Max and Abilio are brother-in-laws and business partners here at Fruitezy. 35 years of early morning starts sourcing the best fruit and veggies from @sydneymarkets and now operating three award winning greengrocers, hasnt aged them a bit! But you can be the judge of that!! SWIPE LEFT to see how they looked in 2007. ... When you love what you do, and you have such fabulous customers, the smiles come EZY. The 1st photo was taken recently at our current location in Chatswood Chase. The second photo was taken in 2007 at first Fruitezy store in Chatswood Chase pre the renovations. So lets zhoosh it up, with these gorgeous Greek Style Stuffed Tomatoes, perfect to serve with any meats or seafood and a great excuse to turn the oven on and warm up. Preparation time is about 30 mins | Cooking time 1 hr and it makes 10 serves. RECIPE:... 10 medium vine-ripened tomatoes 1 tbs olive oil + olive oil spray 1 medium onion, finely chopped 2 garlic cloves, finely chopped 112 cups cooked long grain rice* 34 cup flat-leaf parsley, chopped 13 cup mint leaves, roughly chopped 75g feta cheese, crumbled Salt and ground black pepper Olive oil cooking spray * SHORT CUT: For ease, use a 450g packet of 2 12 minute rice, cooked following packet directions and cooled. STEP 1: Preheat oven to 180C/160C fan-forced. Slice 1cm from the stem end of each tomato and reserve tops. Using a teaspoon, scoop out pulp. Discard seeds and roughly chop pulp. Pat dry tomato cavities using paper towel. STEP 2: Heat 1 tbs oil in a medium frying pan over medium heat. Add onion and garlic and cook, stirring occasionally, for 3 minutes or until onion is tender. Add cooked rice, tomato pulp, parsley, mint and feta. Season with salt and pepper to taste. Stir to combine. Remove from heat. STEP 3: Evenly spoon rice mixture into tomatoes. Arrange tomatoes in a large baking pan lined with baking paper. Place reserved tops on tomatoes. PAK CHOY also known as Shanghai buk choy, Baby buk choy and bok choy Pak choy is really a green stemmed variety of buk choy (buk choy means white stem). However, it is quite different in texture and flavour; the stems are more flattened and less juicy than buk choy, the leaves are more tender and the whole vegetable has a milder flavour.... Fresh pak choy will store for up to a week in the fridge if it is kept in a plastic bag and the temperature is less than 5C. Cooking tip: Pak choy is one of the best vegetables to include in a stir-fry. Simply roughly chop the whole plant and add it to the dish near the end of cooking. INGREDIENTS ... 2 tbs peanut oil 2 garlic cloves, finely chopped 3 cm piece ginger, finely grated 1 Birds Eye red chilli, deseeded and chopped 1.3 kg Jap pumpkin, peeled, deseeded and diced 2 fresh kaffir lime leaves 4 cups chicken or vegetable stock 1/2 cup lite coconut milk + 2 Tbs for garnishing Optional: Coriander leaves, finely sliced red chilli and kaffir lime leaves, to serve RECIPE: 1. Heat oil in a large saucepan over medium heat. Add garlic, ginger and chilli and cook for 1 minute. Add pumpkin and cook, stirring often, for 5 minutes. Add kaffir lime leaves (if using) and stock. Bring to the boil. Reduce heat to medium-low and cook, stirring occasionally, for 2025 minutes until pumpkin is tender. Remove kaffir lime leaves. 2. Blend soup until smooth. Stir in coconut milk and season with salt and pepper to taste. Heat, stirring occasionally over low heat until hot. Ladle into serving bowls. Drizzle over the extra coconut milk to decorate.
