25.01.2022 After a one-pan dessert? This one's for you! This raspberry and apple tarte tatin is @rainbownourishments take on the French upside-down apple tart . It's easier to make than you think! Here’s the recipe: Raspberry and Apple Tarte Tatin: - 1 cup raspberries - 2 apples, peeled and cored... - cup coconut sugar - lemon zest and juice (optional) - 2 tbsp coconut oil or vegan butter - Dash of vanilla extract - 1 sheet of store-bought puff pastry, thawed Method: 1. Preheat the oven to 180C. 2. Chop your apples into eighths. 3. Add all ingredients except the raspberries and pastry to a 15-20cm ovenproof saucepan over medium heat. Stir until the sugar dissolves and the sauce has thickened to a caramel consistency. 4. Add half the raspberries to the saucepan. Arrange your apples in the saucepan as flat as possible. 5. Cut the puff pastry into a circle 2cm larger than your saucepan. Place the circle of pastry on top of the apples. 6. Bake in the oven for 20 minutes or until the pastry is golden and puffy. 7. Put a plate on top of the pastry and carefully invert the tatin onto the plate. Top with the extra raspberries and enjoy! #freshaussieberries #addsomeoomph

01.01.2022 Have you ever tried baked french toast? spicyicecream has created delicious raspberry and ricotta baked french toast. The flavours are divine and you can even assemble it all the night before. Full recipe below Prep Time 20 minutes... Cook Time 40 minutes Total Time 1 hour Servings 4 Ingredients 250g raspberries 20g butter, melted 1 loaf challah or brioche, cut into 2cm slices 1 jar raspberry or strawberry jam 3 eggs 1/2 cup milk 1/4 cup ricotta cheese 1 tablespoon honey or maple syrup 1/2 teaspoon vanilla bean paste, or 1 teaspoon vanilla extract 1/2 teaspoon ground cinnamon Icing sugar, to serve Extra honey or maple syrup, to serve Pouring cream, to serve Instructions 1. Grease a ceramic baking dish with butter. 2. Halve each slice of bread, spread with raspberry jam and sandwich the halves back together. Arrange the bread in the prepared baking dish, overlapping slightly. 3. In a bowl or jug, whisk together the eggs, milk, ricotta, honey, vanilla, cinnamon and melted butter. Pour over the top of the bread, making sure to cover every piece. Allow to sit in the fridge for at least 30 minutes, or overnight. 4. Preheat your oven to 180C (375F) and sprinkle half of the raspberries over the bread. Bake for 40 minutes, checking on it at the halfway point. If the top is browning too quickly, cover loosely with foil. 5.
