25.01.2022 Homemade mixed fruit loaf. What could be better than a thick slice of delicious mixed-fruit loaf, I love it toasted and topped with my homemade marmalade. For this mixed fruit loaf I used my (original bread recipe) and I added dried mixed fruit, a little sugar and cinnamon. Make it whichever way you like it. :)



23.01.2022 Fred Vella's Recipe. Pan fried Carp with delicious chunky salsa. Carp is one of the most delicious and common fish consumed in many parts of the world, and it has a number of great health benefits, including its ability to improve heart health, lower inflammation, protect respiratory health, optimize digestive function, slow the aging process and fend off chronic disease.... My Recipe. Ingredients: 2 Carp fillets 3 tablespoons white flour 3 table spoons oil 1 onion, thinly sliced 2 garlic cloves, crushed 1 Scallion, chopped 1 medium sized zucchini (Courgette) sliced 1 x 400g tin chopped tomatoes, or fresh tomatoes, peeled and chopped 1 level tablespoon tomato paste 1 level teaspoon sugar, 1 tablespoon chopped parsley 8 green olives 1 level tablespoon capers 1/2 tsp basil 1/2 tsp rosemary 2 bay leaves 1 tablespoon white wine fish stock salt and freshly ground black pepper Method: After you finish descaling and cleaning the fish, remove the dark blood line along the fish's backbone. You can use the knife to cut the line along or just use a spoon to scrape the line out. Remove the bones and cut the fish into steaks or fillets. Coat the fish fillet with a thin layer of flour. Shake off any excess flour. Heat a large heavy pan over high heat. Once the pan is hot, reduce the heat to a medium hot temperature and add enough olive oil to coat the bottom of the pan thoroughly. Add the carp fillets to the pan, Cook the fillets until golden browned, about 2 minutes on each side. (cook longer if you have thicker fillets). Set aside. In a medium pan, heat oil, add onion and the zucchini, scallion and let cook for 2 minutes, or until softened, stirring occasionally to avoid burning. Add the garlic (Do not let the garlic burn). Stir in the tomatoes, tomato paste, sugar, bay leaves, capers, parsley, olives, basil, rosemary, fish stock, white wine, and season with salt and freshly ground pepper, then turn down the heat to low. Add the fish to the pan and gently turn it over so it is covered in the sauce. Cover and simmer for 25-30 minutes. Sprinkle with fresh parsley or spring Onions and serve warm or cold.

19.01.2022 Fred Vella's Bread Pudding. https://www.facebook.com/fredmaltese1/ Ingredients: 1 large stale bread loaf... 2 cups mixed dry fruit 3 cups of milk 3 tbsp cocoa powder 4 tbsp of brown sugar 1 tsp ground cinnamon 100 g dark chocolate chopped 2 eggs Grated rind of an orange Method: 1. Preheat the oven at a temperature of 220C/428F/Gas 7. 2. Grease a 20cm x 20cm square tin and set aside. 3. Tear up the bread loaf into small chunks and place in a bowl. Add the milk and allow the bread to soak for 20 minutes. 4. Add the mixed dry fruit, cocoa, sugar, cinnamon, eggs, and orange zest and mix until well combined. Add the chopped chocolate and stir through. 5. Place the bread mixture in the tin and sprinkle some sugar on top and bake in the oven for 35-45 minutes until the top of the pudding is golden

11.01.2022 I built my wood-fired oven/smoker with no proper tools, no metal working experience, but lots of cooking passion, (using only recycled scrap). I used an oil drum and a toaster oven door and clay inside the oven floor with a fire pit on the right hand side for (naked flame) also connected an old toaster oven for the smokebox outside the oven. It's not the looks of the oven but knowing how to cook and how to control the temperature using wood fire. The incredible flavour and aroma that only charred cooking can bring. This allows to add tastes that you can’t achieve with spices and sauces, and it brings an earthy element to your cooking. Ingredients:... 1 1/2 cup plain flour 1 cup of sugar 4 tablespoons cocoa powder 1 teaspoon coffee powder 1 teaspoon baking soda 1/2 teaspoon mixed spice 1/2 teaspoon salt 1 cup of warm water 1 teaspoon vanilla extract 1/3 cup vegetable oil 2 teaspoon white vinegar Method Heat oven to (175C). coat a cake pan with butter and dust with all-purpose flour. In a large mixing bowl., sift the flour, sugar, cocoa powder, coffee powder, mixed spice, baking soda, and salt. Add the warm water, vanilla extract, vegetable oil, and the vinegar. Mix the ingredients together. Pour into the prepared pan and bake for 30 to 35 minutes. until a wooden skewer inserted in the center comes out clean. 10.01.2022 Fred Vella's Ham, Ricotta, silverbeet and Zucchini Tart. Made with breadcrumbs-crust filled with layers of homemade ricotta, silverbeet, smoked ham, zucchini, eggs, and fresh herbs and spices and topped with grated parmesan cheese. It can be served hot or cold.

I enjoy creating my own culinary masterpiece. Each day I cook something different, I'm not tied to a recipe and never cook the same dish twice. 05.01.2022 Flame-grilled T-Bone Steak with Mushroom Sauce. Mushroom sauce recipe for two. Ingredients 1 tablespoon sunflower oil... 2 tablespoons butter 200g white mushrooms (cleaned and halved) 1 large shallot (peeled and chopped) 3 garlic cloves (peeled and chopped) 1 small leek (trimmed, cleaned and sliced lengthwise and then chopped into 1-inch segments) 2 teaspoons oyster sauce 1 pinch ground black pepper. Method Heat the butter and oil in a frypan over medium heat then add the mushrooms. Cook and stir until the mushrooms have softened about 5 minutes. Stir in the shallots, garlic, leek, and the pepper then continue to cook and stir for 1 minute. Pour in the oyster sauce and cook with the mushrooms for 30 seconds and serve hot with the steak. Beef fillet stuffed with prawns, squid, mussels, oysters, pipis, olives, thyme, coriander, rosemary, pepper, salt, and butter, then rubbed the top of the fillet with mustard seeds and pan-fried.... Stuffed baked potatoes. Hallowed out potatoes with par-boiled onion placed in the center and stuffed with olives, garlic, diced smoked ham and halve a small tomato on top, sprinkled with paprika. Healthy Vegetable Parcels. Garden fresh kale mixed with finely diced tomatoes, leek, olives, capers, salt, crushed red pepper, panko bread, olive oil, lemon, and rolled into a parcel. Carrots Roasted carrots with honey and garlic. Pumpkin Spicy roast butternut pumpkin cubes sprinkled with cinnamon, salt, and pepper. My favorite delicious moist mini chocolate on chocolate cake. Decorative Easter braided fruit bread rings topped with colored eggs and sprinkles.

Suddenly you realize that power, beauty & money are worthless, and can't get you the oxygen you're fighting for. The world continues its life and it is beautiful. It only puts humans in cages.
