23.01.2022 It was a joy working with pastry chef Steph @itschefanie_ to refine our rolled puff pastry lid for the Pho Pie. Achieving the super red colour of the flag on the lid was a challenge but we did it! Our pie improvements could not have been achieved your help! Also thank you @konomi_9228 for lending a hand at short notice to smash out the pies! @duncanlu well done on adding a smokey flavour to the chuck steak and also gelatinising the filling with tendons! I’m really proud of not just the creation, but the continual improvement of this dish from @plateoforiginau. 23.01.2022 My cook on @simon.toohey new show @freshlypickedtv is on now (AEST 3:30pm in Australia on @channel10au I had such a great time cooking for Simon. This technique for rolling the pancake for the banh xeo really took some practice over the years. This technique is something I’m really proud of because my Dad taught me...it’s a fine balance between too much oil and not enough. ... The trick is to pour the oil into the pan and make the pan non stick and not oil thick. My Dad likely won’t ever tell me this technique was perfect...but I’m feeling pretty proud of it. 22.01.2022 Taking these Ph Pies up to the Judges, very nervous is an understatement. We pulled the pies out with 90 seconds to go, literally charred my fingers removing them from the moulds. @duncanlu instinctively refused to give up thickening the gravy and removed the tendon which was undercooked. Small clutch moments not recognised. Well done mate, the right calls in the heat of the moment. Jordon-esque in the kitchen that fateful morning. #escapedelimination #needabeer

17.01.2022 Canh ci ngt - Viet Sweet Mustard Green Soup ! The ‘complexicator’ Yes I just made a new word ! Mum always loves adding this green into soups. It’s a half assed stir fry veg but it’s a soups best friend! This veg is strong in chlorophyll and it kind of overtakes the chicken broth but I love how it’s mildly bitter aromatic flair elevates the soup to another level. I call this sweet mustard green the soup ‘complexicator’! This is really homely food to me, we usually eat th...is with rice, but I turned it into a noodle soup with vermicelli. Don’t get this leafy veg confused with the larger mustard green which you often find pickled sour style or in Sichuan oil. Let’s call this veg the Vietnamese Mustard green and the other one the Chinese Mustard Green. The reason it’s hard to differentiate is because I don’t think there is a proper English name for this leafy veg. I believe that we need to know about past to move forward in the future, and the same goes for food. If you love food, if you work in food and if you want to make an impact on the future of food... But the course is far more than food history, it covers many areas to give you a holistic understanding of two things: ...the food we eat today, and why it is ‘good’. 12.01.2022 Produce isn't just about seasonality, it's about 'the moment' and I couldn't go past these hydroponically grown cabbages! They're crunchy, dense and perfect for kimchi. Controversial but I dare say, they're better than napa cabbages for making kimchi! I used @redboatfishsauce. A correction, the sauce was not 'salty', but smooth and intense in its aroma. I took a swig straight outta the bottle and sometimes the heavy umami hurts my tongue but this fish sauce was smoooooth...h. Do you ever go shopping and find awesome produce and have the urge to buy it cause you know its phenomenal? Well thats what i'm talking about! !
