Had creative freedom on this one save for a colour scheme and a request for some pretty piping, so picked this cascading buttercream style inspired heavily by @brittanymaycakes and had so much fun with it

22.01.2022 #tbt last year when we could still cross borders, and we flew to Perth and I made this GF almond & pistachio cookie-cake cake for my bro-in-law’s birthday. These are fun to make! The bottom layer is a soft sugar cookie and the top layer is a moist cake, because having it all cookie doesn’t feel cakey enough to me Filled with a whipped pistachio cream and topped with fresh berries, choc-drizzled cookies, and Lindt balls

The illustrations are based on the invitation, which was designed by Field & Fountain (on Etsy) and is so divine I almost fell over myself with excitement when I was asked to recreate it in cookie form then some cute embossed cookies to round out the set!

A 70th birthday set in the theme of the @redhatsociety, an international organisation dedicated to fun, friendship, freedom, fulfilment, and fitness for women in the later part of their lives, in recognition of the fact that many spend the first half of their adult lives caring for others with little time for themselves. These hand-painted gingerbread cookies went along on a camping trip for the birthday girl and some loved ones and I couldn’t love the concept more

Tiny 2020 cakes were fun but I looooooved putting this showstopper together** Inside was two tiers of wagon wheel (alternating layers of vanilla bean and dark chocolate cakes, filled with toasted marshmallow swiss meringue buttercream, homemade raspberry jam, and crushed milk chocolate-coated biscuits ), and two tiers of red velvet with cream cheese Swiss meringue buttercream. Finished in smooth buttercream with texturing, ...gold leaf, and blooms! Sticky date cake with salted caramel Swiss meringue buttercream and salted caramel sauce, with a seminaked finish, salted caramel drips, and some native foliage.

However it hit you, I hope you’re getting a chance during this final stretch to have some joy, peace, and downtime in (socially-distanced) proximity to your loved ones The only baking I did for today was two loaves of sourdough for a family brunch, so throwing it back to possibly my favourite Christmas cake ever from 2015, the year @fortytwocakes was launched! Hubby and I were alone in the USA so it’s a teeny tiny thing, wintery-themed and topped with an even tinier gingerbread house. Incidentally I think this was also the first incarnation of our now signature lamington cake!

01.01.2022 Happy Easter all I hope you all got to enjoy some time with loved ones and the glorious sunshine we had over this long weekend I made a policy of not accepting cake orders over the Easter weekend a few years ago to prioritise getting some time off with my family and give myself a chance to bake for us instead. Being in the wedding industry means a lot of missed family time as a lot of the work happens on weekends, so I highly recommend this strategy to anyone in the same... position for a bit of work life balance (doesn’t have to be Easter - but a four day weekend is a nice time to not be working!). This year’s hot cross buns were adapted (again) from a @cloudykitchen recipe because she knows what she’s doing Mine are earl grey-soaked apricot and dark chocolate, because when you make your own you can choose the fruit (apricots > raisins), and you can also have both fruit AND chocolate rather than the impossible choice most bakeries force you into. @cloudykitchen does hers with a wicked pastry cream cross, but I wasn’t in my own kitchen this year and decided I couldn’t be bothered these were excellent anyway.
