25.01.2022 Cooking tip I’ve posted this one before but wanted to share again as it’s so easy but such a big help. My kind of tip or hack...making a small change for a great result! Scrunch your baking paper before lining your tin. It will be so much easier to line the tin and have it stay in place while pouring in the contents. If you wish to, you can also wet it which helps the baking paper stick to the tin. 23.01.2022 Boosting nutrition Aside from the obvious fruit & veg here, there are 5 different fruit & veg in the piece of cake & 4 different veg in the scrolls which probably equates to half to one serve of their recommended daily intake. My kids are used to the extra nutrition in their food and it’s not a big deal but in the beginning I would generally make it and not tell them until they’d tasted it or they asked. During the holidays I feel like this happens at our place about 8 times a day and that’s just between breakfast and lunch! So I’ve washed and prepared some of our fruit and veggies we received in our weekly delivery from Delish Deliveries. So now I only have one container to wash up rather than one to mix the ingredients and then another for the marinating. 17.01.2022 My youngest turned 5 this week and we are fortunate to be living in NSW, which allows us to have a few people for a small celebration. I wanted to limit the food sharing so I did things a little differently this year. Almost all the food is additive and preservative free whilst I’d prefer a little less waste, the party gazing boxes were well received by all of the kids. 16.01.2022 Christmas Food Parties and celebrations can still be fun with real food. This is my homemade chocolate brownie topped with some real cream that I whipped. I added a teaspoon of vanilla extract and a strawberry on each one and the result is Santa Brownies The kids absolutely loved these and whilst not an everyday food, it was made with real ingredients and is still lots of fun!... 15.01.2022 Homemade 2 ingredient pizza This has become our thing on a Friday or Saturday night. It’s fast, when I make it. However I’m finding the kids ask to get involved in making dinner more & more often. And although it takes longer to prepare and there’s more mess to clean up, they are also starting to add more toppings to their pizzas the more they’re exposed to different foods. 13.01.2022 I had a small piece of pumpkin that needed using up. So pumpkin scones as a treat for afternoon tea it is. 11.01.2022 Using up fresh produce We’ve recently starting getting a weekly fruit and veg delivery and although we’ve used online grocery shopping for more than 5 years, having a set delivery day has made me more conscious of what we have to use prior to our next delivery. It’s made me more creative, plus it’s kinder to the bank account and our planet. As our delivery is on a Tuesday, I am now getting to Sunday and Monday and planning our meals more specifically to make the most o...f what we have. Fried rice easy and fast and today I made it with half a grated carrot, some grated zucchini, finely chopped spring onion, a mini capsicum, a few snow peas, a handful of baby’s spinach, corn kernels, some crushed garlic, some shredded chicken, a couple of scrambled eggs and a good glug of Tamari sauce. You can use whatever ingredients you like and it also means you know exactly what’s in it. I used leftover steamed rice (from the freezer) which I always make double of, for dishes like this. 10.01.2022 Letting go & empowering our children - two things I've been working on. Some of you know I’m a certified instructor with The Root Cause and I am trained through the Children's Health Program to empower children to eat less packets and more real fruits and vegetables. BUT I’m not immune to battling my own children and their eating habits and in particular, serving dinner and having them not eat it. 09.01.2022 Scrolls are a staple around here and are great to have in the freezer for those days you need them. I’ve tried a few ways of making them. However, for me this is the easiest way to cut and handle the dough. I use my pizza cutter to cut into individual strips and roll each one individually. And I try to pack as many vegetables in, be it visible or in the homemade treats that I send such as the choc zucchini muffins. The startling statics show that 94% of Australian children don’t eat the recommended fruits and vegetables. So spacing them out through the day means that we are not trying to pack all 5 serves at the end of the day when everyone is tired. ... 04.01.2022 Preserving fruit & vegetables is something that my grandmother taught me to do. And whilst I may have some modern appliances to help me with some of the processes, the principles remain the same; to use up & preserve what we have and make the most of our in season produce to avoid waste and keep the budget under control. Over the weekend I used some over ripe strawberries to make One Punnet Strawberry jam, chopped about half of our celery that we haven’t used yet and put into... the freezer which I will add to things like soup, slow cooker meals, fried rice or spaghetti sauce. But serving up dinner like this has become a lot more common at our place which is one of the things that had a huge impact on how our dinner times run. ... Plus on a Friday or a Saturday night (and sometimes a bit more often in the school holidays) we set it up as a picnic on the lounge room floor and watch a movie There’s a few guidelines that I’d recommend for you to have less stress & more fun at dinnertime Always make sure there are a few foods that each family member enjoys. That way no one will go hungry Don’t talk about food at the table, or wherever you’re eating. Have conversations but leave the topic of food for another time, away from dinner. Let everyone serve themselves. You might be surprised at what or how much they’ll eat. Make it fun If dinner times are a stressful time of day, break the routine and share a picnic, eat outside...wherever it is fun and works for your family.

04.01.2022 Food is an experience & new foods, like new experiences can be scary for children. Tonight was an experiment and a bit of gamble as to who would eat what. We’ve had all of these foods at one time or another but I’ve never served them up as this combination and we’ve only recently started having baked jacket potatoes. Although unfamiliar, I still wanted the kids to feel confident and comfortable in choosing what they’d like as well as how they’d like to construct it. So I wen...t in with low expectations and ended up pleasantly surprised. As you can see, there are quite different combos of flavours and construction styles. And I’m very pleased to report that my 9 year old ate two, my 6 year old (who doesn’t love potatoes) ate about 2/3 of hers and my 5 year old at about 2/3 of hers also. We are fortunate not to have allergies, intolerances or other challenges around food at our place but we’ve certainly had food refusals for looooooong periods of time and stages where one ate almost all white food for a couple of years But if it’s my job to prepare dinner, it’s everyone else’s job to decide if they’ll eat it and how much. Please don’t think that this has happened in an instant for us. It’s taken a lot of persistence, exposure, my letting go of expectations of how mealtime should go and MANY conversations around food have led us to this point. 03.01.2022 Any Thermomix owners out there! When you’re done making your stock paste, fill the bowl with about 500mL of water and crank it up to 9 or 10 for a few seconds and then the same in reverse. Pour into a jar and you have ready-made stock to use in a soup, stew, casserole, risotto etc. ... And afterwards you barely need to clean the bowl. Win win
