anything to sh...are 3 times a day that I feel is relevant to this page & Im busy at my day job or having a real life. Im sure no one wants to read posts about me walking the dog after work or eating cheap tacos on Taco Tuesday with my daughter. Another strategy is to pre-schedule my posts. Spend Sunday night pre-planning and scheduling my posts for the week. Ummmmm I seriously dont know how I can do that when Im flat out working out what Im going to wear to work on Monday, folding washing, food prepping etc. and generally just taking some downtime before the working week. Ive been sitting on the fence for a while trying to decide if I should continue this page when theres so many healthy foodie pages and info out there! 16.01.2022 Ive had a couple of slack weeks posting on here. Sometimes life just gets busy & other things take priority. But still plenty of healthy cooking going on here. The season for coughs & colds is fast approaching. Its time for deliciously warming curries & soups. I came across this yummy curry recipe using so many of my favourite foods so I thought Id give it a go. "Sweet Potato & Cauliflower Turmeric Curry" ... I ended up adding more of the spices while it was cooking as I felt it needed more flavour, I gradually added more coconut milk while the quinoa was cooking as I found it was evaporating quicker than the quinoa was cooking. 13.01.2022 Recipe ~ Delicious "Zucchini, Haloumi and Coriander Fritters" perfect for breakfast, lunch or dinner topped with your favourite foods or just an easy snack on their own hot or cold. Check out how easy they are to make, this makes 8 thick fritters but you can make them thinner and get around 12. ... Ingredients 5 large eggs whisked 1/2 cup coconut flour 1 medium zucchini grated 1/4 cup grated haloumi (I love haloumi so I always add more) 1/4 cup loosely packed chopped coriander Sea salt and black pepper to taste Coconut oil for cooking Method 1. Combine all ingredients ensuring there are no lumps in the flour (I usually sift the flour) 2. Heat oil in a fry pan over medium heat 3. Spoon the ingredients into egg rings filling the ring to the edges and as thick as you like 4. Cook slowly with a lid on the fry pan helping to cook the fritters through 5. Flip when golden on one side and continue to cook until cooked through and golden on both sides 6. Remove from heat and eat immediately or allow to cool and refrigerate for later.

10.01.2022 It is still raining and quite miserable on the Gold Coast, making it another great afternoon for baking. Banana Oat Cookies These are so quick and easy to make with the simplest ingredients. Free of refined sugars and no nasty additives, vegan friendly also.... Ingredients makes 6 - 8 cookies 1 cup rolled oats 1 large over-ripe banana mashed cup shredded coconut 2 tbsp. coconut oil melted 1 tbsp. rice malt syrup/maple syrup/raw honey Method 1. Combine all ingredients in a bowl 2. Using your hands roll into golf size balls and place on a baking tray lined with baking paper 3. Flatten each ball with the palm of your hand into cookie shapes 4. Bake at 180C for approximately 15 minute or until golden 5. Remove from oven and allow to cool on a rack 6. Store in your fridge for up to 3 days (if they last that long) Share the recipe around, these are a guaranteed hit with the family. #cookies #homemade #vegan

07.01.2022 Spring has sprung on the Gold Coast which means smoothie season is back This smoothie is great for breakfast containing oats for fibre, avocado for healthy fats, spirulina for protein & many more nutritious whole foods. I only use half a banana & half a pear, its best to not overload your smoothies with too much fruit. So deliciously creamy & filling.

I used to be quite obsessed with only eating certain foods but as my journey has taken different & sometimes unexpected paths I've changed my lifestyle. 05.01.2022 Recipe ~ Salmon & Coriander Slice This could also be called a crustless quiche but it's much denser due to the coconut flour. You can use tuna instead of salmon if you prefer. ... Great as an on-the-go snack, top with avocado for breakfast, add a salad for lunch or a light dinner. Gluten & dairy free. Ingredients 6 eggs whisked 1/4 cup coconut flour 1 tsp. baking powder 200g pink or red salmon drained 1/2 red onion diced 6 - 9 slices tomato (depending on how big your slice is) Handful chopped coriander Method 1. Combine eggs, flour & baking powder mixing until there are no lumps (this is good to do in a blender) 2. Stir through onion, coriander & salmon 3. Pour mixture into a baking dish 4. Top with tomatoes 5. Bake at 180c for approx 25 mins or until cooked through 6. Slice & serve warm or store in a sealed container for up to 5 days. Enjoy

04.01.2022 Breakfast smoothie goodness Anti-inflammatory with protein, healthy fats & carbs to fill you up & not be left feeling hungry anytime soon. Ingredients ... frozen mango pieces (around 6 cubes) half a frozen banana 1/4 cup rolled oats 2 tbsp chia seeds a piece of fresh ginger (size according to your preferred taste) a piece of fresh turmeric 1 tsp. Maca (optional but great for energy) 150ml coconut milk (I use Coco Quench) Water Add all ingredients to your blender, soak for around 20 mins then blend on high speed for around 30 seconds - this will depend on the strength of your blender. Enjoy

04.01.2022 Gluten free homemade vegetarian pizza! Even for those who dont like cauliflower, this is a game changer! Cauliflower pizza base topped with a homemade coriander pesto, roast pumpkin, balsamic roasted red onion, goats cheese, toasted pine nuts & rocket. I hadnt made this recipe as a pizza base for a while & to be honest I do find making cauliflower patties/burger buns is easier than a pizza base because trying to flip this when cooking it is a real pain in the butt! 04.01.2022 One of my favourite recipes on the back of an Absolute Organic quinoa packet, Coconut Curry with Quinoa The flavours are delicious. I used roast pumpkin instead of carrots & I added coriander, cashew nuts & sesame seeds. I use more than 1/2 a tsp of each of the spices, generally around a tsp of each and I add lots of cracked black pepper too which helps in the absorption of the curcumin found in turmeric. The only thing that doesnt work for me in this recipe is 1/2 cup of quinoa to 1 & a half cups of vegetable stock, I find this to be too much liquid so I only use about 3/4 cup of stock when cooking the quinoa using the absorption method.

03.01.2022 Saturday afternoon & the rain has set in on the Gold Coast, making it a perfect day for baking - Blackberry Oat Crumb Bars. I came across this recipe from Baked Ambrosia and made a few minor changes to suit what ingredients I had at home. Instead of almond butter I used tahini, I used rice malt syrup instead of maple and I added shredded coconut on the top layer in the last 5 minutes of baking. I also added blueberries for extra texture and because I had some in the freezer.... You could use any berries, add apple or pear too. It says these bars are gluten free but technically oats arent gluten free. If you have a sweet tooth I would suggest adding more natural sweetener to the recipe, even mixing some through the actual berries. These bars are quite brittle and really could be served as a crumble for dessert. Theyre delicious, easy to make and healthy. 01.01.2022 Made some yummy caramelised red onion today after being inspired by eating the most delicious omelette at Home Plate Kitchen that had caramelised onion through it. I used a recipe from Teresa Cutter IG using red onions and coconut sugar. I didnt have aged balsamic vinegar so I just used regular balsamic. Very easy to make just requires a little patience.
