24.01.2022 Cabbage, Bacon and Potato Soup Ingredients 1 tablespoon olive oil 1 large brown onion, finely chopped... 250g shortcut bacon, chopped 1/2 (500g) cabbage, shredded 2 desiree potatoes, peeled, cut into 1cm cubes 6 cups Campbell's Real Stock Chicken 2 tablespoons flat-leaf parsley leaves, chopped crusty bread, to serve Method Step 1 - Heat oil in a large saucepan over medium-high heat. Add onion and bacon. Cook, stirring, for 3 minutes or until onion is soft. Step 2 - Add cabbage and potatoes. Cook, stirring,for 2 minutes. Add stock and bring to the boil. Reduce heat to medium-low. Simmer, uncovered, for 15 minutes or until potato is tender. Season with salt and pepper. Ladle soup into warmed bowls. Sprinkle with parsley. Serve with crusty bread.

22.01.2022 Carrot Cake Ingredients Olive oil, to grease 2 (about 300g) carrots... 1 cup (150g) self-raising flour 1/2 cup (75g) plain flour 1 teaspoon bicarbonate of soda 1/2 teaspoon ground cinnamon 1/2 cup (80g) brown sugar 3/4 cup (185ml) olive oil 1/2 cup (125ml) golden syrup 3 eggs 1 teaspoon vanilla essence Icing 250g spreadable cream cheese 1/2 cup (80g) icing sugar 1/2 teaspoon vanilla essence Method Step 1 - Preheat oven to 170C or 150C fan-force. Grease a 20cm (base) round cake pan lightly with oil, and line with non-stick baking paper. Peel and grate the carrots, and set aside. Sift the flours, bicarbonate of soda and cinnamon into a large bowl. Step 2 - Put the brown sugar, oil, golden syrup, eggs and vanilla in a separate bowl. Use a balloon whisk to mix until combined. Step 3 - Pour the oil mixture into the dry ingredients. Use a wooden spoon to stir gently until just combined. Stir in the grated carrot. Step 4 - Pour the mixture into the pan and bake for 1 hour. Set aside for 5 minutes, before turning out onto a wire rack to cool completely. Step 5 - To make the icing, place the cream cheese, icing sugar and vanilla in a bowl. Use a wooden spoon to mix until well combined. Step 6 - Spread the icing over the cake.

17.01.2022 Pumpkin Loaf Ingredients 650g butternut pumpkin, peeled, deseeded... 100g butter, softened 1 1/2 cups brown sugar 2 eggs 2 cups self-raising flour 1/2 teaspoon bicarbonate of soda 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon ground ginger 1/4 teaspoon ground cloves Method Step 1 - Preheat oven to 180C. Grease base and sides of a 6cm deep, 10.5cm x 20.5cm (base) loaf pan. Line with baking paper, allowing a 2cm overhang at both long ends. Step 2 - Wash and cut pumpkin into 4cm pieces. With water clinging, place pumpkin in a single layer on a microwave-safe plate. Cover with plastic wrap. Microwave on HIGH (100%) for 3 to 4 minutes or until pumpkin is tender. Set aside to cool. Drain and place cooled pumpkin in a food processor. Process until smooth (you should have 1 cup). Step 3 - Using an electric mixer, cream butter and sugar until pale and fluffy. Add eggs and beat until well combined. Stir in pumpkin. Step 4 - Sift flour, bicarbonate of soda, cinnamon, nutmeg, ginger and cloves over pumpkin mixture. Stir gently to combine. Spoon into prepared pan. Smooth surface. Bake for 50 to 55 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 10 minutes. Lift onto a wire rack. Serve warm or cold.

Chicken and Celery Casserole Ingredients 1/2 cup plain flour... 1kg chicken thigh fillets, chopped 60g butter, chopped 1 large brown onion, diced 4 rashers bacon, rind removed, diced 1 1/2 cups water 410g can cream of celery soup 2 carrots, peeled, diced 3 celery sticks, diced 1/2 cup grated cheese Method Step 1 - Preheat oven to 180C. Place flour, and salt and pepper into a plastic bag. Shake to combine. Add chicken to bag. Toss to coat. Place chicken into an 8-cup capacity ovenproof casserole dish in a single layer. Step 2 - Melt butter in a frying pan over medium-high heat. Cook onion and bacon, stirring, for 5 minutes or until soft. Add to chicken. Add remaining flour (from bag) to frying pan. Cook, stirring, for 1 minute. Step 3 - Combine water and soup. Pour into frying pan, stirring until mixture just comes to the boil. Pour over chicken. Add carrots and celery. Stir to combine. Cover. Bake for 1 hour or until chicken is cooked through. Step 4 - Remove lid. Sprinkle with cheese. Bake, uncovered, for a further 10 minutes or until cheese is melted. Serve.

Apple Pie Ingredients... 2 1/2 cups (375g) plain flour 1 teaspoon baking powder Pinch salt 2 tablespoons caster sugar 2/3 cup (160ml) olive oil 1 egg yolk 1 egg white, lightly whisked 1.25kg apples, peeled, thinly sliced 1 tablespoon fresh lemon juice 1/2 cup (115g) caster sugar 1 teaspoon ground cinnamon Method Step 1 - Combine the flour, baking powder, salt and sugar. Combine the oil, egg yolk and 1/2 cup (125ml) of iced water. Stir into dry ingredients until combined. Knead until smooth. Divide into two portions, cover and refrigerate for 30 minutes. Preheat oven to 180C. Step 2 - Roll out one portion of pastry to line a 25cm round pie dish. Brush with egg white. Toss the apples in lemon juice. Combine the sugar and cinnamon. Step 3 - Place half of the apples in the pastry case. Sprinkle over half of the cinnamon sugar. Repeat. Roll out remaining pastry. Place over the apples. Press the edges to seal. Trim. Make 2 slits on top and decorate with leftover pastry. Brush with egg white. Sprinkle with a little extra sugar. Step 4 - Bake for 40-45 minutes until golden. See more

03.01.2022 Sesame Beef Stir-fry Ingredients 1/3 cup soy sauce... 2 garlic cloves, crushed 3cm piece fresh ginger, peeled, finely grated 1 1/2 teaspoons brown sugar 1 1/2 tablespoons sesame oil 500g beef rump steak, thinly sliced 270g packet soba noodles 1 tablespoon sesame seeds 1 brown onion, cut into thin wedges 2 carrots, peeled, halved, thinly sliced diagonally 100g snow peas, trimmed, halved 1/2 x bunch English spinach, trimmed (or substitute for broccoli) Method Step 1 - Place soy sauce, garlic, ginger, sugar and 2 teaspoons sesame oil in a glass or ceramic dish. Add beef. Stir to coat. Cover. Refrigerate for 30 minutes, if time permits. Step 2 - Cook soba noodles following packet directions until tender. Drain. Step 3 - Meanwhile, heat a wok over medium-high heat until hot. Add sesame seeds. Cook, stirring, for 1 to 2 minutes or until toasted. Transfer to a bowl. Step 4 - Add 1 teaspoon remaining sesame oil. Swirl to coat. Add one-third of the beef mixture. Stir-fry for 1 minute or until browned. Transfer to a bowl. Cover to keep warm. Repeat in 2 batches with sesame oil and beef mixture. Step 5 - Add remaining sesame oil to wok. Swirl to coat. Add onion. Stir-fry for 2 minutes or until softened. Add carrot. Stir-fry for 2 to 3 minutes. Add snow peas. Stir-fry for 1 minute. Return beef mixture with spinach and noodles. Stir-fry for 30 seconds or until spinach has wilted. Sprinkle with sesame seeds. Serve.
