24.01.2022 It’s Garlic Planting Time! With this wonderful rain across Victoria, and moisture in the ground, we are preparing for planting between now and the end of May, depending on the cultivar you are planting. For our cultivar Italian Late, we usually plant in mid-May. Garlic needs full sun, so find a good open position to plant. Garlic loves the cold but they don’t like their roots sitting in water-so we use raised beds to ensure good drainage. ... Prepare the ground a neutral pH of well drained loose soil with good organic matter. We select good sized bulbs, breaking them open and choosing the fattest cloves that are in good condition and are free from mould or any damage. Plant each clove 15 cm apart, with the pointy end upwards, and about 2 cm below the surface. Mulch well and KEEP weed free. Garlic really don’t like overcrowding from any neighbours! Depending on your rainfall over winter and into spring, water as necessary. Garlic needs water, even though it doesn’t like its roots sitting in water so ensure the soil is moist but not wet. Fertilise 2 or 3 times early in the growing cycle between planting and August with an liquid fertiliser to develop a robust plant . The garlic will shoot in a couple of weeks and then develop the stem and leaves over a longer period of time. Quite often the plant doesn’t seem to thrive until spring, but that is part of their growing cycle. The bulb starts swelling underground much later in October and November. The formation and separation of cloves occurs in the late stages of growth, in November and December. Remember to keep your garlic weed free, and look forward to harvesting in December

So how do I use it? * Use fresh, Australian certified-organic garlic, or grow your own so it’s guaranteed to have been grown without chemicals. Choose garlic cloves that are firm and undamaged. (Avoid imported garlic as all fresh produce imported into Australia is fumigated with methyl bromide.) * To prepare, peel, and cut or crush your fresh garlic and let it sit for 10 minutes to allow the amino acid and enzyme to fully combine to make the allicin for both the full flavour and full medicinal benefits. * Use your fresh garlic straight away- allicin is a very unstable compound and starts degrading within a few hours. * Use the garlic raw and uncooked for full flavour and medicinal properties as any heat/cooking also breaks down the allicin * So for full garlic benefits and flavour, eat your crushed garlic raw in salad dressings, or on top of hot buttered toast, stirred into pasta with olive oil or soup or any dish at the last second before serving. * Of course, slow cooking to produce roast garlic, or that incredible flavour with roast lamb, is also delicious, just a more mellow, slightly sweet and nutty flavour, and with some of the benefits of any minerals/nutrients that aren’t broken down by heat or cooking. 20.01.2022 How do we preserve garlic from September through to the next harvest in December? We peel it and freeze it in a plastic bag. It lasts for 12 months, is very easy to use, and best of all, it retains its excellent flavour.
