24.01.2022 Using the microwave is one of the 12 healthiest ways to cook. Yes I’ve heard all those rumours about microwaves destroying the goodness in food. But they’re just old myths that refuse to die.... Like radio waves, microwaves are a form of electromagnetic energy. Microwave cooking works by vibrating the water molecules within the food so they heat up. It is as safe as cooking on a conventional stove top. It is simply a way of heating. I like to microwave as it heats a meal up fast and needs little or no water (think no leaching of vitamins or minerals) and no salt. I find it's best to use containers that have been specially designed for microwave heating or else stick to the old-fashioned glass, ceramic or paper. Don't use plastic containers which are high in polyvinyl chloride (PVC) such as margarine containers or ice-cream containers. The molecules may pass into the food from their plastic. 11.01.2022 Great thought from Alla Wolf-Tasker, an Australian culinary legend and co-owner of the celebrated Lake House and Dairy Flat Farm at Daylesford in Victoria. I guess she means food ingredients such as meat or cheese where smaller portions of really good quality stuff are all the go at the moment. And are much more satisfying than lots without quality. Have to agree. Alla continues to extol the virtues of local, sustainable production that she first championed more than 40 year...s ago - when next to no-one was doing likewise. She has always maintained that producers are the unsung heroes of the food world. And she has been thrilled to see a return to so much home cooking during iso. I wish her well in her latest journey. I heard her speak at the Dietitian’s conference a few years ago - she was terrific!! @WolfInKitchen @LittleWolfProjects

08.01.2022 Trying a new snack before dinner Hmmm. I love mushrooms but these guys were not the same. They tasted crisp & crunchy and you got (some) of their flavour Even though they were 75% shiitake mushroom & cooked at low temperature, lightly-salted, no MSG, etc they didn’t hit the spot! A nice change but one I won’t be that keen to repeat Sorry. But it’s a No from me #YouGottaTryOnce

07.01.2022 Mussels for dinner tonight They take 2-3 minutes to cook and here they were being mixed in with the stock, onion, carrot and cream Delish. Serve with crusty bread for dunking and a green salad. Voila! #DinnerIsServed

07.01.2022 What ever happened to oven bags? I used to like them and put them to good use cooking things like a whole chicken or a roast or large chunks of vegetables. We used to prick them (to allow any steam to escape) and throw in a spoon of flour (to prevent the bag from exploding in your oven I never had one that did).... These bags were supposed to cook things faster, retain flavour and juices while helping to keep your oven clean. Things didn’t splatter onto the walls of your oven. Also you saved time as you had less cleaning up to do. Have these stalwarts of the kitchen been superseded by the slicker slow-cookers? Of which I have one and love it. It’s great to soups, curries and lamb shanks. I deliberately bought a 6 litre slow-cooker so I could fit in six Frenched (smaller, trimmed) lamb shanks. No point doing all that long cooking if you then can only feed four! I say let’s feed six! Used to buy the Glad Oven Bags which came in a pack of 5 bags. I now see I can still buy it and also Multix, Hercules as well as Amada. #OvenBag

Plus Don’t buy junk food if it’s not in the cupboard, you won’t be tempted. Nor will the kids.
