25.01.2022 Recipe- German Apple Cake By Fleur and Liv ... Ingredients: 3 peeled and sliced thin 125g melted butter 2 1 cup Caster sugar 1 cups of Sr flour 2 teaspoons of cinnamon Method: Peel and thinly sliced apples. Combine cooled melted butter and eggs in a bowl. Add sugar and mix with a wooden spoon. Combine flour and cinnamon and add to the mixture. Add apples and stir until just combined. Pour into tin and bake at 180 degrees for 40 mins. Thyme to eat.......Enjoy!

19.01.2022 By David and Lucy Nield Pumpkin loaf 1.5 cups mashed ... 1.5 cups almond meal 1 cup GF plain flour 2 tsp baking powder 4 1/4 cup olive oil Preheat oven to 160deg fan forced/180deg conventional oven Mix all ingredients together in a large bowl Line a loaf tin with baking paper Pour mixture into tin Bake 40-50min until skewer comes out clean Store in an airtight container or slice and freeze. Great for sweet (butter and honey) or savoury (avocado, tomatoes, eggs) meals Thyme to eat!........enjoy.

Ingredients 2 thick slices of sourdough - roughly diced into 2cm pieces 2 tbsp garlic oil 1 cup of mixed roughly chopped 1 handful chopped 1 handful chopped 2 tbsp red wine vinegar 4 tbsp olive oil 1/2 1cm dice Method Place sourdough on baking tray and drizzle with garlic oil. Bake at 200deg for 10-15min or until golden and crispy. Place remaining ingredients in a large bowl and mix thoroughly. Toss through the sourdough croutons and serve immediately. Thyme to eat........enjoy.

Serves 2 Ingredients 1 cup cooked and cooled rice - leftover from the night before is ideal 2 cups of finely diced vegetables of your choice - we used , , and - why not try , or throw in whatever you need to use up from the fridge crisper 2 tbsp oil 2 tbsp soy sauce 2 tbsp fish sauce 2 tbsp finely chopped 2 tbsp finely chopped 4 Method Whisk the eggs together in a bowl and season with salt and pepper In a wok heat the oil on a moderate heat. Pour in eggs and cook for 2-3min per side to create an omelette. Remove from pan and chop into 1cm pieces Return wok to heat and add veggies and rice for 5min. Add sauces and herbs and mix well. Cook for a further 5min. Serve immediately Thyme to eat......enjoy!

Serves 2 By David and Lucy Nield Ingredients 300g diced chicken breast 1/2 diced 1 diced 1/2 head diced 100g fresh diced 1/4 cup soy sauce or Tamari (GF) 2 tbsp 2 tbsp water Juice of half a 2 tbsp sesame seeds to serve Method Fry chicken in large frypan on medium heat until half cooked (3-5min). Add remaining ingredients and continue to cook for 5-10min until chicken is cooked through and vegetables are just tender. Serve with noodles or rice and sesame seeds on top. ........enjoy!

Ingredients 3 medium-large grated 500g Ham 1 cup yoghurt - use coconut yoghurt for dairy free 1/2 SR flour - can be GF if needed 5 Handful chopped Handful chopped Handful chopped Zest of 1 Salt and pepper Optional - 1/2 cup grated tasty cheese - leave out if dairy free. Also you can leave out the ham for a vegetarian option. Method Preheat oven to 180deg Line a slice tray with baking paper Mix all ingredients together in a large bowl. Pour into slice tray and spread evenly Bake 30-40min or until golden on top and just firm to touch. Serve with a beautiful spring salad. Thyme to eat .......enjoy!

New season asparagus and heirloom tomato tartlets... By David and Lucy Nield Recipe makes 12 2 sheets puff pastry cut into rounds 2 bunches 2 punnets 1 bag 12 150ml cream Seasoning Mix cream and eggs together and set aside Chop all ingredients, toss in a little seasoning of cracked pepper and sea salt flakes. Push the round puff pastry discs into your muffin tray or if you have a whole flan dish, leave the puff pastry sheets whole and mould into the flan fish trimming edges where applicable. Place all seasoned ingredients into your chosen tray, cover with your egg and cream mix, drizzle a little olive oil over the top and bake in a pre heated oven @180 for approx 12-14 minutes. Remove, rest to cool and pop out with a butter knife. Serve with dressed salad leaves and a nice pesto Thyme to eat ........enjoy

06.01.2022 Apple and Oat Muffins By David and Lucy Nield... 1 cup almond meal 1 cup SR Flour 1 cup oats 1/2 cup sugar 3 grated 2 tsp cinnamon 1/2 cup milk 1/4 cup oil 2 Method Mix dry ingredients together with grated apple in a large bowl. In a separate bowl whisk together wet ingredients. Gently stir wet ingredients into dry ingredients until just combined. Spoon into muffin tray. Bake 160deg fan forced oven for 20min. Great for school lunches. Can be made ahead of time and frozen. They are also Maisie approved Sent from my iPhone

Ingredients 2 cups SR flour - can be gluten free 1 cup almond meal 1 tsp cinnamon 1tsp ground ginger 1/2 tsp ground cloves 1/2 tsp bicarb soda 1/2 cup caster sugar 3 beaten 1/2 cup olive or coconut oil 1 grated 2 grated 2 mashed 1 x 400g crushed pineapple- juice drained off Method Preheat oven to 180deg Line a 20cm square cake tin with baking paper Mix dry ingredients together in a large bowl Add remaining ingredients and stir throughly Pour into prepared cake tin Bake for 1hr or until skewer comes out clean Can be kept in airtight container in fridge for 1 week or cut and frozen. Make yourself a cup of coffee and enjoy.

04.01.2022 Apple and Ginger Tart By David and Lucy Nield Ingredients... 2 Sheets, Shortcrust pastry 3 , cored and thinly sliced Juice of a (or ) 1 tablespoon grated , fresh 1 tablespoon raw sugar, plus extra to sprinkle 1 yolk with 1 tbs of water Method: Preheat your oven to 180C. Cut out four 14cm rounds and place on a paper-lined baking tray. Core apples, then cut into thin wedges. Place in a bowl with lemon/lime juice, ginger and toss until combined. Place apple filling in the centre of each pastry round, leaving about 3cm border. Fold over pastry edges to partially enclose the filling, pressing down lightly with your fingers to seal. Brush pastry edges with egg yolk and sprinkle with extra sugar. Bake for about 25 minutes or until golden and crisp. Serve with custard or icecream. Enjoy!

Quinoa and Asparagus Salad Ingredients 8 stems of - steamed or grilled til tender then chop into 2cm pieces 1/2 chopped into 1cm dice 1/2 chopped into 1cm dice 1 punnet of your choice 1/2 bunch finely chopped 1/2 bunch finely chopped 1/2 cup raw quinoa - cooked as per packet then cooled 2 tbsp olive oil 2 tbsp red wine vinegar Juice of 1 Salt and pepper Method Mix all ingredients together in a large bowl and stir through.
