Small team. Family business. Beautiful farm location just 10 minutes from Bangalow, 25 minutes from Byron Bay, 25 minutes from Lismore, 25 minutes from Ballina, 25 minutes from Mullumbimby. 04.01.2022 Our new May/June omnivores' main course is Woodfired Beef, Roast Cauliflower Puree & Seaweed Vinaigrette. Featuring two cuts of Clunes Butcher sourced beef from Casino - short rib and sirloin. The short rib is initially brined in salt, sugar, water and mustard seeds for 20 hours (this helps the beef retain moisture and proteins whilst cooking), the beef is then removed from brine and woodfired to impart a smokey flavour and then slowly cooked for 8-12 hours until very tende...r on the bone and then served off the bone. The sirloin is simply woodfired and served medium / medium rare. These two cuts are served together with cauliflower that is pan-roasted until heavily caramelized and then blended into a smooth puree and then topped with a seaweed vinaigrette of soy sauce, seaweed, bonito flake, sherry vinegar and extra virgin olive oil. This beef main is served with three sides - a fennel & cabbage slaw with orange vinaigrette; a salad of local beans, sherry dressing and parmesan; plus charred carrots, miso mustard and coriander seed.
