25.01.2022 Life is slowly getting back to new normal Our fourth week back at the Farmers market it’s not much fun getting up at 3am on a winters morning to go to work but it definitely put a shine on my day when the next stall neighbours on the way out said would you like a muddie. 24.01.2022 A hearty winter meal. Amber from BOS rural at Kandanga asked me if I would like an ox heart and if so how would I cook it. Ingredients 1kg ox heart 1kg tomato’s ... 4 sticks of lemongrass* 50 g garlic* 40 g ginger* 40 g turmeric * 40 g galangal* a handful of kaffir lime and curry leaves* One large onion* 2 mild chillies * 2 hot chillies* Black peppercorns A splash of fish sauce. A splash of oil Dice the heart Dice the tomato Make a paste using a food processor or mortar and pestle* Heat the oil until smoking then add the heart and fry until coloured Add the ground black pepper cook until aromatic Add spice paste stir while cooking for five minutes Add tomato and cook at high heat for five minutes then turn down to the lowest heat place a lid on your pot and allow to simmer for two or three hours. You should not have to add any water or stock. When the heart is tender season with fish sauce or salt and if needed increase heat to reduce sauce and thicken it. Serve with rice and if you are like me chopped chilli Cooking is about using what you have I didn’t buy any special ingredients Everything used was in my pantry or garden.

24.01.2022 I seem to have caught up with my work for others Now it is time to make bone broth 50kg of grass fed beef bones. Squirrel away the last of this years Bunya nuts and have a go at the fruit of the cissus Antarctica ( kangaroo vine) that a knowledgeable neighbour showed me last week.

23.01.2022 Seven days at home so far.I’ve pretty much stopped cooking but the bamboo hasn’t stopped growing so some more home grown treats to eat. It’s not too tough being in lockdown if your home has a fifty acre backyard and you have a food business with lots of stock. Stay safe everyone.

22.01.2022 Coming up to three weeks at home now and I’m eating more and more foraged food not from necessity but interest. Breakfast this morning eggs from the chooks , dandelion flowers from the front paddock some flour, seasoning and a splash of milk in the batter. Crunchy fritters eaten with the bitter leaves and of course my chilli sauce. Bloody beautiful.

18.01.2022 South East Queensland robotics first announced; Eden Private Hospital marks 110 years; unveils expanded, integrated healthcare service for the Sunshine Coast T...he Sunshine Coast’s longest-operating hospital today revealed plans for an exciting new integrated private health service including ‘robotics for rehab’ and a dedicated mental health service to meet the changing needs of the community, into the future. The plans were announced alongside Tony Wellington Noosa Mayor unveiling of Eden Private Hospital’s newly installed ‘history wall’, highlighting key milestones and achievements across the hospital’s 110 year history; paving the way for a proposed, $14m hospital redevelopment including a purpose-built mental health unit. Today’s event with hospital management, staff, doctors and community coincided with the launch of a South East Queensland first in robotic rehabilitation, targeting stroke and neurological patients and proven successful with spinal cord injury, traumatic brain injury, cerebral palsy, multiple sclerosis and musculoskeletal rehab. The fish in the photo is my first and the artsy black and white shots of the Dolphins playing near the boat and the Shark that was released were taken by my smart arse phone. 04.01.2022 First bit of work for a while 91.5 litres of bone broth You can see after 40 hours of simmering the bones start to break down releasing the maximum amount of minerals. To achieve this much broth I started out with five 50 litre pots filled to the top with bones .

A piece of each of the cows three stomachs stomachs Scrubbed ,soaked and boiled twice Then simmered for two hours in a super reduced 40 hour bone broth Add chilli ,coriander and homemade curry paste ... This may not be for everyone but I loved the taste ,texture and the fact some of the less used and most nutritious pieces of a cow can be great. See more
