22.01.2022 Polyphenols play an important role in our immune system as they help to regulate inflammation. You can find these powerful antioxidants in fruits, vegetables, s...ome grains and legumes and Extra Virgin Olive Oil (EVOO) - all of these foods are found in the Mediterranean Diet. Research suggests that polyphenols may help to balance the gut microbiome by stimulating the growth of ‘good’ gut bacteria and reducing pathogenic ones, thus benefiting the health of the gut lining. 14.01.2022 There is a bit of a cooking oil myth going around that says that the smoke point of oil can help predict an oil’s ability to withstand heat and its suitability,... safety and healthfulness when heated for cooking purposes. This is just a myth! When cooking oil is exposed to heat, it will begin to break down. When this happens, there is a variety of degradation by-products produced, such as polar compounds. This is not a good thing as evidence suggests that polar compounds may be detrimental to health and have been linked to the development of neurodegenerative conditions such as Alzheimer’s and Parkinson’s Disease. This is why finding a stable oil to cook with, such as Extra Virgin Olive Oil (EVOO), is very important in helping to maintain health.

14.01.2022 Research has shown that when compared to 10 other main supermarket oils, Extra Virgin Olive Oil (EVOO) was the most stable oil to cook with and produced the lea...st amount of polar compounds when heated. This is most likely to due to its minimal refinement and processing, as well as its antioxidant profile. Comparatively, Virgin Olive Oil is less stable when heated due to its higher level of free fatty acids and has been shown to produce 1.26 times more polar compounds when heated compared to EVOO. Who knew the difference between different types of olive oil was so large? 03.01.2022 The phenolic profile of all oils changes over time, as it is exposed to heat, light and oxygen. An important compound found in cooking oils are biophenols. Biop...henols are compounds that act as potent natural antioxidants and are found naturally in certain oils, such as Extra Virgin Olive Oil (EVOO). Another important compound found in cooking oils is Vitamin E. This vitamin is a well-known antioxidant and it acts in a variety of ways to scavenge free radical species in the body. Often it will be added to oil after it has been refined to enhance its stability. See more
