06.01.2022 Celebrate the new Spring with FRESHCORP and this delicious Golden #ZucchiniFlower #Saffron #Risotto With cool breezes and sunny days its time to enjoy those fresh Spring favourites again. A RISOTTO has the comforting warmth for cool nights with the seasonal freshness of green veges! Take some time for yourself in the kitchen or share the fun with others! ... Either way, Enjoy! Recipe here Ingredients * 1 litre vegetable or chicken stock * Large pinch of saffron * Extra virgin olive oil * 1/2 large onion , peeled and finely chopped * 300g risotto rice (Arborio) * 250 ml vermouth, white wine or Ros * 2 cloves garlic , peeled and chopped * 1 pack of zucchini flowers washed Stems trimmed and sliced thinly Flowers cleaned and sliced into long strips * salt * freshly ground black pepper * 1-2 handfuls Parmesan cheese Method 1 Bring stock and saffron to a simmer in a saucepan and keep warm. 2 In a separate large pan, add a splash of olive oil, the onion and garlic cook gently for about 10 mins until soft. Add rice and turn up the heat a bit. Keep stirring to stop it catching and coat the onion in oil. 3 After a minute or so, pour in the vermouth or wine and stir constantly until the alcohol has evaporated. Add the sliced zucchini flower stems. 4 Turn down the heat and add a ladleful of warm stock. Keep stirring until the rice has fully absorbed the stock, then add another ladleful. Continue to add stock, one ladleful at a time, until its all absorbed. This should take about 20-25 minutes. The rice should soften but still be al dente and the zucchini stems softened. 5 When all your stack is absorbed and the rice cocked, season to taste, then stir through most of the zucchini flower petals, take off the heat. Stir through a handful of the Parmesan. 6 Spoon risotto into your serving bowls, top with remaining Parmesan, freshly ground pepper, and leftover flower petals. .
