20.01.2022 Jackson’s is having a series of celebrations for his 18th and so a series of birthday cakes. This was his first one. Really happy with this delicious cake. It’s 2 Torta Caprese (Flourless Chocolate Cake). I used 20 cms cake tins to get the high. In between is stewed delicious plums using the technique from the Plum and Berry Chia Puddings on Cookidoo but increasing the volume of plums and adding no sweetening. And topped with just one volume of the ganache. It’s a delicious gluten free cake. 05.01.2022 Sometimes I stick to the exact instructions in a recipe. Sometimes I substitute some ingredients. Sometimes I use a recipe as a basic outline and change a lot of the ingredients. And sometimes I just make it up as I go along. It nearly always works.
